My mum was always quite clear on the differences between crumpets and pikelets in 70s Bristol. But my family is weird; half from Shetland, half from the west country, so I'm never sure where things come from!

If you're trying it with wheat flour I'm pretty sure you'd need strong flour, but it might be worth getting a bag of spelt - the more delicate spelt gluten seemed happy with the very minimalist mixing.

I didn't even use a recipe - started with flour, added a bit of dried yeast and ditto baking powder, pinch of salt, enough water to make a stiffish batter and left it all to sit for 2 or 3 hours - then cooked spoonfuls on the pan.

Sorry to be vague, but it was that easy.

Thanks for this. I have passed it onto my cousin who has Coeliac disease and bemoans having to pay £lots for a small pack of crumpets from the supermarket.

Spelt flour gets used for everything except bread in this house. So far it's been great for short crust pastry, crumble,scones, both savoury and sweet, sponge cakes and buns and rich fruit cake. Wonderful stuff as sister can't eat wheat.
Oh and pancakes

I was wondering why the seagulls put on bowties in the evening. Mind, I'm not sure if they're actually on the door or just trying it on as an excuse to root through bags and inadequate pockets.

They do a good job of keeping the riff raff out though! Although I've learnt to put a packet of crisps in my bag each time I want to come in. It's just easier to pay them off!

Colin's a very good dog, understands every word you say though of course he can't speak on account of being a dog. I believe he's very partial to a sausage roll, both the edible type and the sort where he rolls and you stroke his tummy. So, now you've mentioned them you'd better deliver one or the other.

I can tell you where Steve and Kev are. They're flying over East Anglia with their bloody noisy mates, and now and then making those guk-guk-guk noises that mean they're considering shitting on you. From a great height.

DH has finally cleaned the seagull crap off the front door.

On another subject entirely, inspired by the denizens of this pub, I have bought some spelt flour. I may try scones tomorrow. I will report back.

It might not be safe for someone with Coeliac disease - I'm allergic to wheat but not Coeliac - spelt still has gluten, just a different, less problematic for some of us, form.
