British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

I make curried turkey pasties. cranberry, Turkey and Brie puffs/tarts. A good old BLTT sandwich (bacon, lettuce, Turkey and tomato!) and then a bit of old school fondue which we dip bits of Turkey in!

My favourite for turkey leftovers is to make a coronation chicken type sandwich filling – Turkey, mayonnaise, curry spices, chopped apricots and a bit of lemon juice. Yum!

We had turkey last Christmas, having Goose this year. My favourite thing with Turkey leftovers is turkey and ham pie (using leftover Christmas ham as well). Sometimes I'll put some leftover veg and stuffing in the pie too. I love Turkey sandwiches so will definitely have a few days of that, then any excess leftovers will go in the freezer to be used up over the next couple of months in curries, pies, pasta dishes or stir fries.

IF there is any leftover turkey then it has so many uses, sandwiches, curry, vol-au-vents, Coronation Turkey, Stir-fries, in fact anything you can use Chicken for

I love turkey all year round so really look forward to it on Christmas Day too with all the lovely trimmings. We have cold cuts and sandwiches on Boxing Day, then use the leftovers for curries, casseroles and delicious soup! Christmas isn't Christmas without a turkey - the bigger the better!

I like the leftovers more than the Christmas day meal.

A teetering sandwich with cold turkey, ham, cranberry sauce, stuffing and lettuce.

Turkey pie and vegetable pie, with fried potatoes and peas.

Coronation turkey Grin

Bubble and squeak with leftover turkey and gravy (my personal favourite).

I usually do Turkey sandwiches. Gravy for dipping and cranberry sauce for that little hit of the sweet stuff. Smile

Turkey crown for us.

Not usually many leftovers as I try and get as near to how much we need as possible. We usually have two Christmases anyway between all the family.

Cold cuts and chips. Mmmmmmmmm

Turkey roast, the sandwiches, then curry (thai or indian, or both) then dicvide what is left into batches and freeze. Soup from the carcass

Whole (small) turkey for the day bought from butchers. Stick carcass in slow cooker to make stock for soup, and leftovers will do a nice curry and cold cuts for boxing day buffet.

The usual suspects for meals post Christmas - turkey and cranberry rolls, turkey stirfry, but also turkey Miso soup - add shredded turkey with thin sliced vegetables to Miso soup - delicious and takes about two minutes to prepare.

Buy a crown and use for sandwiches, not too much left. In laws and my parents take some home too.

If it's just me, DH and the kids (young 'uns), then I buy a crown. I get a whole turkey if we have my parents over.

I ALWAYS (by request from DH) make coronation Turkey with cubed apple with leftovers!

There are hardly any leftovers, we buy what we need for the day. The cat finishes the last bits on boxing day.

We get a whole (small) turkey and this year we are trying our own homemade Christmas pizza with the leftovers (home made pizza base with camembert stuffed crust, home made passata sauce, sliced strips of roast turkey, caramelized onions, a little sausage and stuffing, camembert and cranberry jelly for the topping). DS 1 (10) and I have "invented" this, so fingers crossed it works out ok...

The rest will go in a turkey and vegetable soup.

Make a delicious broth! Use the bones to make great stock and then put the shredded leftover meat in with a load of veg and seasoning, voila!

We never have Christmas dinner at home so we don't get the turkey left overs as a rule. If my Mum does package me some up we tend to have it in ciabattas with bacon and cranberry sauce. Any further left overs go in a turkey / Christmas dinner risotto - nicer than it sounds!

I love left over turkey. I always buy the largest one I can. We have it cold with chutneys, in sandwiches, turkey and ham pie, curry, turkey and cashew nut stir fry. My sons love to slice it, coat it in honey and mustard and fry it, then make a sandwich! I finally use all the carcass and final bits to make delicious soup.

My dad once made the most revolting turkey curry. I think he included a bit everything he could find in the cupboard. It was clear it was revolting when after one mouthful he cleared all our plates away and suggested we get a takeaway. This must have been about 24 years ago so I confess it has had a lasting impact on my attitude to turkey leftovers.

In the interests of honesty I should confess that I don't like turkey and if we do Christmas with my parents they cook a turkey, otherwise we have beef or something else.

whole turkey - cook up the carcass for stock, keep some leftover meat for risotto and soup made with the stock, usually we make peking turkey pancake wraps with the leftovers on Boxing Day - but we're 3x the number of folks this year so I imagine it'll just be the stock leftover!

Share your Christmas soul with the people on the lane!
When we cook a bigger size Turkey than our population, its always a list of lonely/old/young and alone people which we can share the leftover, with a nice pair of socks. specially the neighbours whose lights turned off very early. Turkey keeps their stomach and socks keep their feet warm. Leftover can save other people!

My favourite is Turkey a la king! We have this with rice on a Boxing Day now it's been passed on through my dp's family for years and now I make it for our family as it's a bit of a change having rice rather than loading up with more veg after the big day! We have enough for turkey and stuffing ( that I do make myself!) sandwiches for a couple of days after.
We buy a crown from the local butchers and last year got a massive one, I know this sounds thick as but last year after my partner picked our turkey crown up I was having a blonde moment and said" bloody hell if the turkey's top of head was that big a wonder how big the turkey was"!! My dp couldn't stop laughing he was winding me up with a straight face n said " yes there like mini dinosaurs" then he said where dya think the crown comes from? And I said well the head isn't it? N he said no y numpty it's the belly!!!

Boxing Day night, Turkey sandwiches with lashing of gravy and cranberry sauce and then if there's still any left (unlikely my family are piglets) one year I got to make a turkey curry.
