I'll be making gammon, green been and split pea soup the day after New Year's Day in order to use up the leftover ham and veg that I'll cook.

I'll be making a last bits of gammon/pea soup too. Saved ham stock on purpose.

Usually my soups are whatever-I've-got, though - main meal jobs, with lots of veg chopped small - always onion and celery plus whatever - handful of red lentils/pearl barley/both, maybe some small pasta - the rice shape is good - served with grated cheese. Any green veg - cabbage/leeks/sprouts etc., sliced/shredded and added last few minutes. My dh would happily eat these every night.
Chicken stock cubes, I don't buy stock-pots, they seem so much more expensive and old frugality habits die hard.

Great thread. Think I will try making tomato, chorizo and lentil Grin. Soup is so underrated!

Yesterday I did butternut squash and sweet potato with cumin and chilli. Mostly based on assorted slightly wobbly veg - shallots, onion, garlic, a couple of carrots, a red chilli lurking in the fridge plus the feature veg. Lovely!
