Ooh, chowder - good call @AnneinEdinburgh Also tortilla, which made me realise quiche is a good option too. I don't have a slow cooker but I love making casseroles and stews and I just need to start thinking in terms of making enough so there's portions for the odd lunch as well as dinner.

I'm thinking roast dinners - but without the carbs?! So roast chicken and veg with gravy and then using the chicken leftovers for lunches. Same with other meats (but are you a veggie...?).

I like to air fry halloumi slices and have them on spinach with some greek yoghurt -it's quite nice having hot halloumi slices on spinach, weirdly...

I like to do one tray roasts - so chicken thighs/legs with roast veggies are yum (it's possible I'm chicken obsessed...).

Stews will be nice in the winter - beef stews with lots of veg - just no/less carbs.

I got bought a Ninja multi-thingy last year as a flat warming present and the only setting I haven't used on it so far is the slow cooker - so I need to try that and do some slow cooked stews!

I'm not veggie, no. Yes, I think it's definitely a question of making food for dinner that can then help with lunch. It's not how I usually roll and I'm a bit lazy about lunch but I need to up my game. I'm a bit lacking on the gadget front - I don't have an airfryer either. 😂

Griddled halloumi on spinach (maybe with a salsa) would make a great lunch. Nice one.

Noodle soup is another favourite here. The 12 year old hates it, the 15 year old can't get enough

Noodles (rice works best, could use those zero noodles?), chicken stock, soya sauce, some hot sauce (lots in my 15 year olds case!), shredded carrot, matchstick ginger, crushed garlic and whatever shellfish/cooked meat she's chucking in it.

Shes really not one for breakfasts- her idea of breakfast is actually a plate of leftovers from the night before. Anything goes, including things like curry.

Another one she makes quite often is whats known in this house as roasty renaissance. When you're making the roast peel and chop a few extra veg but dont cook them. The next day it gets fried up with a chopped onion and the pickings of the roast added once my portion is out (I dont eat meat). Usually its seasoned with soya sauce, garlic, ginger, more hot sauce (I make this myself), chilli e.t.c and served fried rice style- you could always cut down on the rice if going low carb. Something else the 15 year old eats cold out of the fridge.

The rather uninspiring recent weather is making me ponder what my lunches at home will look like in Autumn & Winter. I started MJ pretty much on the dot of the Spring equinox and it's been largely 'cold lunch food' weather ever since. Pre MJ, wintery lunches tended to be a bowl of pasta, or - fresh, supermarket - soup and a roll. Neither of these are much cop for protein-not-carbs. I hate lentils in soup so that's NOT happening. Beany soups, maybe. I've got a while to figure it out, anyway. Any suggestions welcome 🙂 (but not using ChatGPT).

I’m gonna pull out my trusty, get a slow cooker, advice. Mine was less than £30 Asda own brand.

I buy all veg pre-prepared either fresh or frozen. Then when I’m unpacking the shopping I bag it all up into XL ziplock ‘dump’ bags that can be put in the fridge or freezer. In the morning I empty a defrosted bag into the slow cooker, turn it on low and 6-8 hrs later I take the metal pan out of the slow cooker machine bit, put it on the stove top and let it reduce down for 10 minutes to get rid of some of the liquid.

  • chicken breast chunks with fajita seasoning, big chunks of pepper, onion and baby corn
  • chicken breast fillets with BbQ seasoning, cooked until it can be pulled apart and shredded, serve with salad
  • lean diced beef with chilli seasoning, loads of mushrooms, peppers and onion
  • lean diced beef, beef stock, whole baby button mushrooms, onion, leek, celery, carrots

i make enough for 4 portions, 1 goes in the freezer, when I eat the 3rd I make a new batch, that way I slowly build a variety of pots in the freezer that can be used as ‘can’t be arsed to cook’ meals when I need them.

400/500g packs of meat and then just bulk out with as much veg as the cooker will hold. Each portion comes in between 200-300 calories depending on your quantities and cut of meat.

This is very similar to a recipe I use a lot (that I can’t find now), not sure I would be arsed with the salsa verde but the minestrone itself is filling and uses beans not pasta.

Final recipe from me- the 'volcano juice' hot sauce the 15 year old seems to consume in unimaginable quantities. Faffy but worth it.

300ml boiled water cooled down
6g salt (I make my own sea salt as well)
Lots and lots and lots and lots of chopped chillies and whole peeled garlic cloves.
Big glass jar (I use an old coffee jar for this). Has to be glass.
Clean pebble or weight.
Small glass bottles if pausterising afterwards, jam jar if keeping in fridge

Chop the chillies into pieces and pack into the jar with garlic cloves. The more you can pack in the better. Alternate garlic and chillies. Then gently pour the brine over. Use a wooden spoon to get rid of any air bubbles. Use your weight to stop anything floating to the top. You might not need all the brine depending on the amount of chillies and the size of your jar.

After a few days it'll start fermenting. This is good. Shake it gently daily to get the bubbles to come to the top. After a week or so its ready. Drain the chillies and garlic and save the soaking juice. Blend the chillies using the soaking juice to thin the sauce as you like it. If you're not pausterising it leave in the fridge. If you're pasteurising it bottle it and boil accordingly.

I have made a big batch of salsa verde (lemon rind and juice, garlic, anchovies, fresh green herbs, seasoning) and put it on top of salmon fillet, steak, fish etc etc which is delicious and feels very cheffy for something so simple

You can also just take photos of what you have in your fridge and food cupboard and ask chat GPT what you should make for lunch based on what you have. Good for a few random ideas.

some lovely suggestions here, I’d say I’d tey them but MJ has made me even less of a cook than before!

Reordered my MJ with ASDA last week, and today they’ve asked for new photos! They’ve been very lax - I have had no request for updates since starting almost one year ago! For those who might like to know, they want three photos, one of you on the scale, and two full body, front on and side, with feet on show. They also ask for visible belly and back. Its a bit more than before and as hideous as it is, I’m ok doing it for my miracle lol. Wore cycle shorts with them tucked under my apron and a bikini top. They’ve also got a proper system for uploading rather than attaching, walking you through guidance based on how you choose to carry it out.

really means I need to have more consideration on ordering now though, hoping i dont go back on hold for approval for another 5 days, as I will not be home to receive a dpd parcel this weekend!!

I always like to get away from something stone 13lbs - way too precarious - so feel like I'm further away from the 16 stone cliff now...!

Exactly 30lbs to go until I hit the target I initially set of 192lbs and only being overweight... 🙄

Next mini target = 15st 10lbs, at which point I will finally weigh less than the boyfriend and will have won the competition he doesn't know he's in
