British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

Cold meat and pickles on Boxing Day and then soup!

I make the best sandwich of the year (IMO): white sliced bread, cheese spread on both slices, leftover turkey and a sprinkling of sea salt. Not particularly cultured, but bloody delicious. I buy a bigger turkey than I need so I have plenty of leftovers!

I also make soup, but it's the sandwiches that I look forward to.

I eat at my mums and we have a fresh turkey from a local farm every year. Have got a 25lb one ordered for this year as a LOT of people to feed!

All usable meat is taken off the carcass, slices, joints etc. Then after the meal, we pick off all the little bits and chuck it in a gigantic pan with all the leftover veg and gravy. We then add more veg and gravy the next day and make a giant soupy stew with it for Boxing Day.

The cold meat is served with mash in the evening

I dont think you can beat a good old turkey sandwhich with stuffing!! for my little one a turkey sandwhich cut into the shape of a star (using a cookie cutter) means she eats more! mmmmmm now im hungry!

To be honest, I have good intentions about using up leftovers in creative ways but I usually end up just making a freezer-full of stock.

If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? buy large to deliberately have left overs. Cold cuts for several days, sandwiches, Turkey pie, Turkey curry

Friends of ours own a turkey farm so we choose our own turkeys from week old birds then when grown we collect it just before Christmas. After Christmas dinner , our turkey is prepared, covered and put away in the fridge , where it is in the next two days turned into Turkey sandwiches ... Turley and Gammon stew , Reg Thai turkey stir fry and when the bones remain it gets put into a stock pot and made into Turkey and barley soup ... then it's bones are sadly wrapped and binned all over for another year ... Here we are choosing our Christmas turkey at a week old ...

I keep some back for a cold buffet and also sandwiches, then freeze some for a roast on another day and also use in dishes such as turkey risotto turkey pie etc.

I make turkey, brie and cranberry filo parcelsSmile. Not a great fan of turkey on its own but LOVE it like this, so pray for leftovers so I can make my favourite turkey snacks!!

We buy a whole turkey from our village butchers. With a large family there isn't a huge amount left but I always try to have enough for Turkey, Stilton and cranberry sandwiches the next day.

My DH gets two turkeys from work as his Christmas bonus! (Or did until this year, boo.) We'd freeze one so we could have another xmas dinner in Jan/Feb to cheer us up in the depths of winter. Always a full on roast turkey for Christmas day, cold breast meat with pickles, mashed potatoes and crisps for boxing day, leg, wing and any other scraps of meat (I pick that bird clean!) go in the freezer for pies, curry, risotto... yum.

We buy turkey crown from local butcher. The year before we bought our turkey from newly opened organic farm and it was no good. Love turkey leftover on warm bloomer bread with stuffing and cranberry sauce with plenty pickles and crisps with salad garnish. Our children love boxing day buffet table more than traditional Christmas dinner.

On Boxing Day, we have turkey in gravy with pigs in blankets and carrots served with chip/jacket potato! The next day my mum always makes a turkey pie using a mushroom sauce and added red peppers! Love them all!

We have a de-boned turkey that's stuffed from the local butcher. We usually have loads left over. Boxing day is one of our favourite meals, all the bits and pieces that are left from Xmas evening, crisps, pickles, cheeses, salads mmmnn can't wait! But even though I cook it, the Christmas lunch is my favourite and best.. Smile

I like to make Turkey fajitas with the leftovers. I just put fajita seasoning on the cooked shredded turkey and a bit of water and steam it for a couple of minutes. Perfect to serve with tortillas, cheese, lettuce & tomatoes

If there is any turkey left over from my gannets, we have sandwiches, curry, maybe a stew or casserole.

I Always Buy a whole Big Grin turkey & make a Christmas dinner with home made Gravy (Enough for a 2 day running buffet) And then its Turkey sandwiches for another couple of days. Finally the entire carcass & any left overs are used to make a Turkey & Sweetcorn soup (Chinese Style) I could make a nice Turkey & ham pie But we are trying to watch our waistlines Wink
