Myself and DD aged 16 are going to try a vegan diet for January. DD is already vegetarian and I was vegetarian for many years although recently not. I really want to try a lighter healthier plant based way of eating, feel blurgh after all the rich food of Christmas, and am really keen to see if it helps my psoriasis. If we like it we may well continue but I signed up for Veganuary to give us a focus. DD2 is a fussy eater and not a big fan of vegetables so that may be tricky, DH is happy to eat vegetarian but vegan may be a step too far for him. Would really welcome any tips for adaptable family meals eg. sausage and mash, I can do vegan sausages for us and meat for them. I'm actually really looking forward to it now!

I am having leftover mushroom pasta for lunch then cashew nut stir fry for tea with loads of veg mmmm

We are doing it, we are already egg and dairy free so next step not to difficult. I already cook regular vegan meals. Plant powered families by Dreena Burton is good and child friendly

Pret has helped me out today; I had their açai, berry and almond butter breakfast pot with a soya latte - kept me full for ages and was absolutely gorgeous. Lunch was their hummus salad wrap with some crisps (well...even vegans need some junk food). Really impressed with their vegan options - their coconut and quinoa porridge in the morning is also yum.

Does anyone else feel quite bloated? I am feeling very bloated today, quite uncomfortable to be honest!

No breakfast today and lunch was falafel and salad. No idea what's for tea, if I'm still feeling bloated, probably something light if anything at all.

Today's plan:

Breakfast: almond butter on toast with banana

Lunch: roasted veg and butter bean soup with avocado and beetroot salad

Dinner: either risotto if I leave work on time or beans on toast with hummus if I don't!!

Have a work lunch tomorrow at an Italian restaurant with seemingly no vegan options!!! I think pasta and pesto might be ok but will depend if egg in pasta and Parmesan in pesto

That Yum app is brilliant.
I also made this soup today. It was so good I made another batch to store. I swapped the spring onions for a small red onion and skipped the cheese.
It was so thick and tasty, and very filling :)

Loving all the inspiration, have just got back on the vegan train. Meant to be trying to shift the Christmas weight gain, but having too much fun cooking! Tonight we're having Texan bbq beans with nachos, sweetcorn, salsa, lettuce, guacamole and cashew queso. I had two linda McCartney sausages for lunch today inside a bake it yourself baguette with ketchup. It was gorgeous and a treat. I was so full by the end of it, but have not been snacking so that's a positive.

I'm going to have a go at making that soup! Thanks for posting the recipe.

I had alpro yoghurt and fruit for breakfast.

For lunch I had hummus with crackers and cucumber and snacked on crisps

For dinner, jacket potato with Fry's schnitzel and asparagus. I wanted something creamy with the jacket potato as usually would have cheese so I made a white sauce using soya milk and olive oil instead of cows milk and butter, and put basil, mushrooms and spinach in it. Am now very full but have definitely lost some weight already as clothes feel looser.

I had cashew butter on toast and a small bowl of cereal with soy milk for breakfast.
Pasta with mushroom, courgette, garlic, pinenuts and olive oil for tea
Have snacked on raspberries and hummus crisps and a Freefrom Tiffin thing...
DH is doing a veggie curry for tea, I think.

Stupidly forgot food all day so I was extra pleased with myself for making and freezing a lifetime supply of black bean chili and rice, all in generous individual portions like little nakey burritos. Might prep some overnight oats in case I forget again tomorrow.

I'm not doing Veganuary but my DP is, and our 9 year old DD has decided to join him, so I'm going to lurk on here for ideas. I'm a bit worried about DD getting enough protein and calories, given that she's very tall, skinny, and growing like the clappers.

I didn't realise how much of the DC's food I "try" until it is forbidden, no wonder I am so chubby.

I wasn't going to bother with breakfast so didn't take anything to work but was ravenous when I arrived so had a porridge and golden syrup sachet with cashew milk.

Lunch was quinoa and beans (Iceland) with a bit of vegan cheese melted in.

Dinner was quorn nuggets, few baked beans, a couple of oven chips and a bit of what I have jusy made for lunch tomorrow: stir fry with tofu, broccoli, cauliflower, red pepper, bok choi and spinach.

Tonight I have indulged in a little coconut yoghurt (Coyo), raspberries and dark chocolate. I'm a happy veganuarian today.

I’m going for lunch at DH’s work, they always have a vegan option and if it isn’t appetizingthe salad bar is huge

Defrosted a lentil soup for dinner - but that cucumber and broccoli one sounds great, def going to give it a go

My appetite is still not 100% after being ill so didn't really fancy anything throughout the day. I did have a soy milk latte early afternoon. Then I got really hungry early evening so I've just scoffed Spicy veg and bean stew with wholegrain rice, guacamole and a sprinkle of nutritional yeast. It was delicious!

DH’s work vegan option was amazing, portobello mushrooms in a green zesty sauce with giant cous cous and tahini and date dressed roasted butternut squash

Absolutely delicious isn't it Magpie? I would usually have a handful of grated cheese on top of something like bean chilli - the yeast gave a lovely nutty, savoury flavour.

Today I've had a smoothie for breakfast. Salad for lunch with avocado. I got home really late so just had cinnamon toast and a banana for dinner.

I've not experienced any bloating, the opposite in fact. My tummy feels much flatter. So far, so good!
