Myself and DD aged 16 are going to try a vegan diet for January. DD is already vegetarian and I was vegetarian for many years although recently not. I really want to try a lighter healthier plant based way of eating, feel blurgh after all the rich food of Christmas, and am really keen to see if it helps my psoriasis. If we like it we may well continue but I signed up for Veganuary to give us a focus. DD2 is a fussy eater and not a big fan of vegetables so that may be tricky, DH is happy to eat vegetarian but vegan may be a step too far for him. Would really welcome any tips for adaptable family meals eg. sausage and mash, I can do vegan sausages for us and meat for them. I'm actually really looking forward to it now!

Not sure if my link will work but tonight we had the pappardelle recipe from these Ottolenghi ones, leaving out the yoghurt. It was delicious, with a real umami hit. I don't mind joining DP and DD with Veganuary when this is on the menu. I expect vegan yoghurt is available?

We had kale and quinoa burgers for tea. Yum. With rare treat oven chips. Double yum.

Planning a cook up this weekend for the week ahead.
Spinach and tofu canneloni - will cook and eat later in the week
Chick pea curry
Lentil soup
Butternut squash and roasted red pepper soup
Lentil shepherds pie
Chickpea flour frittata- apparently these can be reheated so guessing good for lunch or brekkue

Any other ideas?

PerditaNitt - I had that yesterday, it was excellent though at £3 probably pricier than I usually pay. Tried replicating it at home but it didn't come out as nice.

I accidentally fell off the wagon not realising there was milk in my crisps. Milk! What on earth is milk doing in crisps?

Apart from that, I’ve been doing pretty well. Beans on toast for breakfast. Spicy parsnip soup for lunch. Dinner will be chilli and baked sweet potatoes.

Cobbled together dinner yesterday out of bits that needed eating but it turned out lovely, DH has the leftovers for his lunch today: roasted butternut squash and roast radishes, quinoa, black beans all tossed in a chipotle roasted garlic salsa with a shit ton of coriander.

I’m on a shoot today, myself and the leading actress are vegan and they asked for dietary requirements so fingers crossed we get something half edible. It’s low budget but we’re in LA so in fairness they have loads of options. Am packing some nuts just in case!

Anyone in London - you have to go to Nopi for brunch. Best vegan meal yet! Had the scrambled tofu with avocado and sourdough. Absolutely delicious.

Peanut butter crumpets for breakfast and veg soup and salad for tea.

I had tofu this evening - absolutely delicious! I roasted it first then stir fried it with a mountain of veg and a garlic, ginger, chilli, soy and five spice sauce. I had a bowl of Lizzie's granola with oat milk and a Linda McCartney sausage bap for a late breakfast. Lovely!

Had this pie for tea, tweaked it a little as I found the seasonings a little on the sparse side and added some caramelised onion chutney I had leftover from Christmas. Served with broccoli and cabbage, was nice and filling!

We were going to have a treat tonight and have some Ben and Jerry's dairy free ice cream but we couldn't find it in any of our local supermarkets. Is it worth hunting down or is the Alpro ice cream just as good?

little pig, the Ben and Jerry’s ice cream is yum and I would probably buy it at full price (if I found a place to hide it from my husband in the freezer ... maybe inside an empty bag of peas)

I don’t have a massive sweet tooth, but am getting rather jealous of watching my extended family work through the remaining Xmas biscuit boxes, etc, so I treated myself to some lotus biscuits today (the biscoff biscuits and spread are both vegan) and am currently enjoying with a cup of tea. Party rings are vegan too, if anyone fancies going retro.

I have just made and eaten scrambled tofu for the first time. It was lush! I used this recipe swapping the kale for cavelo nero and onion for spring onions as I have part of a bunch looking a bit sad in the salad drawer.

DP has made Jamie Oliver's vegan shepherd's pie today. Looks good, but haven't tried it yet. The mash is topped with a crunchy herbed crumb, which looks nice.

This was my scrambled tofu from this morning! I added cumin, turmeric, paprika, onions (I cheat and keep a bag of ready chopped onions in the freezer), mushrooms and garlic. Not bad at all. DH is out at football all day and I’ve promised the kids pizza. This will be a challenge! The only thing I’m really missing though is halloumi. I don’t even eat it that often, but have a major craving for it!

All of the big supermarkets closed before I could get to them so no tofu for a scramble tonight.

Today's menu:

Porridge with water and golden syrup
Veg sushi from wasabi
Beans on toast with hummus and salad

Tonight's quick tea, pasta with a chargrilled sauce in a spicy tomatoes sauce, served with a vegan-friendly garlic and parsley ciabatta.

I'm having roast dinner! Fry's country soy and quinoa loaf, roast potatoes and parsnips, sprouts, broccoli, carrots, peas, stuffing and onion gravy.

I had a chocolate oat milk, banana and flaxseed smoothie this morning. I was intending to use plain oat milk but shopping order arrived and I needed the space in the fridge for a fresh carton of choc milk! It was lovely. Then I had scrambled tofu on toast which has kept me feeling full all day!

I had vegetable Balti for dinner, made with onion, sweet potato, chick peas, tinned tomatoes, balti paste and spinach. It was really nice, but I'll use less balti paste next time as it was a bit hot.

I've not tried tofu yet but will add some to next weeks shop.

Chocolate porridge today- my usual weekend treat. Oat milk is lush in porridge.
Lunch I managed to track down some sheese. And dinners shopping lentil veggie shepherds pie, with vegan gingercake and booja booja ice cream for afters.

The booja is lush but about the same £ per ounce as the crown jewels.

I bought loads of nuts today and realised I am spending way more than usual. I plan now to use up everything I have in my bulging store cupboard and only buy veg and plant milk until it's all go be.
