Mince is a cheap cut therefore does benefit from cooking longer. We never used to but you can't beat bolognese done in the slow cooker.

for eg, dd1 had to go for her eye appointment today so dh had the day off to take us there and back

while we were out, he prepped all the onions, sorted spices out and all other stuff

set off a huge pan of chilli

another huge pan of bolog

I bagged them up when cool, we now have a freezer full of meals at the ready

you just need to be organised imo

Urgh - the whole thing made me so cross! thank god I had mumsnet for distraction. What is the POINT?? Easy bolognese is brown mince and add sauce from jar, don't need an effing TV programme to tell anyone that. As you could see from the fact they had to pad it out with Tesco and Christianity peddling.

there was an article about this new book in the times a few days ago, aldo zilli cooked the recipes and they had a selection of foodie type people try it. zilli said half the stuff took longer than if you cooked it from scratch, they worked out it all cost loads more than just buying fresh ingredients and giles coren (one of the tasters) refused to even put some of it in his mouth!
I think delias people might have thought this would be good competition for nigellas book, think they got it a bit wrong!

That's what makes it so annoying - it's nonsensical. It looks like it takes ages and yet her target audience aren't supposed to have time to grate their own cheese?? or bread? and the packaging aspect of it is making me . Why not just buy a ready meal?

i actually prefer my bolognese cooked for a few hours the night before then reheated the next day. i think all mince (i do buy good quality mince) benefits from extra gentle cooking.

I don't get the potato bread thing. I suspect there isn't a single day I couldn't find a potato or two in the house.

But Roquefort and fresh sage - they aren't store cupboard ingredients. Methinks she's missing the point!

The thing is that the audience for food programmes has grown up. The general public who actually watch cookery shows are now much more sophisticated than they were 10 yrs ago. If they want fast food they either buy a ready meal or knock up some pasta. If they want to cook, they want to do it properly because they have been taught for the past ten years that cooking is relaxing and satisfying, a good way to wind down from the pressures of modern life.
Delia has missed the mark here for the general masses, the only people who will really be interested in her recipes are the lazy and the older generation who are still impressed with food processing.

I haven't watched it, as I'm not a fan of Delia (or cooking shows in general) but surely it would be more expensive to buy tinned mince, jar of sauce etc. Especially when you consider you can get a tin of tomatoes for about 24p, a tube of puree for about the same? And the thouhgt of tinned mince makes me retch!

While we're on this. Can anyone recommend a cookery book for ideas on cheap, wholesome, family food. I usually turn to the good housekeeping book I have. Who else is good?

I remember an early 80s tv cooke shirley goode doing a programme on ecconomical cooking for career girls, it was a heaven of smocking and pin tucks and harmony hairspray on the tv set, and now she has a blogspot
