British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

We always intend to use it for sandwiches over the next few days, but after xmas day and boxing day we get fed up of turkey... the cat ends up getting it!

We buy 2 crowns now for Christmas. Pass some of the the leftovers on to our guests, make turkey sandwiches and usually just snack on the rest.

Turkey crown for the day itself, the as cold left over for boxing day. After which everyone needs a break from turkey, so I make a mashed potatoe topped pie, with left over turkey and leftover ham, with some veg and cranberry sauce mixed in. I usually freeze it and we eat it in january sometime. Its lovely.

My much better at cooking parents have leftovers, make chili chicken (obviously with turkey) and make thai soup. They always get a massive turkey too, mainly for the leftovers

What leftovers?

We usually include turkey sandwiches for Christmas Day tea then use the rest on Boxing Day with chips & mushy peas

I love turkey.

Always buy a whole turkey.
Leftover - definitely curry - adding coconut milk sounds like an excellent idea. There will be sandwiches too.

We have a large turkey -
Roast Christmas Day
Boxing Day - turkey stuffin cranberry sauce mixed together with mayo on warm baguettes.
The rest of the left overs either go in a pie,curry,wraps and have been known to go in an omelette.

We buy a whole turkey because we love the leftovers.
It's our ambition to rear our own turkeys for Christmas at some point.

Whole roast on Christmas Day, with stuffing.
Cold on Boxing Day with stir fried left over veg (much tastier than they are on Christmas Day)
With the rest we will do some of the following:-
Turkey curry
Turkey and ham pie
Turkey and stuffing sandwiches
Turkey patties (minced up Turkey made into little mini pies to serve with HP sauce)
End up with the carcass to make soup.

We also buy turkey throughout the year - morrisons sells turkey legs (huge) for £4, they do our family 3 or 4 meals. We tend to cook it, strip the meat off and use it for soups, curries etc.. The bones boil up and make very good stock.

Turkey crown for us for Christmas & then I make crusty cobs & use the turkey cold with stuffing in them to use it up.

I like the leftover turkey mixed with cooked onions and mushrooms and smothered in pepper sauce - good with rice , mash or chips

I do a yummy Indian-style stir-fry. Firstly, chop the turkey up in bite size pieces. Fry some sliced onions and chopped garlic in a little olive oil and cook until browned. Add the turkey, and add sliced peppers, chilli paste, a dash of soy sauce, ginger, garam masala, tumeric, salt and pepper and stir fry for about 4-5 minutes. This absolutely delicious eaten by itself or in a crusty roll. Delicious!

I also sometimes do a spicy turkey salad with crunchy lettuce, kidney beans, grated carrot and spring onions. It is heaven!

sandwiches, i love a turkey sandwich. we have people round on boxing day so there isn't usually much let anyway.

We buy a turkey crown, it's easier to store and cook, and there is still plenty of leftover turkey.
We have the traditional turkey sandwiches at the Boxing Day football match Smile I freeze some slices of breast meat in portions in gravy for a quick and easy meal later, and any scrappy bits are used for Jambalaya- again it's quick and easy to cook from scratch, and a family favourite.
