Not vegan but veggie.
I'm using MFP although not weighing food. Probably need to as I'm sure I'm under estimating portions!
1200kcal v hard. I do 20km cycling or a 5 km run per day to give me extra calories. At weekends I try to do a 10-12km run so I can have cake or roast potatoes etc.
My tips:
Packet ready cooked lentils - Merchant gourmet. Quinoa and rice. I find these very filling with salads. I don't eat any bread and any pasta is all red lentil pasta, more filling as more protein. I tend to have that for lunch at work. Falafel but I like that with humous which is calorific! Stir fry and tofu.

No fasting for me- I eat breakfast at 6.20 and often dinner at 21.00 as I work long hours but I am managing to lose wt slowly. Feel so much better.
Have you looked at Bosh recipes? Delicious and vegan.

The only way I can eat 1200 cals is to top up with exercise and eat those cals! Any less than 1400 is too low for me. Luckily I am fat enough to be able to lose weight at that level Grin. I find missing breakfast helps the most. I can go until about 1 or 2 without eating and not feel hungry. If I eat breakfast I'm starving by about 11. So I'd rather eat a decent lunch and dinner and maybe even an evening snack than have breakfast.

I'm shaving a few pounds off and mfp gives me 1530 calories a day for half a pound a week loss. It's easily doable with 3 decent but not extravagant meals a day and 1 small snack but I'm going for lots of long walks so I can have a glass of wine, too!

It's a tried and trusted route for me. I usually maintain pretty well at a weight slightly higher weight than I'd like but not uncomfortably so, but I've been hitting the cake through lock down and I can't get away with it.

Today I've had a breakfast of muesli, banana and strong, milky coffee, lunch was a crust of fresh multigrain bread with egg mayo, some ham, salad leaves and beetroot with a red pepper sauce. Dinner was pasta (50g raw weight - I never have a lot, anyhow) with Italian style sausages and Sweetcorn in waitrose Essential chilli and tomato sauce. Currently enjoying some wine and about to grab a bowl of nuts. Went on a hilly 4 mile walk, by myself, this afternoon. Often walk with my autistic 14yo but he takes his time uphill and the difference in cardio is amazing. I can't do high impact exercise, so walking is my thing.

I'm 50, 5'4 and usually just over 10 stone and do maintain at just under 2000 calories when I'm reasonably active. I would find 1200 calories a day pretty miserable, tbh.

And I really can't skip breakfast. I cannot function without it.
