Slow cooker chilli con carne here! Easy to pop in before we leave for work and ready whenever we’re going to eat on an evening, with a portion always left over for one of us to take for lunch the next day!

Gill81uk · 14/01/2018 20:48

Our staples are spaghetti bolognaise, chilli, chinese chicken curry. I've added a new twist to the mince dishes by subbing half the mince with lentils. The kids don't even notice! It gets an extra one of their five a day into them (and us!), and is much cheaper too.

Carbonara: pancetta , eggs , Parmesan added to cooked fusilli pasta. Cheap quick meal eaten at least once a week.

Gnocchi Sorrentina: tomato sauce with mozzarella . This is a great 5 minute meal which the girls love to time me on. Add chilli flakes for a bit of extra spice as the children don't enjoy spicy food .

Salmon fillets / veg rice or in pasta

Sunday roast a must : 5 veg + roast pots & Yorkshire puds.

Tiramisu adapted to be very chocolatey , change the coffee to chocolate (galaxy hot chocolate ) and dip fingers and drizzle extra chocolate sauce and sprinkle crumbled flake in between layers .

Sweet Eggy bread for breakfast : add vanilla essence to eggs and a little sugar. Once cooked dust with icing sugar. Apparently smells and tastes like doughnuts

We have quite a few fav dinners but this one is by far the most popular including the DC friends:
Roasting dish fill with
Red/green and yellow pepper chopped roughly
Min 6 crushed garlic cloves
2 chopped onions
1 beef stock cube
1 pack of passata
2 cans of tomatoed
300 ml watee
Lots of dried oregano, basil and thyme

Cover with foil. 30 min on 220c. Then remove foil. Whizz till smooth. Return to oven ( reduce heat to 175)and add mince ( i usually add 500gr). Serve when cooked through with pasta.

Sometimes i add any veg left that needs eating. Left over get mixed poured into an ovenproof dish and covered with cheese ( next day or freeze for another day)

Bon apetite ( and all ingredients are bought at Lidl)

Our staples are chicken wraps or fajitas depending on the type of chicken being used. With cheese and mayonnaise they are a definite clean plate meal 😁😁

Showergel1 · 14/01/2018 22:45

A staple we love is 'sausage mess'
Grill the sausages then add to a pan of whatever you like. The best is with potatoes or pasta, bbq beans (made with beans and bbq sauce) and mixed veg.

Other favourites
Cornbeefhash with beetroot if we're feeling fancy
Butternut squash and chickpea curry
Chilli made with quorn
Slow coked pork loin steaks with cider

There are very few meals we all enjoy as much as 'taco' night. Lean mince divided into two - half made into a spicy chilli with peppers, fresh chilli, sometimes mushrooms. Other half a bolognese with carrots. Served with guacamole, grated cheese, cucumber ribbons, grated carrot. Salsa, sour cream etc. Kids eat it in taco shells or wraps. Dp and I have it in a bowl over salad leaves. Leftover chilli on jacket spuds a few days later. Lovely.

MerryMarigold · 14/01/2018 23:13

Our staples are spag bol made with a blended up veg sauce (onion, garlic, celery, pepper, mushroom, tinned tomato, tom puree, aubergine). Chilli con carne with same sauce but different seasoning kidney beans. Served with tortilla chips and rice. Also sausages, jackets and baked beans. Finally, battered fish pieces (frozen), chips and peas/ sweetcorn (all frozen) is my too-tired-to- think meal.

My kids (and we grown ups) love salmon with honey and mustard dressing, served with baby new potatoes. The first time I served it, I had no idea it would be a huge hit, but it is, and continues to be! My eldest son is a very picky eater and prefers bland, beige foods, but this is a major shift and I'm embracing it.

ColinsVeryJolly · 15/01/2018 01:34

Super quick curry and rice with the leftover Sunday roast chicken before football practice every Tuesday.

ohlittlepea · 15/01/2018 09:27

Well after six weeks of a completely reduced diet (plain pasta and butter sandwiches!) Im very pleased that my daughter seems to be coming out of her fussy phase. Our meals in the week usually include Some kind of tomatoey pasta, fish with mashed potato and veg, spaghetti bolognese/lasagne, a hot pot or stew and a roast dinner. My daughter and I also enjoy chicken laska which is easy to make and nutritious and different it basically chicken and noodles cooked in peanut butter/coconut milk/chicken stock and a bit of lime. Stir fry veggies can be added. Usually the more time I spend planning or cooking something the less of it gets eaten!

ohlittlepea · 15/01/2018 09:28

I forgot we also enjoy Mexican meals like enchiladas or burritos. Great to hide veg in :)

Our family like plain rice with chicken+ vegatables+ soja sauce+ honey, fry and mix together. Serve with cucumber with Greek yogurt

looliloo · 15/01/2018 14:21

Sausages with chopped potatoes carrots, butternut squash (and any other veg you have) with onion and garlic, baked in the oven with a sauce made of chicken stock, flour and 2 table spoons on cream with fresh chives. Yum. You can also do it in the slow cooker!

HALA · 15/01/2018 14:24

I make pasta one day a week, sausages, beans and mash another, and a chicken curry with rice. I always get our pasta and vegetable from Lidls.

Ak13zd03 · 15/01/2018 16:18

A staple meal favourite in our house is chicken and bacon pesto spaghetti. It's so easy to make and very tasty it consists of spaghetti, chicken, bacon medallions and jar of green pesto and grated parmesan.

Lunaticmagnet87 · 15/01/2018 18:44

Moms Quick Crispy Chicken Bake.
My mom made this on a week night if she hadn't got the time and needed something quick.

Simply cook some chicken chucks, fry or roast some chopped courgettes. I also sometimes addd sweetcorn. Add in some chicken soup. Then crunch up some plain crisps and mix with some cheese. Pop the chicken soup mixture in a over proof dish and add the crunchy topping and bake till the cheese is nice and melted. Serve with garlic bread.

sarahja99 · 15/01/2018 20:16

Salmon pasta. I use Lidl salmon fillets that you can microwave in the pack. Boil pasta and broccoli/peas and mix with half cream cheese, half pesto and the pinged salmon. Ready in ten mins and everyone loves it.

iloveMiWadi · 15/01/2018 23:28

Creamy chicken quesadillas!!!!!

Fry chicken, add some fajita seasoning like paprika, Cajun, salt pepper , when chicken is cooked add cream and simmer, add cornflour if you wanna thicken it

Heat wraps in George foreman, put cheese and the creamy chicken and toast!! Soooo yummy.

Or else we do love a gorgeous spag Bol cooked with mushrooms, homemade sauce etc.

Aethelthryth · 16/01/2018 07:14

cannotmakemymindup · 16/01/2018 09:37

Chicken Curry, usually helps to use up lots of vegetables sitting in the fridge plus my Dd has some favourites like green beans that I always try to use. It also makes the meal go further and we find more enjoyable than 'just' a meat curry.
It has tikka paste base, onions, pepper, vegetables and chicken fried in knob butter, then paste mixed in. Usually tinned tomatoes mixed in. Towards end of cooking either coconut milk or cream added or actual cream stirred in. I will also often start it on hob in cast iron casserole dish then plonk in oven to cook for an hour or so.
Served with Basmati rice, probably naan bread or poppadoms.
