Awful example of a vegan

I've been vegan over 2 yrs..vegi for 20..ive put so much weight on going vegan..I live of crisps bread and vegan chesse..I feel utterly crap,I've no energy..my family eat well.but I skip meals so I can eat toast..I eat the same meal for weeks and weeks then never again....when I went vegan I ate jacket potato vegan chesse and salad every night for 6 months.then I moved on to vegan fishfinger sandwich every night for months,now it's toast with vegan cheese lunch and dinner..I'm 2 stone heavier than when I was vegi...I've a budget to stick to so I can't afford blueberries ,mango,salad every day.ive got in to the most awful rut and I can't get out of it..and I feel ill actually..I have to find the willpower to change,its deserting me at the moment,due to my life being quite stressful...if you have any ideas I would be glad to hear them😥

What were your reasons for going vegan?
Maybe look at the Cooking on a Bootstrap website, it has recipes and ideas for eating cheaply and lots are vegan.

You've got to start getting more protein. Carbs aren't your friend.

So there are these things called lentils, they are basically a prerequisite to vegabisn.

It's good that you've recognized your diet is not great at the moment. Now you can work on gradually changing it.

If you are putting on weight, maybe you are not eating enough protein?

Thanks for caring enough to be vegan. I don't eat meat or dairy, but I do have fish and eggs. Good luck!

I gradually went vegan,I've never eaten eggs, I've always had soya milk,never cows milk.my diet was limited anyway,so all I was eating was catherderal city chesse..then I discovered vegan chesse and utterly love it..I once got a cappuccino accidentally made with cows milk,and very nearly threw up on the spot after a mouthful.....I can't go back to being vegi,as the thought of eating something from an animal turns my stomach

I think you need to start with a basic menu and work up from there. Rome wasn't built in a day.

So, in your basic, budget-conscious repertoire you might have:

Jacket potato and baked beans, with a little grated vegan cheese. Bake a tomato or two with the spud, or use tinned.

Mushrooms and rice, stuffed into capsicum peppers. Again, a tomato or two is good with this. Add spices, mixed herbs, seasoning to taste.

Roast vegetables. Just chop them up and put them in the oven. Anything seasonal and cheap. Eat with cheap noodles and soy sauce or similar.

Lentil chilli or curry or soup - so many ways to add to this, and eat with wholemeal bread. Pea soup is also very filling.

I am being utterly honest here,you people don't know me,so I'm not having to lie and say yes I ate noodles with the kids for tea.or yes I ate the vegetables and rice I fed the children..no I didn't...I ate toast ,for approximately 7 months now for lunch and dinner

It sounds as though you have food issues unrelated to the vegan matter. Would you agree?

How about you add a new food at a time, every day, to widen your diet?

What do you already like? List everything. We can suggest some easy things to add to the list.

Cooking on a bootstrap website is brilliant. Very simple instructions, very cheap. Mainly vegan.

How do you change when you don't really want to,but you know deep down you must..I don't like the sound of anything anyone has suggested ,except a jacket potato,I could go back to that again...I can't seem to stop having having the same meal for months...does anyone else do this?

Probably some supplements due to lack of fruit and veg

You can get vegan quorn products that you can just put in the oven for a bit and eat. Really simple things, you don't need to be able to cook. Quorn and salad is nicer than toast and much better for you. (Not all quorn is vegan, the front of the packaging says it in big letters if it is).

But given you weren't really eating much dairy pre going vegan - was your diet the same when you were vegetarian -what did you eat then that you could still eat now?

I don't think ,if I'm honest I was any better / varied being vegi..I sort of drifted in to veganism as I cut out foods that made me feel sick...eggs ,milk etc.kids and dh have lovely meals ,I make vegan casserole,shepards pie ,mince pie ,noodles tofu ,rice and vegan Quorn...but I just avoid it and eat toast.....I don't get why people say carbs are bad all the time,as a vegi yrs ago doing(trying to do) slimming world,so many carbs were free foods...yet now now everyone says carbs are bad..it's all confusing

I agree that it might be that being vegan might be a red herring and your food issues are more inherent than that?

It's all well and good us posting meal ideas here for you, but clearly you have a grasp of English and how to use the internet so you could look up all the recipes you wanted if you felt motivated to. So perhaps you need to look a little deeper?

Why is it you don't want to change? What is driving you to eat the same meal over and over again?
