Not doing veganuary but I made some gochujang tofu yesterday that was sublime.Although incredibly spicy!

I'm doing it! Ive done it before but veganism for me in the long run is difficult as DH and kids are committed carnivores... The adjustment to cup of tea with oat milk has been first this morning. Will probably switch to coffee as I think it tastes better with oat milk! Any suggestions for websites you really like with recipes? I

Also, in the past cheese is what I really struggle with as I basically really like vegetables, beans pulses and tofu so happy to eat a lot of naturally vegan stuff. But the cheese....

Which vegan cheeses have you tried? Some are really vile!
For a cheddar alternative I use Violife or Cathedral City.
Blue, Brie etc I use Honestly Tasty.
Much better than the supermarket own brands.

I think I've had most of the types of violife. Have just bought some grated stuff from a brand called nurrishh I got in Sainsbury's. Don't think cathedral city did vegan stuff last time I was doing veganuary so I'll give that a try! Ive had posh stuff from a shop called fauxmagerie in London in the past which was much tastier but really I need it for cooking so something to grate.

Hello! Today is my veganniversary after doing veganuary 3 years ago and never looking back šŸ’š I'm hoping to use veganuary to become less junk food vegan and more of the lentil/chickpea/tofu type! Taking full advantage of the Veganuary recipes and things. Needing to get healthier! šŸ’Ŗ

@Peskydahlias what kinds of things do you want to use cheese in? For things like chucking on top of a lasagne or pasta bake or whatever I use cathedral city (the block grated melts better than the pre grated stuff but usually my laziness wins that battle!). If I'm making like a cheesy type sauce, I will use nooch instead with some grated Cathy lobbed on the top.

Try the Alpro "not milk" for tea! I find it to be the closest to dairy milk.

Cathedral city and the alpro not milk added to the shop tomorrow! @PigInADuvet it's just for topping stuff really. So on top of a jacket potato with beans, or a bean chilli. So i suppose as a flatvouring. Tend to avoid trying to make vegan cheese sauce and use nutritional yeast as I don't think vegan cheese sauce is that great? Any tips appreciated though.

Instead of cheese on top of bakes, lasagne etc I sprinkle seeds and yeast flakes. They are really tasty and great if you want to get away from processed cheese.

Glad you’re on board to do it again 😊 it can definitely be trickier when the family eat different things.

@kikisparks I've never tried to make a vegan omelette before so I'll try that - just need to get some gram flour.

I'm not a massive mushroom eater normally but I found during my previous veganuarys I liked them for the strong flavour, plus it's winter I guess so mushroom stroganoff is great. I was thinking what did I need last time that I don't typically have in the larder and dried shitakke mushrooms was definitely one of the things. Plus nutritional yeast.

DH hates mushrooms, tofu, aubergines and lentils so he's a pretty reluctant vegan... There is some stuff I can make we will all eat.

If you mix together these ingredients then leave to rest for 15 mins then fry In oil you get delicious pancakes.

Biscoff spread is vegan if you wanted to really treat yourself.

I air fried the tofu (which I tore into crags) and it had an amazing texture. The sauce was lovely but so so hot. I think a teriyaki style sauce would also work

@bakewellbride thanks for the Amanda Ducks recommend. Having a look at her recipes and loads of them look great - I might make the double choc cookies for over the weekend. I need to do some batch cooking as I'm quick quickly using up my stash of Dahl and bean chilli from the freezer!

Also does anyone have a recommendation for a fairly basic vegan chocolate bar I can get on ocado? (which is where I do my shopping). I love bouja bouja chocolates which I sometimes buy for a vegan friend but they are obviously more expensive. I'm not a big dark chocolate fan which doesn't help. I think I'm going to get some Jude's vegan chocolate ice cream as well as I've just remembered I like that!

Chocolate recommendations- Love Raw, Rhythm 108, Buttermilk - all fairly mainstream/every day and good!

I used to be the same with chocolate, but vegan chocolate for me doesn't have the same addictive quality for some reason (not a bad thing given my waistline!!).

Re: sausage rolls I did the plant pioneers (Sainsburys own brand) ones at a kids party recently. My brother who hasn't even looked at a vegetable since about 1994 munched his way through them happily oblivious (as did everyone else!)
