Saiphin Moore, the founder of Rosa's Thai, is here to answer Mumsnetter’s questions on everything from encouraging adventurous eaters and introducing new flavours, to cooking quick midweek meals, getting children involved in the kitchen and creating enjoyable family mealtimes.

About Saiphin:
One of the UK's most-loved Thai chefs, Saiphin Moore is the co-founder of Rosa's Thai and mum of four. She grew up on a vegetable farm in the mountains of Khao Kho, northern Thailand, learning to cook alongside her mother and aunts and opening her first noodle shop aged just 14. That love of good food now lives on through Rosa's Thai and Lao Café. Mum of four, entrepreneur and author of two cookbooks, Saiphin stays true to the family-inspired flavours that started it all.

When you were growing up, were children expected to eat what the family ate, or were meals adapted for them? Has that influenced how you fed your own family?

Yes, absolutely @TheAmusedLemur. In Khao Kho, we all ate the same thing, sitting together on the floor. There was no kids’ menu. If it was too spicy for me, my mum would give me more rice, or a little bowl of soup to dip. That taught me to be adventurous but also that food is togetherness. I did the same with my own family - same food, but I always have plain rice, cucumber, and a little non-spicy portion aside so no one feels left out.

Do you have any recommendations for tasty Thai dishes that can be batch cooked?

Hi @Theimpossiblegirl

Curries are perfect for batch cooking. Massaman Curry, Panang Curry, Green Curry - but my tip is freeze the paste, not the coconut milk. Thai Basil Mince base, Slow-cooked Pork Cheeks in Soy (Khai Palo) also freeze well and are better the next day.

Oh good question @BezandMani- there’s more to life than mango sticky rice! Thai people really have a sweet tooth so there’s loads more desserts to explore. At Rosa’s we serve an ice cream bun - it’s a soft, sweet bun filled with sticky rice, ice cream and peanuts. It’s a street food classic and very nostalgic. We also love fried rotis stuffed with sweet fillings.

To cook at home try a simple “Kluay Buat Chee” - Bananas in Warm Coconut Milk. It’s warm, comforting and slightly salty-sweet - yum

Thanks for your question @MayCottage . Even my kids who are good eaters went through these phases. My tips are:

  • Add one new thing at a time, alongside something “safe”. If they love plain rice and chicken, add just a tiny pot of peanut sauce on the side for dipping. Let them touch and smell first.
  • Mild starters: Start with Chicken Satay, Pad See Ew, Coconut Rice, Corn Fritters and maybe a Clear Soup. All gentle and slightly sweet, not fishy or spicy.
