Really need the accountability of posting somewhere. Finally found my determination!
Today is low key as not been shopping yet, so need to use full fat milk in my tea etc, but positive vibes.
B - scrambled eggs & mushrooms
L - tuna salad
D - paprika chicken & mozzarella bake

@Fraaahnces bubbles sounds a lovely treat!
We have had quite a miserable summer to be honest, cool/wet/windy (temp 13-17C!)…don’t think the children have had anything like enough vit D. Maybe next year.
Could you maybe hide celeriac in stews or chilli type dishes? I keep pumpkin in the freezer in the winter to add to casseroles, the children don’t even notice.

TBH, it’s pretty expensive here. I’ve never bothered. I do have to clean out the freezer this week so there would be room.

I tend to use mashed swede more.
Today has been hectic. Went fishing, caught loads of mackerel, spent the rest of the afternoon gutting/filleting for children’s dinner and freezer. So meals rushed and dinner missed. No bad thing really. I had scrambled eggs with cherry tomatoes and onion, then a ham & cheese salad.
Tomorrow B - stewed rhubarb and sweetened quark
L - ham & mushroom omelette & salad
D - shepherd’s pie, topped with swede, with wilted greens and broccoli.

I miss quark! You don’t really get it here. (Of course I wouldn’t eat it, but there was a delicious lemon curd one…. Mmmm. Dutch do dairy food & sugar so well!)
My chicken dish was a hit, and everyone had a fabulous school lunch. Was funny watching my DS (He and his twin sister 17 today) trying to pick out the tiny Chinese mushrooms. He gave up and then realised that he quite liked them. (Given the way he eats atm, I’d be surprised if he found anything he didn’t like. He’s like a golden retriever.)
Going out shortly to buy bday cake. (I like them too much to bake for them.) Will devise meal plan after. Having cup of tea now.
I know my day will involve some Caprese salad as I have some divine tomatoes and mozzarella Di buffola hiding from the kids. I’m going to make sure I hop into that before they get home.

Bad night’s sleep, tossed and turned constantly. Feel really heavy and lethargic inside now, and my joints are already burning so I can tell it’s going to be a damp/wet day. I’m not going to feel sorry for myself though, I’m going to get kids to school then take dog for a walk and pick blackberries, to keep in freezer to top my low carb porridge. Then go to work, and make sure I drink lots of water.

@Soundwasp I was talking to my friend who is a fellow Aussie that I met in the Netherlands. We were saying how much we miss picking blackberries. Absolutely delicious! They’re actually a noxious weed here in Australia (unless grown commercially). They seem to have eradicated and poisoned most of the old blackberry picking areas. These days you just wouldn’t risk it. They wouldn’t grow where I live anyway, because it’s too hot and humid.
You sound like you might have a wee bit of “keto flu”. It’s absolutely a thing. Make sure you have some extra salt or better still, a sugar free electrolyte replacement and you should feel a bit better.
As for my baking skills…. Notoriously bad. The stuff of legend. I blame having coeliac disease. I’ve never liked cakes or biscuits, etc, and never seen the point. My salads are the stuff of legend though.

@Fraaahnces I’ll think of everyone on your continent every time I eat a blackberry now! We have so many in the village, always makes me laugh when I see the cost of them in supermarkets.
Yes, I think it’s a bit of ketoflu tbh. I’ve added some salt to my water today but going to get some a/f electrolyte replacement online.
Having coeliac disease is definitely hard on baking!!! I’ve found the best things for my son are baking that is gluten free anyways by accident not design…coconut macaroons, almond cakes etc.

@Soundwasp I hadn’t even heard of coeliac disease until I was diagnosed at 28. I had grown up not liking bread, toast, sandwiches, cakes, biscuits, pasta, etc… made a lot of sense as they were trying to kill me. Gluten-free versions are bloody horrible most of the time.

Had very little to eat today, just not hungry. Breakfast of scrambled eggs and onion, lunch of a keto protein shake, fasting now for 21 hours till breakfast tomorrow. Have drunk plenty though.

There you go! Must be working if your appetite is going awol. I still haven’t had my Caprese Salad….
Today was exceptionally busy. Had to do what is normally a 1-1.5hr drive at short notice. It was 3hrs on the way there and 3.5 on the way back. I wasn’t prepared. I had a double cheeseburger with no bun & sugar free coke (If you tell my kids I will deny everything…) on the way there. Half a protein bar from the service station on the way home. Only half because it was disgusting. At home I peeled the meat from two drumsticks that had once belonged to anorexic chickens, hurled them into some wonton soup broth with some Chinese chili oil and some sesame oil. Was just what I needed!

@Fraaahnces that was a lot more driving than planned!! You did really well food wise with that, unplanned travel time isn’t easy is it.

Massive binge on chicken stir fry yesterday, yes it’s healthy food but overeating isn’t. However, TOTM here today (a week early), so that maybe explains it a little.
Today’s plan:
B - scrambled eggs, mushroom, onion & spinach
L - Feta & black olive salad with balsamic dressing (eating out, best thing on menu)
D - protein shake
I’ll have dinner early, around 3pm, so can do a 19 hour fast.

Today’s blunch was savoury Greek-inspired lamb mince and veggies. This was actually leftover from the dinners I have prepared for the next few days. Cabbage rolls (stuffed with the lamb) with tomato sauce. Soooo good!

Have done well today, considering. Been a tiring day but I’ve been sensible. I won’t actually get to eat tomorrow until around 3pm so will be a 24hr fast. Then, I plan to enjoy a nice bowl of shakshukah followed by stewed rhubarb and quark.

That sounds like my idea of heaven. I love all of the food you just mentioned. I know I would fall off my diet entirely if I had the rhubarb though. I’m sticking to <20g carbs per day until I lose the weight I need. Then I will reintroduce fruit. My high-value choice of fruit (because it gets so bloody hot here) is watermelon. I make salads with it and stuff myself. I’ve been thinking about it a lot lately, and making plans to change up my dressing.

Rhubarb is the only fruit I have apart from berries as it’s so low carb. I bet watermelon is refreshing when it’s very hot.

Today has been tiring with annoying housework, fighting with mattresses etc, I’m knackered and was in my pyjamas at 5pm!
B - protein shake
L - feta & olive salad
D - roasted celeriac with a paprika-laden seafood stew with tomatoes/courgettes/spinach/onion

Tomorrow’s plan:
B - scrambled eggs
L - turkey, Konjac noodle and kale soup
D - prawn salad

So far today I have had scrambled eggs with leftover Caprese salad. Had my BLUNCH early as working a matinee with two shows. Lots of little old ladies running each other over with their wheelie walkers. Will be running around like a crazy person.
Who knows what dinner will be? DT’s having their 17th bday party. House will be overrun with hormones and I will be manning the airfryer. (Will probs eat cheese)

Slept much more than normal which is good but now feel sluggish and headachy. I have lifelong eye problems that result in background headaches being common but from when I wake means it is going to be a long day. Dog walk on beach may help, then it’s a day of that fun, fun, fun that is housework.
Am contemplating weighing daily.

The party was last night. They were remarkably good considering there were five groups of kids from different places. The 17y/olds are twins, so decided to have the same party for once. They changed schools in January, and invited kids from old and new schools, plus the Mc Donald’s they both work at.

Have lost 11.8lbs in 30 days, pretty pleased with that.
Today - B - sprouted rye bread with smear of jam, cup of tea.
L - eggs/tomatoes/mushrooms
D - chicken breast and vegetables

That’s great! Well done! I haven’t weighed myself (still in the don’t want to know zone), but my work pants are decidedly loose. They had been straining at the seems and getting uncomfortable. That’s gratifying.
Tonight I made myself a frittata with goat’s cheese and mozzarella and some delicious tomato Passata I made a couple of weeks ago. I have a lunchbox that warms or cooks food with steam so put it on to warm up when I got to work. (It has a “stay warm” function, so perfectly safe.) I started work at 3pm and finished at 10, and hadn’t touched any of it. Way too busy!
I put it in the fridge at home, told DH he can have it for lunch tomorrow and I had some chicken.

Today I had half of last night’s frittata (a bit well-done, IMO), half a cup of coffee (Seem to have gone off coffee. Who even am I?) A cup of tea (still need the caffeine it seems) and for dinner leftover herbed chicken with lemon butter and green veggies.
I’m thinking that I probably should weigh myself. Going to find batteries for the scales. (And murder the dust bunnies. I had an ED in my “yoof” and don’t want to start anything.)

Down 6kg since I started. Was hoping it was more, but I guess now I’m in “the zone” it won’t take too much time to lose the rest. (5-10kgs)
