Low Carb alternatives to roast potatoes!!!

I just love stuffing and roasties with roast chicken. Stuffing Im making out of sausage meat and onions, herbs but I need something instead of roast pots or mashed pots! Any ideas???

I’d rather have the best roast potatoes and then cut back on food for the rest of the day. As long as you’re in a calorie deficit overall the occasional delicious roast potato will bring you more pleasure and be more satisfying than an ocean of rice cakes and cucumber.

Carrot and swede mashed together.

Parsnips, can be roasted (as can carrots) or mashed, I like them mashed with a garlic clove - I put the clove in while they are boiling.

Sweet potatoes, I find it easiest to microwave then cut in half and the 'mash' squeezed out.

Cathedral city do croquet potatoes with cheese, I do a couple in the air fryer.

Under ground veges arent really an alternative on low carb/keto diet. I love the idea of mashed swede though

you clearly don't understand how a low carb way of eating works.

the OP didn't ask for thoughts about calorie restriction diets.

there isn't a great alternative because it's the carbs that make roasties what they are. I 'make do' with celeriac roasties, or on the very odd occasion, have one/two very small roasties and reduce any other carbs I can (not easy as a vegetarian!!)

Roast cauliflower? Lovely with rosemary, oil and salt. You can break into little florets.

Mashed cauliflower, or cauliflower cheese with crispy topping
Mashed celeriac (never tried it dauphinois style but sounds amazing!)
Some pork crackling hits the spot for me crunch wise

You can make a wonderful low-carb cauliflower cheese (cream for the cheese sauce rather than flour and milk), or a leek and courgette gratin.

As a long-term low-carber, I actually have a couple of roasties with my Sunday lunch, but I'm maintaining rather than trying to lose. If you're wanting to lose weight, it's best to be stricter.

the first time I cooked it, I thought I was going to throw up. The smell was vile. It was fresh, so I don't know why? Never had that reaction since.

I prefer it mashed, but you can make roasties & chips with it, but don't expect too much in the way of it being like 'the real thing'

im away at the moment (unfortunately work, not fun) but I have finally bought an Air Fryer, so looking forward to trying it out in there when I get home.

I buy them whole & fresh, but you can buy it in the freezer section (at waitrose anyway) cubed & ready to go if you prefer. I did when my shoulder was injured & I couldn't cut the beasts up.

Would kohl rabi work? It's a root veg but low carb and used in keto diets. It's also good at absorbing flavours, so if you toss it in garlic butter and fresh rosemary, I think it would be delicious.

Also, kale flowers tossed in a bit of sesame, garlic, sea salt and mild chilli flakes, then roasted until crispy on the outside, tender on the inside, are divine. I'd choose them over roasties if I could only have one or the other.

Another vote for celeriac. I thought it was going to be disgusting but roasted is nice - even my fussy eating kids will have some. I'm cutting down rather than cutting out though so I'll still have a roastie or two, just much less!

Roasted fennel.

Roasted Rhubarb - yes, it's a really nice vegetable with the very slightly sweet and fruity, sour and salty savoury of chicken (put it under the bird so it's cooked through with the juices).

Roasted Courgette - thick chunks.

Cut cauliflower into florets and bake until the edges are browning and the stalks are soft. Mash with butter/cheese or milk.

Baking cauli ensures its not watery and gives a lovely nutty flavour. I also like the roasted cauli with a tahini dressing as a side veg.

Celeriac cut into chunks or chip shapes and roasted with garlic powder are tasty
