Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.

Mince and mushroom stroganoff, just like my mom made it. She used sour cream, as a vegan I use frozen vegan mince and soy yogurt. Still one of my favourite meals.

My DC LOVES mushrooms, the fancy field mushrooms especially.

We all just love mushrooms - fried alone, or in a stir-fry, pie, casserole, pasta sauce etc.

I love mushroom risotto using white wine, stock, leeks, and finishing with fresh parsley and a handful of cheese. Also baked portobellos stuffed with garlic/cheese/breadcrumbs or blue cheese. I love a halloumi burger with a portobello underneath and a curry relish. I love a stroganoff with brandy and cream. Fungi on a pizza, added to curries to give bulk. Mushrooms are so versatile. My child loves the flavour and will eat a sauce or soup but doesn't like the texture. We are working on it, he has to 'man v food' it and try them every time we have them!

Mushrooms with bacon and cheese in a white sauce over pasta. Otherwise I love them raw in salads.

I put mushrooms in everything! They go on all cooked breakfasts, in bolognaise, chilli, with chicken in a pie.
I just buy the standard white mushrooms, nothing fancy.
DC both love them too, DD eats them raw and pinches them off the chopping board. But she does that to anything I chop. She ate raw garlic recently and regretted it a little bit.

I use them because they’re awesome. They’re cheap and bulk out a big pot of dinner. I always try to shovel lots of veg in my cooking as we’re rubbish at eating enough fruit.

Love mushrooms! A staple as part of a big fry up. Large mushrooms stuffed with peppers and topped with cheddar. But our favourite has to be button mushrooms on ciabatta.

Melt the butter, add the garlic and cook for 1 minute. Add the mushrooms and cook for 4–5 minutes.Stir in 1 tbsp of whole grain mustard. Reduce the heat and add a dash of Worcestershire sauce and seasoning. Cook for a further 1 minute, then remove the pan from the heat. Put the mushrooms over the ciabatta . Scatter on some Parmesan shaving. Delicious

Creamy Truffle and Mushroom Rigatoni is a recipe I first discovered as part of a Hello Fresh box. It's hands down the best way to use up mushrooms imo. The truffle zest is a tricky ingredient to find but it's available online and well worth the effort to track it down.

As vegetarians, we love all kinds of mushrooms & use them in all kinds of ways.

This is a family favourite & DDs favourite comfort food.

Mushroom Gorgonzola Spaghetti

Feeds about 4...
Approx 400g of mushrooms of your choice. Chopped/sliced not too finely
We find a mix of button & chestnut mushrooms works best, but whatever you have.
1 pack of Gorgonzola Cheese
Heaped spoonful of Cornflour
400ml Milk (approx)
Butter
2 tsp of dark Soy sauce
pepper
Spinach (or frozen peas if you don't like spinach)
Splash of truffle oil (optional)

Cook spaghetti & save cooking water

Sauté mushrooms in butter & pepper

In a blender blitz together...
Gorgonzola
Milk
Cornflour
Soy sauce
Knob of butter.

Pour sauce over the mushrooms, add spinach/peas & stir whilst sauce thickens. Add pasta water & stir through if too thick.

Add sauce to the spaghetti, stir through & serve

We seem to add mushrooms to anything and everything. It started as a cheap and easy way to bulk up meat in a bolagnase and now they make their way into everything. DP isn't the best at eating vegetables so if I can get him to eat fungi, i'll add it to anything. I have a soft spot for a good mushroom curry though.

We favour button mushrooms. This is only because DS doesn't like the brown bits in larger mushrooms for some reason but he will eat button mushrooms like there is no tomorrow. We usually pick up at least 2/3 packs in the weekly shop.

We used to have to hide mushrooms when DS was a little bit younger but more recently he has taken to eating them and asking for them specifically in dishes like omelettes.

I love the taste of mushrooms so that's why I've always had them. We introduced them to DS because he was a picky eater and they seemed a great way to get nutrients into him. I think they're just a brilliant all rounder.

Mushroom bruschetta
Whatever mushrooms you have sautéed in a little butter, add a pinch of salt and pepper. Cook for a few mins add a dash of balsamic and a glug of cream, remove from heat when cream makes a nice coating (ie not too runny) Toast a slice of sourdough bread brush with olive oil and a garlic clove and pop under grill for a min. Spoon mushroom mix over toast and add a bit of chopped parsley. Tuck in yummmm

Since I stopped eating meat, mushrooms have become an absolute must for me. Filling and nutritious they give that meaty-hit when I need it without eating meat of course. I have a few fave recipes. The kids like some of them too but not all. One simple one that they do like is mushroom pakora made with button mushrooms dipped in batter and fried. My own fave recipes include mushroom and kale pizza, mushroom stroganoff, and fried mushrooms, garlic and peas on sourdough toast with a little drizzle of olive oil and balsamic vinegar. If you have nay spare spinach or kale or pak choi or any greens in fact - that can be thrown in too that also tastes good with the mushrooms on sourdough. Occassionally my husband makes a delicious mushroom soup from those packs of mixed exotic mushrooms and that tastes amazing!

The older ones love them but the youngest won’t eat them

Taste, nutrients and they are healthy for us.

Creamy mushroom pasta made with blended tofu rather than cream as it's less heavy. We use fresh chestnut and white button mushrooms along Wouk dried porcini mushrooms - it's dreamy!

Mushroom fried rice for me with curry sauce. Sometimes with chicken and/or other veg but oh yum, those dry fried mushrooms & that egg fried time. So simple, so good!

I make a very tasty mushroom soup, which uses a roux and vegetable stock, but gives a silky creamy texture to the soup.

A favourite starter is oyster mushrooms briefly fried with cubes of black pudding and chopped garlic, served on a bed of bitter leaves, or rounds of toast for something more substantial.

If you can find tiny young closed button mushrooms (Paris mushrooms) thinly slice them, dress with a little 🍋 lemon juice and plenty of plain yogurt, add garlic, paprika, pepper chives, spring onions etc to taste, for a quick side salad, lovely with cold chicken .

Mushrooms à la Greque is a great summer dish, make a rich tomato sauce including onions & garlic, and when almost ready add a generous amount of button mushrooms, simmer gently till cooked but not mushy. Best eaten at room temperature, good with crusty bread for lunch or as an accompaniment to cold roast pork or charcuterie.

Best of all, steaks cut from a puffball mushroom, gently fried in butter till golden.

VEGAN DISH

Put gnocchi in pan and fry.

Fry onion, add garlic, add mushrooms. Leave til
Mushrooms are nice and soft. Add Alpro single soya and veggie stock.

Add spinach at the end.

Put together. Yuuuum

I eat mushrooms because of the taste, but knowing they are nutritious is a bonus. My husband and child don't like them unfortunately. Both have eaten them without realising on occasion and liked the meal. My child likes them in chicken and mushroom slices and pies if I don't say what they are.

My favourite meals with mushrooms are mushroom stroganoff, in a stir-fry or with Japanese style noodle broth, with a fry up or with scrambled eggs. Fried with garlic. On pizza. Smile

I don't really have a favourite. Tend to buy button, chestnut or closed cup at supermarkets.

The whole family (right down to and including the dog!) love mushrooms. We buy British closed-cup mushrooms for salads, available in most supermarkets and street markets, but for our favorite mushroom recipe a mix of open-cup, closed-cup, field/brown/white and occasionally shitake mushrooms is best. Mushroom stroganoff I call it. A whole load of mushrooms (for a meal for four I'd suggest 4 medium punnets) thinishly sliced, four white onions, garlic (we like lots) shaved, into a large pan with about half a pint of water and a vegetable stock cube and loads of ground black pepper and brought to a slow boil, or, better, left that way in the slow-cooker, garnish with finely chopped parsely after cooking for a few hours. If you have any Mushroom Ketchup (which I've only ever found in Sainsbursy) to throw in - a couple of tbsp - so much the better. Serve with some rice or noodles and for us a shared bowl of sale. Lush and beautiful.

I love the woody, rich taste of wild mushrooms, as the deep nutty ness of chestnut mushrooms but I will eat pretty much any type of mushroom going!

Mushrooms and garlic on toast, creamy garlic mushrooms, mushroom risotto, mushroom pie with a shortcrust lid, mushroom soup... so many options. My toddler isn't a fan (yet) but I'm working on her!

Pancetta & Mushroom Pasta Pancetta, garlic & chestnut mushrooms browned in a pan with butter, add double cream, add to cooked pasta - gorgeous and quick

Big fans of chestnut mushrooms

Eldest will eat them as long as he doesn't spot them 🙄, youngest will eat them no problems

Mushroom sauce:

Fry finely chopped mixture of button and chestnut mushrooms (big handful) in butter and olive oil with small finely chopped onion, stir in 1 dessert spoon flour, blend in 1/2 pint chicken or vegetable stock, cook until it thickens then add sour cream. Adjust consistency with milk if required. Very good with chicken.

We are a vegan family and big on mushrooms. We often use them as a mince substitute in bolognese or chili. Chestnut mushrooms I tend to buy the most. My 5 year old loves them and eats them raw as a snack. They are also his favourite pizza topping. My 2 year old isn't as keen so I often blend them into sauces for him

Mushroom Stroganoff is an absolute classic - love it! Great veggie option & pretty cheap to make - fry up some diced onion & garlic, add the mushrooms (I like a mixture of button, closed cup & chestnut) until cooked, add a spoon of smoked paprika & a dollop of mustard (to taste!) cover with veg stock & let it simmer away - add some double cream to thicken just before serving - delish!
Our son will even eat this one, as long as I don't put too much mustard in!
As a family, we love mushroom fried in butter with a big breakfast - just gorgeous.
We haven't been brave enough to go & pick our own but maybe if we do our research we might try it some time!

Pasta sauce - mushrooms fried in butter and garlic, add sour cream, salt, pepper and flat leaf parsley.
Also big mushrooms, turn upside down, stalks removed, filled with cream cheese and baked in the oven with breadcrumbs on top.
