Low Carb alternatives to roast potatoes!!!

I just love stuffing and roasties with roast chicken. Stuffing Im making out of sausage meat and onions, herbs but I need something instead of roast pots or mashed pots! Any ideas???

Low carb or Keto? If it's just low carb (around 100g/day), you can still have a small amount of roasties. I used to have 125gm occasionally and it came in at 24gm carbs. If it's keto though there's no chance, I'd sub cauli or celeriac either mashed or roasted, or even mashed them formed into little balls and then roasted.

You can make a wonderful low-carb cauliflower cheese (cream for the cheese sauce rather than flour and milk), or a leek and courgette gratin.

As a long-term low-carber, I actually have a couple of roasties with my Sunday lunch, but I'm maintaining rather than trying to lose. If you're wanting to lose weight, it's best to be stricter.

Not my recipe, got it from the Low-carb Bootcamp page, but I've tried it and it's delicious. And yes, cream is fine - although like all dairy, don't overdo it.

Cauliflower cheese

  • Break cauliflower into florets, and boil in salted water till tender - about 7-8 minutes, then drain into a colander and let it steam dry
⁃	In a small saucepan bring 300ml double cream (a medium-sized pot) to a simmer, and then chuck in as much grated mature cheddar as you like, to make it taste as cheesy as you like
  • Season with black pepper, and stir till the cheese is melted
  • Add the juice of half a lemon (trust me, this really works)
  • Put your cauliflower into an oven dish and pour the sauce over the top
  • Sprinkle a generous handful of grated cheese on the top and then bake in a hot oven for around 20 minutes, till the top is nicely browned

the taubes & Jason Fung type books.
I did listen to a podcast about it, but don't remember who by 🤦🏻‍♀️

it's hard because there really isn't much that's vegetarian & carb free.

I did BIWI's Bootcamps for a long time. It was lovely to have people to do low carb with, but I also found it difficult to not be resentful of people being less 'strict' & losing a lot of weight while I was being really really 'good' & not losing any weight.

Vegetarian strictly low carb is bloody hard. I get extremely bored because there's not much variation & eating anywhere other than home is virtually impossible to enjoy.

it controls my diabetes enough so I can stay off medication, but I find myself throwing myself off the wagon a lot more these days. I get fed up of not eating 'normally' & not being able to enjoy going out with friends.
