Marcus my dear, there is a reason why you haven’t had ice cream with caviar in it. Just as there is a reason you don’t put lard ( that is what beef fat is after all) in a sticky toffee sauce. You run restaurants, you know what works and what people like to eat and will pay for. And it isn’t lard and fish eggs in pudding.

I wish they were cooking for critics, I would love to hear Jays take on Johnno ruining a perfectly good pudding.

Baumkuchen.....they're weirdly mad for that in Japan. They have whole display windows in stores where you can see them making it, with crowds of people standing outside, fascinated. They do it on a circular metal rod like a spit roast, dozens of thin layers.

I still have a bad feeling about Santosh here.
