Fruit & Veg record - anybody care to join?

I have recently read How Not to Die (well, on Audible actually) and its absolutely fascinating. All the different benefits different veg have and the different benefits each has depending on raw v cooked.

It advocates a plant based diet, but that wont happen for me. I am however committed to reducing meat and increasing the amount of veg (mainly) and fruit in my diet.

Would anybody be interest in joining in recording the different veg they have managed to achieve each day and in what ways? I'm talking pretty hard core here - aiming for 9 a day with a big variety.

I'd find it really interesting to see how others are achieving it.

Yesterday

Moma porridge and small handful of rainsins stirred through
2 very large tomatos sliced with lots of pepper and bit of salt

Huge salad of lettuce tomatos cucumber beetroot and spring onion served with grilled tuna and sweet chilli sauce
Greek yoghurt with a punnet of raspberries
2 apples

A bowl of orange and honey dew melon

Huge pile of steamed broccoli, asparagus and cauliflower (probably 4 portions at least!) and I stirred through tamari sauce and wasabi. Served chargrilled chicken slices
Greek yoghurt with punnet of blackberries and blueberries
2 apples

Some orange jelly (nope, no fruit and veg portion there!)

So total around 18 again

Highhorse, you are pretty hard core so great to have you along on our journey!

I didn't go to breakfast but had my flax muffin instead, really pleased. Out to lunch yesterday and made all the right choices Dinner was made by a friend but she's really healthy anyway and it was lovely.

Another flax muffin for breakfast then lunch today will be out again and back home to routine and being more in charge of my eating.

Yesterday:

B: raspberries, blueberries, yoghurt (2)
L: none (v bad, but was haring around town and didn't have time)
D: giant salad with: tuna, anchovies, boiled egg, black olives, lettuce, tomato, cucumber, red onion, green pepper, avocado (7), then an orange 1), so 10 for yesterday.

The fridge is totally bare of everything, though, so I'm going out NOW to stock up. Then will follow everyone's recipe ideas and hope for a good week ahead.

Chicken pie (chicken, leeks, carrot, parsnip, celery, parsley and white wine) with white and sweet potatoes, red cabbage,kale cooked with apples, plums, red onion and coriander with coconut oil maple and little red wine) with peas, broccoli and carrots

Breakfast: porridge with dried apricots and honey (1)
Lunch: Falafel pitta with lettuce, satsuma (3, if I count falafel ?)
Dinner: Roast chicken with purple sprouting broccoli and carrots (2)

So, 6 today. I have planted loads of veg in my veg box this weekend - can't wait for the bounty to come!

Today

Oats with banana, blueberries and goji berries with flaxseeds and Brazil nuts. (3)

Lunch
Spinach, rocket, spring onions and romaine lettuce with lentil chilli with red pepper, onion, celery, canned tomatoes (8) - lots of tumeric in too.

Dinner
Kale salad with spicy bean mix with red onions, yellow pepper, corn and a sweet potato. (5)

Trail mix with raisins (1)

Total 17.

I went a bit mad in two supermarkets and the garden centre food hall and now have enough fruit and veg to feed the whole street even though there are only two of us in the house. How exactly we’re going to get through it all I’m not sure but I keep hissing at DH to “just go and EAT SOME MORE VEG!!!”

Today then:
B: Greek yoghurt, raspberries, blueberries (2)
L: none, again (was out)
D: we had a barbecue, so a marinated chicken thigh and a herbed pork escalope thing. I finally made the legendary bean mix: beans, tomato, cucumber, peppers, red onion, celery, sweetcorn (7) plus loads of cumin, lime juice and coriander, and also made slaw (three different types of cabbage, carrot, spring onion, radish, apple, fennel (6)),some pineapple and a plum (2).

17, yay me 😄.

Musueli with almond milk and raisins. (1 portion)
3 very large tomatos sliced (3 portions) with lots of pepper

Lunch at a tapas restaurant. Lots of meat, dips, rice. Plus slice of birthday cake. No veg (0 portion) but bloody delisch and so unlike what I normally eat that made a nice indulgent treat

Dinner large bowl of steamed courgetti and broccoli with soy sauce. 2 raw carrots. (6 portions)

Large fruit salad (2 apples, melon, tangerine, blackberries) (5 portions) with some greek yoghurt

Lurking, I know how you feel. I panic a bit when I see how much veg there is on the fridge, but it does go.

For fear of any of it spoiling I have sometimes made and frozen soup.

I'm sure the rate you are going, you shall get through it all.

I have an Ocado delivery this morning with so much lovely stuff anticipated. I feel so healthy putting it all away!

This week I'm going to focus on my portion sizes a bit more. Eating at friends houses, in Kroger everyone serves smaller portions than in this house. I love with a big ex rugby player, gym loving husband and my son who plays rugby, coming up to teens and neither can get enough food, so I think my portion sizes have crept up too.

I'm going to have a look at that this week, although obviously not on the veg side of the plate.

I ate out at a Bills restaurant (it's a chain) for the first time yesterday and was really pleased with how progressive their menu was. No organic unfortunately but a good selection of foods for the whole family. The usual burgers etc. I had herb crusted baked cod on a bed of kale and lentils and it was delicious.

They also had cauliflower steaks on the menu which I will try next time and might even have a go at making myself.

I'm not sure I'm the best person to follow on that score lurking because I've only started eating salads in the last few weeks Blush

But I take a couple of handfuls of kale, spinach and some rocket, some spring onions and a tsp of balsamic vinegar and some pumpkin seeds. I add whatever bean/ chilli thing I have leftover in the fridge on top because I can't stand an entirely cold dinner. If only summer would kick in, this might change.

So, the start of a new week and I'm all in for variety and balance!

Breakfast was flax seed muffin with pistachios and

  1. Raspberries

With a smoothie with my usual spice mix, fresh turmeric and

  1. Massive handful of mint
  2. and corriander
  3. and Parsley
  4. Raw beetroot
  5. Cucumber
  6. Chicory
  7. Mango

Lunch is a tin of sardines in tomato sauce with raw garlic on one toasted and buttered piece of Vitality Rye Bread and

Chicory

  1. Tomatoes
10. Whole punnet of cress

with a tahini and olive oil dressing. Simply delicious!

Tea is Patrick Holfords Lentil Dahl with

  1. Lentils
  2. Onions
  3. Spinach

on a bed of 50% Gaba rice and 50%

  1. Cauliflower rice

with a side of

  1. Steamed brocolli ... and I'll drink the steaming juices when cold.

Wow Shoes looks great. I'm up to 7 plus here (small amount of avocado smoothie as well as 7fv) and plan on getting over 10 anyway. I'm full up after delicious lunch of scrambled eggs w/spinach, courgette, peppers and mushrooms. Have a vegful day all!

Everyone has got off to a good start! I'm just eating my lunch now. In one soup bowl I have managed to cram in:

Kale, rocket, spinach, tomato, celery, carrot, red pepper, bean salad, hummus, tuna and seeds, which must be 9 even if you don't count the individual things in the bean salad. I'm determined to get up to 15 today!

Hi all, wow you've all been doing really well. Saturday was a write off for me, busy long shift at work involving too many biscuits and no break!

Yesterday. B- porridge with strawberries, blueberries and raspberries. 3

L-tuna nisose salad, lettuce, cucumber, tomato, onions. 4

Dinner-Nut roast, potatoes, cabbage, peas, carrots, onions, mushrooms. 5

Snack-couple of ryvitas with avocado and tomato. 2.

Total of 14.

Today. B-porridge with cherries and strawberries. 2

L-stir fried broccoli, spring onions, spinach, celery, and noodles. 4.

D-bubble and squeak with last nights leftovers. 4.

Snack-grapes and blueberries. 2.

Total of 12. Smile

It is surprising. White potato is high is relation to cashews. When you think cashews cost £13/ kg ish and potatos are about £0.55/kg and also the difference bin carbon footprint between the two it seems like madness.

But surely they have completely different nutrients in them? So cashews are nutritionally valuable in some ways a white potato are not. I think. I don't know.
