Easy nutritious veggie meals

Just eating pesto pasta with green beans and peas for a bit of veg but bored
I used to cook interesting stuff every day but just not fancying stuff I used to like
Craving savoury today and complicated salads but need some good recipes. By complicated I mean nice mixes but ideally easy !

I use a lot of Joe Wicks veggie recipes as they’re almost all high in protein and not too complicated

Good shouts thanks. I'm knackered too so need to fuel myself whilst remaining j deficit and being nutritious!

I thought I was doing quite well with quite simple meals as not been particularly hungry but wanting a real meal each evening. But just looking at chatgpt I'm not eating the protein I should be 😬.

So posting here for any inspirational!

I can only do easy recipes as I can't stand for long. I made a fab veggie curry yesterday. This made enough for 8 servings so cut down if you need less:
Aubergine
4 peppers
Medium courgette
Small butternut squash
2 red onions
Frozen or preseved chopped garlic
Tin copped tomatoes
Tin chickpeas
250g Spinach, sliced into ½cm ribbons
Spices to taste

Top 4 items - cut into 2cm squares, spray with 1cal oil and roast or airfry until they are going brown and crisping up (I do this in advance usually to conserve my energy so I can sit and chop veg while watching tv and then bung them on to roast while I rest).
When ready for next step - thinly slice onions into half moons and sauté in 1cal spray with garlic until going translucent. Add spices and cook gently for another few minutes then add all the rest of the ingredients except the Spinach, plus enough water that it looks a little too sloppy and all the veg are submerged, then leave it to simmer gently until that excess liquid has steamed off. Stir through the spinach just before serving.

Spices can be anything - I use curry powder, cumin, cinnamon, coriander and chilli usually. Sometimes cardamon or clove. Or buy a ready-mixed blend. I love to experiment but sometimes I go overboard and it's too spicy in which case a couple of spoons of yoghurt tunes it down.
