British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

turkey and leek pie. All the odds and ends go in the pie and it's topped with puff pastry and roasted chesnuts.

I will heat up all the leftovers and have another mini roast the next day and then make a huge amount of turkey soup as I love it.

We have Boxing day paninis with turkey, stuffing and cranberry. I use the leftover veg in a soup and this is our traditional fare after a long walk with the dog.

Turkey and stuffing sandwiches here! I always think I'll do a curry or something exciting but can never be bothered when it comes to it.

We have come back to turkey in recent years, and to be honest I really enjoy just plain cold turkey with plenty of chutney, pickles and cold roast potatoes Smile It helps that I'm now old enough to ask honestly for chutney as a Christmas present, or even to make it myself.

We go out for dinner now but we have previously stuffed ourselves with turkey sandwiches and turkey curry is a tradition here.

We have a whole bird.
Cold turkey on boxing day, or turkey sandwiches. Then turkey and sweet leek pie. With stuffing if there is any left.
Yum.

Leftover Curry here : )

I use leftover gravy to make the curry sauce with, adding it to onions and spices - yum!

We buy a whole turkey and cook it on Christmas day, and whatever is left over is used in sandwiches for lunch and a thick chunky soup and Turkey curry for dinner (can't beat it!) boxing day. With anything that's left it's put into a stew with veg, mashed tatties and stuffing for the next nights dinner.

We usually buy a big turkey precisely to have plenty of leftovers Grin
We love to eat sandwiches (with leftover stuffing) on Christmas evening watching Doctor Who. On Boxing Day our tradition is to eat cold slices of Turkey with fried potatoes and pickles. There's ALWAYS a wonderful curry and we also enjoy Jamie Oliver's pie.

I buy a bigger turkey than I need. I serve Xmas lunch and let the rest of the meat rest longer. Then I carve the rest and cover in tin foil and wrap in tea towels. Then I drive it to work for the patients on the ward I work on. We have regen food and the turkey is awful. This way the patients get some decent turkey over Christmas.

We have a whole turkey. We usually have boxing day pie which is leftover turkey, ham, vegetables, stuffing, cranberry, roast pots an parsnips all done in a sauce with a puff pastry lid. It is almost as nice as Christmas lunch itself. For the rest of the turkey we usually make risotto and a nice big pot of soup for the freezer

I always buy the whole bird - hoping for leftovers after the main meal.
I'd strip the carcass of all meat once it's cool and if there's a lot then put some in a freezer bag for later.
Immediate leftovers would be for sandwiches, risotto or 'devilled' turkey (rubbed with butter and spices then roasted and served with rice - the boxing day tradition).
Then the carcass is boiled for stock!

If we are at home over the christmas period I buy as big a turkey as will fit in my oven! Boxing day is always turkey pie - turkey, leeks and peas in a creamy sauce with a puff pastry lid. Everyone loves a turkey sandwich and I particularly love a toasted turkey and stuffing sandwich. Sometimes a turkey stir fry or a curry. I cut up the rest of the meat and freeze it in turkey pie portion sizes to make a couple more turkey pies during January.

We LOVE turkey but eat it year round so have beef for Christmas. We make biryani and soup but love best of all a recipe where you mix the leftover turkey, stuffing and gravy and put puff pastry on top to make a pie.

Love the brown meat and my sisters and I used to fight over that and love it dunked into Heinz Salad Cream.

we buy a crown roast dinners with all the trimmings 2 days, baked spud with veg and turkey sandwiches few days then I make a massive turkey hot pot usually does us two days, no waste in our house dog enjoys a bit as well

We like to buy a huge turkey as it takes us a surprisingly long time to get sick of turkey Grin

After the big meal itself we usually have cold turkey, cranberry sauce and stuffing sandwiches on Christmas Day evening ( with a spoonful of gravy spread on each slice of bread ( truly delicious )

On Boxing Day we have more sandwiches while I make some broth using the darker pieces of turkey.
The day after we have family over for the day and I serve the broth and make a pie with turkey, potato, leeks and a white wine sauce. It always goes down a treat.
If there is any left after that I bung it in a curry and freeze in portions so that when the children ask for a ready meal or takeaway we have one ready in the freezer.

I love turkey and now I feel very hungry Grin

We have a whole bird because most of us prefer leg and thigh meat. My brother cooks it and it has never been anything other than succulent

And we eat in the evening so leftovers happen from Boxing Day onwards.

Then we have slices of cold turkey with a sort of bubble and squeak made from all the Christmas dinner leftovers, with cranberry sauce.

Then maybe a risotto, sandwiches, and soup from the carcass.

I am not a fan of reheated roast meat in many dishes - a pie is OK, and risotto, but not turkey curry.

I would never dream of not having the whole turkey. Even though we are only 4, I always buy a big one because for me, the leftovers are just as good - if not better - than the original.

I make a pie with the meat - especially the thigh meat. I add squash and peas and maybe some bacon

. If we don't have one big one I use it for small pasties for the children's lunches (resentfully, as I think they don't fully appreciate how fantastic these pasties are).

Any leftover breast I make into turkey and home-made blackberry jelly bread rolls (look up Paul blue-eyes Hollywood recipe). These are fantastic for school lunches again, or just anytime.

And of course, SOUP! People these days just do not get how absolutely fantastic a soup from turkey bones & lefovers is. Seriously. haute cuisine? You cannot get better than turkey soup and croutons.

And now I'm dribbling with anticipation..

We've never had enough people attend Christmas to merit having a turkey! Is it possible to breed miniature turkeys that are about chicken sized? Wink Or I suppose we could just keep having a chicken instead...

We occasionally have turkey escalopes, but we're not huge meat eaters and meat is so expensive that we don't often have it.
