A thread for anyone doing this who might need any help or tips 😊 I’m already vegan but happy to offer suggestions or support if anyone wants it!

I agree op and I wont mention it any further. Back to recipes and meal suggestions etc :) of course I wont mention any with honey in, I was just replying to the couple of occasions it got brought up.

I make soup in the winter at least two or three times a week with any vegetables that need using up. I'm on a day off today so made carrot, parsnip, red onion, potato and cannellini bean soup.
Just fry the red onion in small amt olive oil add sliced carrot and parsnip salt and pepper add cubed new potatoes drained beans of choice and about 1000 ml hot water with two or three dessert spoonfuls of vegan bouillon stirred in. Splash of white wine vinegar and a bouquet garni if have one ( I have Suma). Simmer for a while check the seasoning. If no bouillon use veg stock cube but check ingredients as sometimes not vegan.
I didn't have leeks or would have put them in. Can substitute cannellini beans with butter beans or lentils.
I have it Chucky but if children there usually blend it. Do a huge pan so it lasts a couple of days. I've already had some at 11 am

Soup is definitely great, my mum and dad always have some home made lentil soup in the fridge and I’m jealous, I’ve been saying for ages I need to make my own.

It really only took me ten minutes as I had the onion on while peeling the carrots and parsnips, I only washed the new potatoes didn't peel and bunged it all in.

Nice! I just had more of mine and realised it's a bit salty. Think I should follow the instructions for the vegan bouillon I out too much of it in. Nice otherwise though.

Sorry about the frickles but well done making soup!

I’m still slowly finishing off the Christmas chocolates, one or two a day, the hotel chocolat nut milk is a favourite and the considerit truffles. Less a fan of the chocolate creams.

Still got some lovely I am Nut Ok cheese in the fridge too!

If anyone has got kids I fed mine Aldi's vegan ham chopped into little bits and mixed with pasta, peas and sweetcorn, served with broccoli, hummus and Aldi's vegan Parmesan. I cooked the pasta in stock for some extra flavour and stirred a bit of vegan butter into the pasta after draining.

Both my 6 year old and toddler loved it! Followed by peanut butter and banana on toast for a healthy pudding.

Thanks, I have a daughter I’m raising vegan, might try this but she doesn’t usually like things mixed šŸ˜‚

My 2 can be a bit like that. I did feel a bit wreckless mixing it all together šŸ˜‚but the gamble paid off!

I made vegan cottage pie last night which they both hated so tonight's success was much needed!

I do mine a little bowl of peas and sweetcorn to nibble on as a starter and they love it. Get the veg in first while they are hungry 😃

That’s actually a great strategy! I once made pizzas with DD and while we were making them she wanted to eat the base, the cheeze and the sweetcorn and I stopped her telling her wait until it’s ready… then when the pizza was made she didn’t want a single bite of it šŸ˜‚šŸ˜¬

I am the worst for that! I nibble at all the ingredients while cooking and constantly "tasting" the cooking food then by the time it's ready I'm not hungry šŸ˜‚

I went in my local Aldi this week and I couldn't find any fresh stuff at all, but loads in frozen. Maybe I missed an aisle! It's not that big and I don't think the demographic would cater much for vegans but I did feel no dairy free fresh section was extreme. It's not my normal place to shop though, I basically go in there for nappies!

Where can I get a vegan KitKat?? I've made a really good bean chilli and a sweet potato satay curry this week which is something we eat semi regularly anyway. And I've managed to get DH to agree to try that tofu recipe this weekend - hooray!

One thing I've noticed is how much easier things are at work this time. I work in a school and we get a free lunch. It's a private school so the food is good. Since I last did veganuary we have oat and soya milk in the staff fridge and 3 days last week the veggie option was actually vegan.

Not surprising really but in the last 10 days I've eaten a massively increased amount of fruit and veg and feel healthier as a result.

Oh, and I've remembered there's an all vegan cafe near us we normally don't go to as the pastries aren't as nice because they are vegan. Well I will certainly be seeking them out this weekend!

I'm switching from mainly m&s to mainly Lidl. I am mostly whole food plant based but bought quite a few things in the Velmondo range today from olives to a moussaka to filled pasta and even some chocolate cakes.

Asda sell the vegan kitkats too but they also sell them in my tiny work cafe and a local soft play randomly (admittedly the latter two are no use to you @Peskydahlias but worth keeping an eye out whilst out and about).

Oooh enjoy, hopefully they have some other good things if the pastries aren’t great. I know what you mean as we are spoilt by a gorgeous vegan patisserie in my city which does amazing pastries and the vegan croissants from cafe Nero for example feel a bit sad by comparison, and even more so the ready made long life ones.

I do love a jus rol pain au chocolat though- most jus rol products are ā€œaccidentally veganā€ if that helps anyone!

I'm still finding this ridiculously easy (in a good way!). Not missing a thing.

Bol soup is amazing as are the vegan Kit Kats! Just had a vegan bacon sandwich for lunch after spending the morning in the gym.

We're making the peanut butter and jam cake this afternoon (recipe from a few vegan ones in this months Ocado magazine). And pizza for dinner tomorrow. I've found a great soft cheese that I dab on top. I'll look for a link as can't remember the name!
