Hi, just dropping in as I'm an avid low Carber. Was doing for a year and maintaining wonderfully on LC lifestyle. I'm now pregnant and struggled to keep up it (craved bread to ease MS). Anyway, I still live by a few of the rules, but I noticed one of the posters on here mentioned breakfasts woes. my staples were batch cooking muffins on a Sunday, freezing and taking one out each morning. Saved the stress of trying to get ready for work and deal with LC brekkie. Anyway. from memory, the recipe is 1 jar of almond butter, 3 eggs (?) tsp baking powder, 1 tbs truvia(i think) blueberries and a splash of lemon extract. mix all together and pop in muffin trays and cook for about 20-25 mins. I usually get about 9. They are about 0.7 carbs per muffin and really keep you going.
Berries are fab for LC, even in first 2 weeks and my other staple was almond pancakes with berries and total greek yog, Again, froze them and took out each morning.
I also batch cooked sausage/egg muffins and froze for the week. 6 good quality sausages out of their skin and browned. Divide between muffin tray. Mix together 6 eggs, 60ml cream, 60ml water, dried herbs and poor over the sausage meat. Grate over soem some cheese and cook for about 20-30mins.
I'm sure you are all experts, but I am just envious of you all doing LC and I can't at the moment.
