PartTimeDomesticGoddess · 08/02/2021 09:59

@Kintsugi16 Thai noodle salad sounds lovely. I think I'd go for a stir fry with cashews Smile

KobaniDaughters · 08/02/2021 14:59

@Ginfordinner ha good point - those veg don’t normally bother me but maybe I should pay more attention when it’s that time of the month and I’m more susceptible to bloating.

Thanks @ppeatfruit I’ll try that - I did drink copious amounts of peppermint tea which helped a little. And should prob get back onto taking magnesium. Some months I don’t have a problem at all, this month was particularly bad

Oh and @Kintsugi16 this Thai Noodle Salad is amazing and on our regular rotation

DialsMavis · 08/02/2021 15:17

The Thai noodle salad looks lovely!

B: Oatly Greek Yog (prefer Alpro actually), mixed berries (frozen, defrosted in microwave until hot and sauce like), half a banana, all bran and golden linseeds.

L: tofu scramble, mushrooms, tomatoes and baked beans on seedy toast

D: going to be Jack Monroe butter bean, veg and stuffing stew with stir fried kale in the side

Kintsugi16 · 08/02/2021 15:42

@KobaniDaughters That’s the recipe I have saved on my favourites but I’ve been waiting for an opportunity to try it! One of the problems of lockdown is everyone is here for dinner every night 😂

I’m going to make that but possibly keep the noodles warm and add some warm stir fried peppers and mushrooms topped with crispy tofu. It’s a bit cold for a salad

KobaniDaughters · 08/02/2021 16:07

I do the noodles warm straight out of the pan as well - my brother made this for me over Christmas and it was SO good we have it all the time now. The sauce is so good and the warm noodles make it feel like comfortable food even though it’s mega healthy

AlmightyBob · 08/02/2021 19:24

That recipe looks ace @KobaniDaughters . The dressing is quite like a Leon one I used to make a fair bit, but your one has more interesting veg. Also, on the bloat front, I do notice that an excess brussels sprouts can have that effect on me when I'm pre-menstrual (I also get bad mid-cycle bloating sometimes too) so maybe ginfordinner is right?

Leftovers for breakfast this morning - woke up with a banging headache, which means I'm still recovering from the wine and rum of Saturday night, serves me right. Toast for lunch, and as it's Monday, linguine aglio et olio for dinner. I think we must have had this every Monday for the last 6 months, it's ridiculous; but no-one is showing any signs of going off it and when it comes round to Monday again there's nothing anyone seems to fancy more. It's perfect Monday comfort food.

Kintsugi16 · 08/02/2021 19:37

Yum! It’s been added to our regular menu for whenever DS isn’t here. Perhaps he could make a different dressing for himself

PartTimeDomesticGoddess · 08/02/2021 21:40

Ooh that noodle salad does look lovely @KobaniDaughters. I've added that to my list too. And I know what you mean about too cold for a cold salad @Kintsugi16 (as shown by my lunch!)

Today was
B: porridge with blueberries, seeds and golden syrup
L: lambs lettuce/ruby chard, cucumber, beetroot, hummus, hot falafel and quinoa from a pouch, with lots of warm tahini sauce and a handful of good green olives
D: bubble and squeak (crushed boiled potatoes, cooked cabbage, onion/garlic, vivera facon pieces) with avocado. Another one where they were sceptical and all had seconds (they also had fried egg with theirs). Apple, cherry and almond crumble with alpro custard

KobaniDaughters · 09/02/2021 02:18

B: DD’s leftover lemon poppyseed scone
L: Rosemary, garlic and white bean soup and a slice of bread
D: lentil soup and broccoli and nabbed a slice of DS’s teriyaki tofu!

OP posts:
KobaniDaughters · 09/02/2021 04:09

And a punnet of blueberries - frustrating work day/night and wish I could have a glass of wine but am trying to be booze free until end of March. Feels like a stupid idea now

OP posts:
ppeatfruit · 09/02/2021 08:32

Bit of encouragement here Kobani Blueberries are sooo good for you!!! I have the really occasional glass of vegan, sulphite free wine but I don't miss it at all. ( I suffered a terrible hangover many years go I' thought then it's certainly not worth overdoing it!) Funny it does'nt taste nice now anyway! And it's only excess, unneeded calories Grin

B. Half a lemon with leftover smoothie
L. Pumpernickel, shallot salad and pnut butter dressing.
Sn. HM Dried pea soup.
S. dates\pear\figs

ElfAndSafetyInspector · 09/02/2021 13:35

Yesterday was

B: banana and blueberry smoothie bowl
L: bubble and squeak
D: tempeh chilli and jacket potato
Snack: the very last Christmas chocolate

Today
B: toast and marmite
L: vegan ham and mustard sandwich
D: sausage casserole and brown rice

AlmightyBob · 09/02/2021 14:15

I'm with you @KobaniDaughters ! I did most of dry January and to be honest, before this lockdown, I'd been more or less teetotal for a couple of years. I want to knock it on the head again for a bit.

The white bean and rosemary soup sounds amazing. Also I love the sound of pretty much everything you ate yesterday @PartTimeDomesticGoddess .

My daughter is cooking again tonight and she's making goulash with spicy potatoes. We have all had a lovely day playing in the snow and it will be just the ticket for dinner. Otherwise I've mainly had toast and coffee.

KobaniDaughters · 09/02/2021 15:41

Very impressed at your still having Christmas chocolate around @ElfAndSafetyInspector!

It’s actually not been very hard to not drink so far, I usually do a month off at some point in the year (never January funnily enough) and I don’t really plan it, just have to want to, and I really wanted a break after Christmas/2020. I’m a bit of a drinker and go through phases but last year was ridiculous and I just came into this year not fancying it. I don’t miss it much so far but I doubt this will be long term - I do really love and excellent glass of red wine, I appreciate good local craft IPA, a wee dram of a single malt whisky on a cold winter’s night and gin and tonic basically flows through my veins, but if there’s ever a time to give it a break it’s now when I’m not going out for drinks or dinner or ANYTHING!

It’s DH’s 40th birthday at the end of March and we’re going away with some friends so I’ll have a drink then - especially as I intend to find some very good vegan champagne! I did buy a bottle of amarone for Valentine’s Day thinking if I want a glass then I’ll have one as a treat but it’s nice feeling I have a choice not to if you know what I mean?

OP posts:
KobaniDaughters · 10/02/2021 04:17

B: toast and marmite
L: lentil soup and blueberries
D: instapot lasagne soup, followed by some lush ice cream from the local shop
S: Bombay mix, cashews and a date, dried mango

OP posts:
ppeatfruit · 10/02/2021 08:17

B. soaked dried apricots and 2 figs, apples, ground linseeds, lemon, apricot and apple juice\filtered water.
L. HM leftover pea soup (it was fab it had gone thick like a pudding and I sang peas pudding hot, peas pudding cold....etc.!) With spelt toast.
S. 3 ryvita pnut butter, olive oil with cauliflour, pnut butter, endive.

PartTimeDomesticGoddess · 10/02/2021 14:08

Another one who enjoys a drink here. I have some weeks where I have a few dry days during the week, but that's about it. Although @ppeatfruit has a very good point about the calories!
Have you had much snow @AlmightyBob? We had a very light covering that disappeared by mid morning yesterday. But goulash and spicy potatoes sounds lovely after a day in the snow.
I still have a bit of Christmas chocolate left, but that says far more about the quantity that I had to start with than any kind of self restraint! DH bought me about 10 different packs of chocolate creams in various flavours (not all of which I liked) from Whittaker I think. He also bought a couple of other bars for me. And he ordered so much that they sent him a kilogram (!!) of rose creams, most of which he has eaten. Some of them were lovely and will be ordered again

Yesterday was
B: porridge with raspberries, seeds and golden syrup
L: green soup with bread and naturli (soup was onion, garlic, chilli, ginger, broccoli, peas and courgette cooked in stock and coconut milk then whizzed smooth)
D: burger (Sainsbury's plant burger) in a bun with vegan cheese slice, gherkins, jalapeños and Leon burger sauce. With a large salad, coleslaw and a few chips
S: dates

Sendmetobarbados · 10/02/2021 19:06

I'd love to join in! I'm new to the vegan lifestyle and have really enjoyed my first month. This thread is great for inspiration. Today I ate:

Breakfast: Porridge with banana and blueberries.
Lunch: Homemade carrot and bean soup with wholemeal wrap. Mashed banana and dates.
Dinner: Broccoli and miso rice dish from Dr Michael Greger's cookbook (was yum). Mashed banana (again!) with strawberries.
Snack: Watermelon.

God, I eat a lot of fruit! I blame Freelee the Banana Girl Grin

PartTimeDomesticGoddess · 10/02/2021 21:16

Hello @Sendmetobarbados! Have you tried other things from Dr Gregor's cookery book? Would you recommend it? I've listened to his How Not To Die book

Today has been
B: date/coffee/pb/banana/soya milk smoothie
L: creamy lentils and mash (think deconstructed shepherds pie, mash was 50/50 white and sweet potato)
D: miso mushroom linguine with a handful of spinach wilted in it, with broccoli
S: cherry tomatoes, beetroot

AlmightyBob · 10/02/2021 21:58

We have got loads of snow @PartTimeDomesticGoddess. Maybe about a foot. It stopped snowing today and there were blue skies - everything looked gorgeous. I'm quite glad it's lockdown and I don't have to drive anywhere though.

Today:
B: oats, chopped dates, sprinkle cacao nibs, spoonful peanut butter, half a banana, all mixed up with oatmilk. Trying out a more filliing breakfast.
L: hummus and tomatoes on sourdough toast
D: All-in-one sticky rice with broccoli, squash, ginger and chilli from Green Roasting Tin, made by husband. He hadn't realised it serves two people not four. We had enough ingredients to double everything apart from the coconut milk, so he put in one tin coconut milk, one water, which I think worked out really well. It was delicious.
Snacks: satsuma

KobaniDaughters · 11/02/2021 01:59

@AlmightyBob that sticky rice recipe is on my to try list, glad it worked out!

Loooooong work days this week and not much in the way of breaks to eat so today was a bit weird:
L: cucumber and hearts of palm with bitchin sauce, a quarter of an avocado mashed with Meyer lemon
Afternoon snacks that kind of became a dinner of sorts: peanut butter stuffed pretzels, cup of veg soup, 2 oranges, HM mocha with cashew cream

It’s only 6pm but am working now until 10pm and prob shouldn’t eat that late so unless I’m starving that’s me for today. Very excited about the chilli I just got out of the freezer for tomorrow though, made a double batch last week and it was so good and some perfectly ripe avocados to go with

OP posts:
ppeatfruit · 11/02/2021 07:53

Sendmeto You're very welcome to the thread (It's not mine but everyone's so nice on here I'm sure no one will mind!).

B. leftover apricot smoothie.
L. leftover pea soup and cauliflour.
S. Today we decided to have the Xmas, New Year's my birthday's, 2 of our dcs b\day's\ meals that we missed out on (on our own of course!) So it was chestnut stuffing, parsnips, carrots, brussels, onion gravy for me, organic turkey (that had been frozen since before Xmas) and potatoes added for dh! With fine wines a mouthful for me but I still feel weird today! ) , xmas pudding and custard, vegan for me and cream.

Kintsugi16 · 11/02/2021 08:40

AlmightyBob I will also add that rice dish to my list and obviously need to revisit my green roasting tin book.

Hello @Sendmetobarbados

B: DS’s bread with hummus, tomatoes with fresh basil and avocado oil
L: Leftover jacket potato with Violife epic mature and salad
D: Bolognaisse made with Soy mince and a large glass or red. After lots of trial and error I finally have this recipe sussed.
