Ok if you were making/bringing a low carb dish to a buffet at lunchtime in the office what would you bring that is also cheap?

The current list also looks very carby so this is likely to constitute my whole lunch...

BigBroomstickBIWI · 11/10/2012 13:54

Cheese and sliced meat platter
Big green salad with oil and wine vinegar dressing
Sliced mozzarella, avocado and tomato (slice the tomatoes very thin so you don't use too many of them!) drizzled with olive oil and scattered with fresh basil
Roasted vegetables - peppers, leeks, shallots, courgettes, fennel, chillies
Home-made coleslaw (again, go easy on the carrot and use shallot or spring onion in place of onion)

Lunch: enormous bowl of cauliflower soup (AT LAST!). yum, and very filling.

What else can I do with the cauliflower we are having with chops later if I am avoiding dairy?

And, like a previous poster (Dotty?) how do I eat more fat if I am avoiding dairy? That's going to be the tricky thing.....eat mayo I guess, and the fat on meat...

Avoiding dairy on LC is actually really hard. One of the first suggestions to olivia to avoid the bikkie was a slice of cheese....it's one of the only on the go things you can eat.....[sulks]

butterflyexperience · 11/10/2012 14:13

Well done vnmum

I am currently craving chocolate.
Can I have some pllleeeeassseeee??

Im PMTing

butterflyexperience · 11/10/2012 14:14

Dosh why are you avoiding Dairy?

NewStartSameStory · 11/10/2012 14:19

Biwi gave me some advice earlier. It included oil based dressings on salads covering or for dipping. Its back in last weeks thread i think, give a mo and I will see if i can find it.

WillieWaggledagger · 11/10/2012 14:20

dosh that was my worry about the fats if i avoid dairy (haven't decided yet...)

auntiemaggie you could jump on the mini frittata bandwagon and do little spinach and feta ones (or cheese and bacon like quiche lorraines, or red pepper and feta) in a muffin pan and serve cold (this is what i'm doing for a picnic on saturday)

NewStartSameStory · 11/10/2012 14:21

Here you go:
BigStickBIWI Thu 04-Oct-12 12:18:43
Does dairy, for you, include butter?

Other ways:

  • buy fattier cuts of meat, e.g. belly pork, breast of lamb, beef shin, chicken thighs
  • have oily fish, e.g. mackerel
  • have oily dressings on salads
  • use mayonnaise
  • fry rather than grill
Add message | Report | Message poster BigStickBIWI Thu 04-Oct-12 12:19:05 If you are ok with butter, then fry with butter and add butter to your veg once cooked

Hth.

WillieWaggledagger · 11/10/2012 14:21

the eggs would also make the more expensive ingredients (cheese/meat/veg) go further

BigBroomstickBIWI · 11/10/2012 14:32

Doshusallie - cauliflower is fab if you roast it. Drizzle with olive oil, and season with salt and pepper, and some ground cumin and/or chilli powder. Roast in a hot oven for 15-20 mins till soft and starting to char

Doshusallie · 11/10/2012 15:13

oooh great Biwi thanks.

Butterfly a number of posters (VNMUM included) have said that their weight loss has started up again since they have ditched the dairy. I'm going to try and see if it means I can move from the 2 pounds that I go up and down and up and down on.

Poppy1234 · 11/10/2012 15:17

Vnmum congratulations on the new job, fabulous news. I'm very interested on your paleo journey with your children. My children are still so young that they don't really have a say on what they eat but I have been trying to follow a paleo approach (have just been pinning paleo halloween snacks). My theory is that if I'm so convinced by this way of eating I'm not doing my children any favours by feeding them differently just because it's the norm. Who knows, when our children our older this may be the accepted way to eat although doubtful as so much is at stake from the food industry and supermarkets. It's so hard to know what to do for the best.

I'm so impressed by those of you who are giving up dairy, I'm sure if I did give it up it would make a difference but I adore it and it's what makes this way of eating so lovely and palatable for me. I might watch the scales and it may be a strategy for those last few pounds. I am going to watch the food plans of the non dairy eaters more closely.

B: Greek yoghurt
L: Curried cauliflower and coconut soup
D: Baked feta and harissa salmon with ratatouille

Bit light on the vegetables today as the cupboards are looking rather bare and the weekly shop is calling.

Doshusallie · 11/10/2012 15:19

I don't know if I can cut it out completely TBH - the two buckets of greek yoghurt in the fridge for example. May still have that for breakfast but just cut out cheese and cream.

Wheresmypopcorn · 11/10/2012 15:21

Just happened upon this thread. I have been on a low carb diet for going on 3 weeks now. I do carb fasting during the week and eat what I want on weekends. Was majorly crabby last week but this week it's easier. Suffering from Broccoli overload! On the plus side, I've started running again and look forward to potatoes as my junk food on the weekend (used to be a big pizza!)

butterflyexperience · 11/10/2012 16:08

dosh I see.
Will you stop butter too?
I notice your having yogurt? I think cutting down on your dairy will def help and also if you cut out fruit if you are having any.

toomuchmonthatendofthemoney · 11/10/2012 16:10

My lunch today was LUSH. Two venison burgers (made by a friend of my dads so all authentic n rustic, the home made label says "all efforts have been made to remove lead shot, but some may remain" Shock)

Fried the burgers in a little oil. Took them out to rest. Into the pan with all the lovely juices went chopped mushrooms and leeks with a little extra butter, then some creme fraiche and mustard stirred through. Wilted some spinach, put burgers on top, poured over the shroom sauce. Honestly, it looked like something I would pay a fortune for in a posh restaurant and it tasted fab.

I had to lie down after Grin

toomuchmonthatendofthemoney · 11/10/2012 16:10

huge congratulations VNMUM just read your news!! Well done!!

Doshusallie · 11/10/2012 16:15

too much that sounds delush. Grin

No Butterfly I haven't eaten fruit for months. (Sigh - miss it).

MrsHerculePoirot · 11/10/2012 16:21

vnmum - woohoo massive congrats!!!

B - bacon, egg and mushroom fried in butter.
L - goats cheese salad
D - tbc - have kale for kale crisps and a funny type of cauliflower, need some meat to go with it!

butterflyexperience · 11/10/2012 16:24

toomuch That sounds divine! I'm going to make homemade lamb burgers tonight but have no spinich or leeks or creme fresh or mustard to make the same :(

dosh I used to eat loads of fruit before and it's odd not having any...
On atkins after 5 weeks berries can be reintroduced so looking forward to that!

captainmummy · 11/10/2012 16:58

Popcorn - if you eat potatoes at the weekend don;t you find that you are going in and out of ketosis? Doesnt that mean youre doing low-carb and high-carb at the same time?

NewStartSameStory · 11/10/2012 16:59

I will be cheating tonight. There has been some bad news which means I will be eating out. It's not ideal but I haven't the energy to mess about with anything and will except feeling crap, weight gain and anything else that is going one as a result. Plan to restart tomo. One meal to be wrong only. Hopefully there will be some better news later.

HumphreyCobbler · 11/10/2012 17:01

hope things are ok NewStart

NewStartSameStory · 11/10/2012 17:05

Me too Humphrey. Me too.

AuntieMaggie · 11/10/2012 17:12

Thank you

I thought about frittata except someone is already bringing quiche so thought it was too samey but thanks. Soup is a great idea but I don't know how I'm going to pratically manage it!

I might do a big salad - theres about 10 of us so cheese/meat may get a bit expensive on their own... mind you I get into work at 7am so its going to be a pain to do!
