I've just started 2.5 pen. I've heard that some pharmacists only allow you to go up rather than stay on the same dosage for a few months. If I wanted to, would I be able to change pharmacy suppliers and stay on the same dosage as long as it was working for me?

You can change pharmacies easily, just need to show proof of previous prescription if you are on a higher dose than the starter dose or if your BMI is no longer eligible as a new starter.

Some pharmacies will suggest you going up/imply you have to, or if subscription automatically send you the dose up unless you request otherwise, I haven't heard of one that forces you to move up if you don't want to.

If you are with a subscription based provider make sure to cancel before the next pen is due.

If you don't feel comfortable with your provider it makes sense to move.
