British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

We buy slightly more than what we need and I always make Jamie Oliver's turkey and leek pie with the leftovers for Boxing Day. Yummy!

We buy a crown on the bone. Roast on the day, buffet the day after, bone is stripped of meat which is then used for fried rice, stock made with the carcass.

Turkey, smoked bacon, and cheese toasties with cranberry sauce. The cheese has to be Brie, Bavarian smoked, Edam, or Monterey Jack, occasionally chilli cheese.

I buy a crown and try not to have any leftovers. But if there are any, I out them in a sandwich with mayo, tomatoes and saltBlush. The bread needs to be fresh from the bakery and hand sliced.

Left over turkey is used to make wraps in my house. I stir fry some sliced peppers and onions with the turkey and stir in teriyaki sauce once cooked and serve in wholemeal wraps. Delicious!

cold turkey is nicer than hot, so turkey sandwiches with loads of pickle are a real taste of Christmas

also a really big creamy turkey curry with loads of naan bread - might as well be hung for a sheep as a... turkey.

Only ever buy turkey at Christmas, but its a big one.
Leftovers:
Turkey, ham and mushroom turnovers
Turkey chow mein
Turkey Pilaf
turkey soup
turkey sandwiches
turkey stock (freezer)

We make really nice sandwiches and have it with a very informal meal where we just help ourselves to what we fancy.

Usually make a turkey curry for Boxing Day, yummy. Delicious with piles of rice as part of the buffet that we always have.

We usually have a big whole turkey for Christmas day, then turkey and stuffing sandwiches for lunch the next day. Sometimes make a turkey jambalaya and with the carcase I make a stock and make it into a turkey broth using the meat thats left. Oh and my two cats have any turkey leftovers as they love it.

Use any big chunks of turkey in a pie - mushroom and leeks in a béchamel sauce.
Other bits we use in an indian style curry, and the carcass is really good to make a stock.

We always have Christmas lunch again on Boxing Day then about 2 or 3 days of Turkey sarnies (not sure if it's meant to be kept that long!)

I buy a crown so less leftovers (and waste as I was never organised enough to use all the meat).
With a crown we all pick at it for a couple of days then I dice and freeze the rest. It ends up in turkey rogan josh because I'm really unimaginative!

One of my favourite bits of christmas is when everyone has gone home and the kids are in bed and is DH trying to return the living room to a liveable state - it's turkey stripping time!! It's one of the little traditions that signifies the end of Christmas Day for me - a small sharp knife and 3 bowls (leg, breast & bones) and the remains of the bird are divvied up for appropriate recipes - curry/pie for legs, sandwiches/salads with stuffing & trimmings for the breast, and the bones & bits boiled for stock for another time. Love it!

We usually have a whole turkey for Christmas.
Turkey sandwiches are one of the best things about Christmas/Boxing Day Grin
I tend to make a creamy pasta dish with the left over leftovers.

Before now, we've had turkey sandwiches on white buttered bread with brown sauce but this year, I plan to have Christmas dinner sandwiches on Boxing Day with the turkey and all the other leftover bits of the dinner. M&S do a version of this and it's yummy so I'm sure my own creation will be delicious.

Buying a smaller turkey this year to minimise waste ans I'm the only one who really likes it. Boxing day we eat fish and make a stew with the left over turkey. 27th its turkey stir fry!

We have a turkey crown for Christmas but I have bought turkey legs through the year as they're a very frugal way of feeding a family. My children aren't keen on the brown meat though so it becomes not so frugal when they don't eat it! We always have turkey sandwiches in the evening on Christmas day, and any leftovers make risotto or get put into a pie.

We will be buying a turkey crown - it is just the four of us this year, so there won't be a lot of left overs. Any that there are, I will probably make into a turkey stuffing pie surrounded by shortcrust pastry - yum yum!

First use is during the evening on Christmas Day as cold meat with homemade pickled onions, piccalilli and some leftover stuffing. After that always a good turkey curry.

Casserole, curry, wrap with veggies. I tend to freeze them though to have later so we dont od on turkey!

We usually have 7 for lunch at Christmas, my family + DF & MIL (& 2 dogs). We have a smallish turkey - one for 8-10 as I tend to order them in advance & if I got a 6-8 turkey it might be too small. We have turkey sandwiches for lunch on Boxing Day. I make stock from the carcass & use that for risotto, pies or soup. I love turkey sandwiches with chestnut stuffing & redcurrant sauce mixed in.

We have a huge turkey but then, we have a huge nuclear family! Turkey and Ham Crumble. Made with turkey stock, left over vegetation and an oat based savoury crumble mixture is boxing day dinner. Absolutely awesome. Thank you DH (his recipe, and he cooks!) The carcus then makes more stock for soup/cooking rice which we freeze until needed.

We buy a whole turkey from a local farm, but normally my other half takes the wings & legs off & freezes them for us to use later (as much as anything else, we struggle to fit it in my mums oven!!) and we just cook the crown. We have a big family Christmas so we normally use most of it - on Boxing Day any left gets served up with salad and other cold meats. The wings and legs go into a curry or pasta sauce - DH is very good at making a completely different taste from leftover meat. We take any Boxing Day leftovers home as my family are very paranoid about food hygiene (and we have guts of steel!!)
