British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. British Turkey is here to help with everything you need to roast your turkey to perfection. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

Because it's what we did in our family when I was growing up . . .

Christmas Day Lunch - roast turkey and all the trimmings
Christmas Day Evening - cold cuts of Turkey, with cheese, bread and buffet bits.
Boxing Day Lunch - cold cuts of Turkey with bubble and squeak and salad.
Boxing Day Evening - Turkey and Ham or Turkey and Mushroom Pie
Next Day Lunch - Turkey Soup
Next Day Dinner - Turkey in Paprika Sauce (my addition to the tradition)

I use Turkey quite a lot throughout the year in pasta bakes, meatballs, Turkey in paprika, Turkey spirals, etc. Very economical, easy to use meat.

Whole turkey, crowned. Roast the crown & legs go in freezer for roasting in duck fat later

Everything savoury from Xmas day meal gets chopped up into a slow-cooker pie with gravy & bread sauce & leftover mash top. Lovely! Sometimes you get a bite of sprout & sometimes you get a bite of pig in blanket

We've gone for a crown the past couple of years but when we do get a whole turkey I would make soup with the leftovers. It's hearty and nutritious.

I love a turkey and cranberry sauce sandwich!
Also use it in curry or as a baked potato filler in some kind of sauce.

Not particularly exciting or original, but we love turkey and trimmings/gravy in a toasted sandwich - delicious!

We usually buy a turkey crown at Christmas, because we also have ham and spiced beef, plus all the stuffing, sausages etc, so a whole turkey would just be even more ridiculous.
We all enjoy the leftovers as a reheated roast or in sandwiches, no need to get creative in our house.
During the rest of the year I often use turkey mince to make a bolognese type dish or burgers and occasionally do a turkey drumstick in the slow cooker.

I make a huge turkey curry on boxing day and my parents and siblings pop round to help us eat it!

Oh I love turkey! We have sandwiches with stuffing and sausages, turkey and ham pie, Turkey risotto and if possible some lovely slices to pop in the freezer for sandwiches to come! nom nom

Turkey and cauliflower curry, turkey risotto, turkey sandwiches (save the leg meat for these, so tasty!).

And there's nothing like sitting in front of a big turkey carcass picking all the little bits of meat off and nibbling away.

Our leftover turkey will make a spicy West Indian Turkey noodle soup with Caribbean veg such as Okra, Yam, Scotch bonnet peppers as well as carrots, onions and potatoes - delicious!

we always buy a whole turkey and love leftovers. its tradition on boxing day to have turkey and stuffing toasties and turkey soup is another favourite.

Always buy a whole turkey, we have turkey & stuffing sandwiches afterwards, the old reliable turkey curry & I sometimes make turkey, ham & cranberry pie to freeze. Grin

We have a lot of people together at Christmas, my DDad cooks for 12 of us. The left over turkey each year is served up on Boxing Day for my favourite Christmas meal - cold turkey and chips, yum.

When we were younger DP tried to be more experimental, they tried something which my Dsis and I called Turkey Kickiaki (still not sure what it was meant to be) and the thought of it still makes me want to heave.

I do a version of coq au Riesling. It's super easy and is yummy with jacket spuds and leftover veg. Basically I add Turkey and leftover baked ham to the slow cooker with the risking, mushrooms, a sautéed leek, some mushrooms and a bit of stock then leave it to cook all day. Just before the end I add some cream and a a bit of dill. Perfect Boxing Day food!

We buy a whole turkey....leftovers, what leftovers? DH is like a dustbin! When I lived with parents it'd be turkey sandwiches with cranberry sauce (and the dogs would have a small slice too Grin)

I love one cold buffet meal and turkey sandwiches but I must admit that is usually enough turkey for me.

Memories of my mother boiling up the turkey carcass for days on end have put me off for life Grin.

2 crowns on the big day and a whole bird on boxing day and also at Easter.
We love Turkey sandwiches served with stuffing, pickled onions on the side and a few kettle chips! On boxing day, cold turkey, mash, salad, pickles and sometimes we do a ham too.
I a hungry right now and could eat a turkey sarnie!

There's only three of us, so even with a crown there are plenty of leftovers to eat cold with pickles and chutney. We do a cold spread (meat, cheese, salad, crackers, grapes etc) for boxing day lunch followed by Christmas pudding, which we never have room for on xmas day.
