British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. British Turkey is here to help with everything you need to roast your turkey to perfection. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

Have always bought a whole turkey - as a couple a few years ago and now as a family of 4.

There are never many leftovers as we have big appetites & love a Christmas dinner but we do tend to have turkey stuffing sandwiches for supper on Christmas Day!

We normally buy a turkey and use the leftovers for sandwiches or slice it up towards our Boxing Day buffet.

Last year was the first year that we bought a crown rather than a whole turkey, I'm not sure what we'll do this year, crown vs whole bird. My In-laws are coming to our house and I've already had quite a fight on my hands to keep turkey - they want beef! I've said "turkey only in my house on Christmas Day'

We eat the leftovers cold on Boxing day and my husband makes Jamie Oliver's turkey pie which is very yummy!

I make the turkey stew traditionally made in Spain on Christmas eve. It has amushroomy sauce and is topped with crunchy, cubed, fried potatoes. Yum.

Usually a crown and then mince leftovers to make turk-ish Turkey kebabs. We like puns in this family! Grin

Once did buy a whole turkey though just to see if I could get it onto my head like Monica did in friends

We buy a whole turkey and eat it in the days after.

My favourite is in a Panini machine inside a wrap with cranberry sauce... yummy!

Any leftovers just have cold with cranberry jelly and roast or sauté potatoes on Boxing Day. Tempted by some of the other ideas on this thread though!

Cold turkey, stuffing, mayo, mango chutney,lettuce sandwich for a late supper on Christmas Day.
Spicy turkey fajitas with the works - guacamole, sour cream, salsa - and a huge platter of nachos grande after the football on Boxing Day.
Curry the leftovers, 1970s stylee with sultanas and curry powder - see vintage Delia recipe Grin

The usual - cold turkey and leftover ham from Christmas Eve with bubble and squeak on Boxing Day, turkey sandwiches etc.
Not this year though - we're going away over Christmas for the first time EVER so no catering for me - yipeeee!

Usually we have a largeish free range turkey from a friend, here are 12 of us on Christmas Day, 6 for the following 4 days.
Christmas Day - hot with all the usual trimmings though this year we are deep frying it southern Texan style! We have been sent a fryer, oil, gas and instructions by Texan family who will be with us, I can feel my arteries hardening as I type lol
Boxing Day - cold with ham, red cabbage and baked potatoes with Cumberland sauce (well actually I dip slices of cold turkey in a jug of Cumberland sauce..)
27th - turkey pie with a white wine sauce, peas and sweet corn in the filling served with bubble and squeak made from any remains of the veggies.
28th curry - tikka masala paste, turkey stock, pickings of the carcass, any veggie bits thrown in , accompanied by a kind of Bombay aloo but with shredded sprouts instead of spinach (I always get too many lol)

Nothing is more delicious on Boxing Day than a plated-up meal of leftover roast turkey, with gravy and veggies, popped into the microwave. Almost nicer than the Christmas meal itself.

I love cold roast turkey, and will quite happily pick at the carcass for days. Then it all gets boiled up for soup.

Turkey salad is my choice for using it up because it avoids the danger of reheating poulty and is a light relief amongst all the mince pies.

Although I love Turkey curry, what we've been doing recently is making more of a rice style dish with lovely herbs and spices like saffron, cumin and coriander and turkey leftovers mixed through it.

Some raisins added in also make it taste extra nice.

We make turkey tetrazzini and freeze leftover portions for nights when we need dinner in a rush.

We usually buy a couple of Turkey breast roast rolls from Sainsbury's because the kids aren't very keen on some bits of the Turkey and if we buy these then they are easy to cook, cut and the kids do tend to eat them. With a family of 11, there isn't usually much left over at all, but anything left we use the next day either in sandwiches or as part of a meal. There is never anything left on day 3!

I don't waste any of it! I make a lovely Turkey Pie adapting Jamie Oliver's recipe and adding the stuffing and gravy as well.. it goes down a treat served with peas on boxing day! Then I make a turkey curry and if any left this goes in the freezer for when back at work. The bones get boiled up for delicious soup...there is never any left for sandwiches!

We love our turkey sandwiches on boxing day almost as much as the Christmas dinner! With any turkey we have left we either make a turkey stew or a curry - yum!
