Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.
Mushrooms are an affordable, easily accessible and versatile ingredient to use in cooking across breakfast, lunch and dinner. However, one in four of us aren’t getting our daily recommended vitamin intake.*

We love mushrooms! As a vegetarian in a meat eating household they are a great way to add a 'meaty' texture and get everyone eating the same meal. Our favourite is creamy mushroom pasta (tagliatelle is the best). It's quick and easy but sooo tasty! Chestnut mushrooms give it a great flavour and I often add in a few dried porcini ones as well. They're great to keep in the store cupboard. Finished with a generous dusting of Parmesan, there's rarely leftovers.
My 5 year old also loves putting them on her pita bread pizzas. She loves making her own and getting to put the toppings on herself.

I make my own mushroom burgers. Blend raw mushrooms to a pulp (almost smooth), add a very finely chopped onion and a cup of oats. Add garlic, salt and black pepper, then half a cup of grated cheese, cheddar or Parmesan. Leave for half an hour for the oats to soak up the moisture, then shape into patties. Fry in a pan until brown then whack in the oven for 15 mins to cook through. Serve in a bun with cheese, onion, gherkins, lettuce and beef tomatoes. Amazing veggie burgers for half the price of shop brought ones and all thanks to the humble mushroom!!!

Start with a duxelles with leeks and garlic, then add creme fraiche to add to baked potatoes or pasta; brandy and cream for a sauce for pork chops or chicken breasts; egg and cheese and a ready-made tart base for an instant quiche for an unexpectedly vegetarian visitor. It’s a real Swiss Army food.

I eat it because I like the taste, it's healthy and I need to reduce my carb intake and mushrooms are a great choice.
I like it breaded, sauteed with garlic then added to scrambled eggs or cooked with cream, garlic, onion. I eat it often however the kids are no fans (yet).

We always have mushrooms in the fridge.
I recently made macaroni cheese and didn’t have any tomatoes to put on top as I usually do, so I fried off some mushrooms in garlic and put them on top instead. Delicious!!

Mushroom with onion and cream and tarragon

This can be served as an omelette filling, or with a baked potato or with pasta.

Punnet of mushrooms chopped small
Small onion diced
Fry onion in butter till soft, add mushrooms and a shake of salt ad pepper, fry til water gone, add two tablespoons of cream more if making a pasta sauce, sprinkling of tarragon.

Delish!

We adore mushrooms here - creamy garlicky mushrooms in pasta is devoured in minutes. I don't really know my shrooms beyond the white ones I buy loose in the supermarket, chestnut mushrooms or portabello. My 9 year old likes them sliced and raw'

Ha! I've just made a mushroom omelette! But my favourite mushroom meal is reserved for mushrooms pan fried with cream and butter, poured over a steaming hot oven bakes jacket potatoe! Never manage to make it as I always forget to put a jacket potatoe in 2 hours before I actually want to eat it - but it's a meal that my mum used to cook for me when I was young and I love it!

I love mushrooms my favourite and easy recipe for the whole family would be mushrooms with pasta simple and delicious fry 1 chopped onion on 1 tbs of oil , add chopped mushrooms any kind , salt , pepper , 250 gr of spinach leave it to cook for 2-3 minutes keep stirring after add 100 mls of double cream you will end up with mushroom sauce add freshly chopped parsley mix with freshly cooked pasta enjoy

I take a portobello mushroom and stuff it with cream cheese mixed with chopped sun-dried tomatoes and pine nuts... wrapped in a sheet of parma ham and baked. I'd happily have that as a main course with a salad.

We chop up mushrooms and mix in spaghetti Bolognese for added veg or I do love them fried in butter for a naughty breakfast treat! Stuffed mushrooms with cream cheese too ❤️

Love love love mushrooms and loving all the ideas on this thread. I’m vegan and cook mostly vegan for the family so we eat them a lot. DD likes them raw but not cooked but she has no idea if I cut them up small and pop them in veggie shepherds pie

The rest of us love mushroom risotto, lions mane mushroom steaks, oyster mushrooms in black bean sauce and mushroom bourguignon is our absolute fav cooked for ages in red wine and caramelised onions over tons of mashed potato

There’s a mushroom man at our local farmers market so I constantly get tips from him how to best cook the Different varieties. So glad DS loves them as much as we do!

Mushrooms are my favourite food and go with or in everything. My DH and DD pick them out if seen but I still include them everywhere. Recently discovered steaming them.

Barbecued Garlic Mushrooms are a speciality of mine... Fill flat mushrooms with garlic and parsley butter (with a little Parmesan and pepper mashed in) and barbecue until the butter has melted through and infused the 'shrooms with its tasty goodness.

My absolute favourite treat is a cold, leftover one on hot toast for breakfast the following morning!

It's the easiest recipe in the world : chopped mushrooms with garlic in a bit of butter on toast.

It doesn't take a lot to make mushrooms taste amazing. (Says she who eats them raw out of the box)

None of us are mushroom fans, but I've been told I make an amazing mushroom risotto, and I've stuffed large mushrooms before for family members who don't like stuffed peppers

  • can't beat a traditional beef and ale stew and dumplings with onions, mushrooms, and a little bacon. Definitely a favourite in our house.
  • we usually just buy the standard white or chestnut mushrooms from Tesco or Sainsbury's
  • my little ones both like mushrooms and pinch raw ones to snack on when I'm preparing them for dinner
  • I'm not a huge fan myself but I've always included them as they are a part of so many traditional recipes that my family enjoy

We love a homemade mushroom stroganoff with brandy! Absolutely delicious with pasta or rice. Also, pasta el fredo with mushrooms is a winner! Yum yum.

A couple of years ago whilst my DH was undergoing radical surgery for cancer and his survival uncertain, our new neighbour asked if she could take down our old fence and put up a new one. I was very distracted at the time and said go ahead. She put up a new fence, but it is see through and we were private before. It is made of pallet wood and looks terrible and we were left with a trench a foot wide and a foot deep on our side. We have fixed this now but it has cost us £500 or so and my (thankfully fully fit) DH a great deal of work. I will never say yes again to a neighbour without understanding all the details of the issue.

Big mushroom stuffed with yoghurt and zaatar
