That is really interesting Almighty thanks for that Flowers I'll let him know, he takes a sunflower oil Vit.D supplement recommended by the doc. which he does badly with! It seems to stop him losing weight for one thing!

There are soo many people who think we'll all fall over instantly, Strangely it's the opposite Grin Change is very difficult for some.

KobaniDaughters · 03/03/2021 15:45

That IS interesting and might be another reason there’s a push for SoCal residents to take Vit D, everyone is obsessed with coffee here

Ridiculous day at work today so meals are easy comfort food.

B: toast and marmalade
L: hummus & butter bean salad sandwich
Afternoon snacks to hurry work along: far too many mini salty pretzels
D: Fry's chik'en burgers and veg

PartTimeDomesticGoddess · 03/03/2021 22:05

@AlmightyBob that's brilliant info, thank you 😊. I'll look into that, and see if I can dither enough to attract a special offer 😉
@KobaniDaughters I'm definitely pinching that capers idea for the leek and lentil bake!

B: 1.5 slices of wholemeal toast with naturli and marmite
L: smallish portion of macaroni/cauliflower/leek cheese from the freezer, beetroot
D: rose harissa, chickpea and spinach stew with crusty bread and naturli
S: bendicks mint chocolates

Kintsugi16 · 03/03/2021 22:30

B: overnight oats
L: sourdough sandwich with hummus, tomato and Basil
D: GRT cauliflower, chickpea and spring green with the dressing I made for the aubergine dish at the weekend

KobaniDaughters · 03/03/2021 22:49

Alright @Kintsugi16 you have to post the recipe for the dressing now

OP posts:
KobaniDaughters · 04/03/2021 03:24

B: leftover porridge with flax seeds and almond butter
L: leftover lentil and leek bake and a bagel
D: shepherdless pie, frozen mango

This is the full aubergine recipe (annoying amount of scrolling) where the dressing and date molasses are drizzled separately for presentation purposes. I just mixed it all together as shown below (dressing only) and obviously used vegan yoghurt.

marmaladeandme.com/substaging/roasted-aubergine-with-date-molasses-tahini-mint/

Ingredients
2 tablespoons tahini
¼ cup boiling water
½ garlic clove, grated
½ cup Greek yoghurt
3 tablespoons lemon juice
¼ cup extra virgin olive oil
½ teaspoon coarse sea salt
freshly ground black pepper
1 tablespoon date molasses

Instructions
Whisk the tahini and the boiling water together in a jar until thoroughly mixed. Now add the garlic, yoghurt, lemon juice, olive oil, salt and pepper to the jar. Screw on the lid and shake well. (I also added the date molasses)

PartTimeDomesticGoddess · 04/03/2021 07:14

Thank you @Kintsugi16 that sounds lush!

ppeatfruit · 04/03/2021 08:33

Ref. coffee, I stopped my daily freshly ground coffee when I realised I was addicted! (I needed more tablspoons to actually taste it!) I have one good decaff every other week or so and then it tastes lovely Grin.

B. Ground walnut\linseeds\lemon\pear\grape juice\filtered water\soaked dried apricots smoothie
L. Finished my rice dish.
Sn. Slice of my HM gingerbread with tofu yoghurt
S. HM carrot soup with spelt croutons

Coconut80 · 04/03/2021 10:27

B overnight oats with almond milk and date puree
L hm carrot and Lentil soup
D stir fry padded out with peas and borlotti beans
Snack some melon, 8 dates

It's lovely we are all from all over and I'm so inspired by all your menus I aspire to eat like you all xx

Kintsugi16 · 04/03/2021 10:51

We really are spread out aren’t we!

AlmightyBob · 04/03/2021 11:10

Oh god I couldn't give up coffee. I have given up almost everything else, it feels like, but my two morning coffees every day are the hill I will die on. I will just have to make sure I take my vitamins in the afternoon.

Where are you in Skye @Coconut80? I love Skye. There's a vegan-run animal sanctuary there now too, in Dunvegan, in case you didn't know!

Yesterday:
B: huge slab sourdough toast with naturli and tomatoes
D: Spaghetti bolognese made by daughter with garlic bread
S: two satsumas

Today:
B: oats, powdered peanuts, maple syrup, flaxseed, banana, cacao nibs, oat milk
D: freezer food night: tupperware surprise

I was having a look around for white chocolate so I can make @PartTimeDomesticGoddess 's tiramisu - and I came upon some raw cacao butter drops on Amazon, which apparently you can make your own white chocolate with! Has anyone attempted this? I mean, I'll probably just end up buying a bar from the supermarket, but I am intrigued.

LondonTTC · 04/03/2021 11:44

Yesterday:

B: homemade granola with oat milk
L: leftover red lentil dahl from night before (served with rice last night for dinner)
D: Mexican corn/veg/rice bowl

Snacks: Oat milk coffee, a couple of satsumas and 2 Montezuma mint chocolate discs :)

KobaniDaughters · 04/03/2021 14:34

I am not giving up my coffee either - I did a semi cleanse last year and giving up coffee was horrible. I love it, I will make efforts occasionally to cut down but it’s not going anywhere

I’ve used cacao butter to make chocolate cheesecake which was delicious but not actually chocolate

OP posts:
KobaniDaughters · 05/03/2021 03:01

FD here

L: celery soup with tons of herbs
S: kimchi
D: a pre-made frozen Mexican cauliflower rice and veg mix with steamed lentils and spinach, and some of DH’s home made hot sauce on top yum

OP posts:
PartTimeDomesticGoddess · 05/03/2021 09:19

FD for me yesterday too

L: miso broth with broccoli, pak choi and silken tofu
D: roasted cauliflower with spiced veg

ppeatfruit · 05/03/2021 09:36

Coconut We're not anywhere glam like the Pyrenees, we're 2 hours drive inland from La Rochelle in between Poitiers and Tours. Very rural! Richelieu is our nearest glam point , it's an amazing walled medieval town totally unspoiled with people living in the walls and a proper but small moat!

Almighty Yes I've made my own choc. with the cocoa butter drops and also made a moisturiser with it it's lovely!

ref. Giving up coffee , If you choose decaff and eat fruit all day you detox quickly and the headache only lasts one day (best to rest so choose a quiet day to do it!) The anxiety really gets less after you do!

B. Half a grapefruit plus leftover smoothie.
L. large endive, lettuce, shallot, grated carrot salad with mustard, dried basil, olive oil and tamari dressing with pumpernickel \pnut butter.
Sn. Some ginger chox leftover from Xmas Blush
S. Carrot miso soup with tofu yoghurt.

Coconut80 · 05/03/2021 23:43

@AlmightyBob I am Aird Bernisdale right by the Loch. I did read online about the place in Dunvegan but haven't heard if it has gone ahead due to covid etc. I have a sc cabin and a bb room normally.
@ppeatfruit I bet it is still a lovely place to live. It's freezing overnight again tonight how is it with you.

B overnight oats with date puree
L beetroot falafel with spinach
D green roasting tin gado gado
Snacks naked bar, dates

Hope everyone has a fab weekend x

KobaniDaughters · 06/03/2021 07:06

We had our citizenship ceremonies today so celebrated with udon noodles at an outdoor restaurant with DC afterwards - I went off menu and got a delicious vegan udon soup with a ton of veg and tofu, had a small glass of sake as well to celebrate (and broke 2 months of not drinking)

Rest of the day was period-snacking basically on carbs and sugar....

OP posts:
AlmightyBob · 06/03/2021 07:28

@Coconut80 I might message you about your cabin when things open up again! How gorgeous.

I have decided I am going to have a bash at the white chocolate. Whilst doing my research I found these guys - they make all-vegan artisan chocolate, white, dark and milk, seem to have won a ton of awards, and somehow I have never heard of them. At about £8 for a 50g bar, they're not an every day purchase, but I might treat myself for my birthday and I leave the link here in case it is of interest to anyone else www.solkiki.co.uk/

Today would usually be pizza day but I'm not feeling it, so we've agreed to have fajitas instead. I'll be doing refried beans, sliced, marinated and fried portobellos for the filling, roasted peppers and onions, salsa and guac obviously. I'm making the tortillas from a Dan Lepard recipe that I can post if anyone wants to try. Really quick simple dough, no yeast, not too sticky, very easy to work with and roll thinly, cooked in a dry frying pan.

ppeatfruit · 06/03/2021 09:15

Oh Coconut How romantic! We are freezing again ,shutters closed at night ! I wish we lived nearer the Vienne River it's not too far. (though we're up a proper hill so no flooding thank goodness, how are you with it?).

I LOVE Gado Gado, without the egg of course! Oh and Udon noodles Kobani Congrats on you all being citizens? btw. Grin

B. grapefruit, half a new smoothie ( soaked figs) grape juice, 2 apples, ground linseeds, lemon,
L. Large endive salad with pnut butter, added to yesterday's dressing. Spelt toast.
Sn. Yeast spread on chestnut crackers.
S. I defrosted some HM. chestnut stuffing added some peas and stock to make a soup

AlmightyBob · 06/03/2021 10:16

I missed your citizenship news @KobaniDaughters - happy days! I dream of outdoor restaurants. Sounds lovely.

KobaniDaughters · 06/03/2021 15:28

Thanks guys! Yeah the ONLY thing that has been open since March has been outdoor dining (and that closed for 2months in December), this was the first time we went since they reopened. I’d like it if schools could open though.....

I’d LOVE your tortilla recipe @AlmightyBob
