British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. British Turkey is here to help with everything you need to roast your turkey to perfection. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. As well as having the most festive nostalgia, a whole bird is best value for money - for about the same price as a crown or a ready stuffed breast joint, you get the lovely leg meat. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

i make Turkey Croquets , mixing together Turkey, stuffing & mashed potatoes shape into oblong Croquets then dip each one into a little beaten egg and then roll / or sprinkle on some lightly golden breadcrumbs . you can then shallw fry or baked in oven

We have another cooked dinner with the leftovers and then cold cuts with salad and chips. It depends how big the turkey is, but if we have loads left I might make a curry or a soup this year.

I always, always make stock with the carcass. We're not huge on soup so will maybe use about half for soup (otherwise if I use the whole lot then it goes off) and portion up the rest to use in risotto etc. You just can't beat the flavour of Christmas stock - Turkey, sausage meat, stuffing, bacon - just fabulous.

Giblets (may or may not be counted as leftovers) always used exclusively for gravy. We are huge gravy fans!

Leftover turkey is portioned up with bacon and sausage meat, covered in gravy and frozen - a brilliant, easy meal that is especially welcome when it's cold outside.

Turkey and bacon risotto is a favourite (using Christmas turkey stock of course).

Love Turkey fricasse/ a la king so will quite often use leftovers for this.

Sometimes I'll use Turkey and sausage meat/ bacon in a pie (good with a gravy filling) or if I've not got sausage meat/ bacon then I'll do a creamy sauce with Turkey, white wine, mushrooms and tarragon. Simple but effective, and really delicate if it's topped with filo pastry.

We actually eat quite a lot of Turkey (significantly more than chicken) and will quite often buy a Turkey or two during the year and do a Christmas dinner mainly for the "leftovers". Turkey mince is a favourite to make burgers win breadcrumbs, garlic, hers, tomato paste, a touch of English mustard, egg to bind and season. Absolutely gorgeous, especially BBQ'd, and pretty healthy to top!

To be honest, we don't tend to have turkey at Christmas, but if we do, the leftovers would definitely be used for sandwiches the next day, made with soft white bread, stuffing and gravy.

I wish we did something more ambitious, but we usually have it on baps! Or my daughter makes a stew with it. With the baps we often have leftover gravy, so soak them in it to make them extra tasty

Turkey sandwiches on Boxing Day and then depending on the size of the bird/left overs; Turkey & Bacon Pie, Turkey Curry and finally soup!

We always buy a crown, but after it's cooked and sliced we freeze portions and use for meals throughout January. Can't beat a turkey curry!

We buy a turkey crown as nobody likes the dark meat. I don't tend to over estimate the size we will use, so we have enough left over for a few sandwiches & that's all

usualy boxing day fried turkey and bacon, tea is a curry and if any left after that a good old tiffin stew

No turkey for me, as I'm vegetarian, so it will be Quorn Roast for Christmas dinner! Mr Ellis And boys will have turkey though and will use up the lefovers in salads and sandwiches.

I eat my turkey leftovers in sandwiches.
My mom makes a casserole with her leftovers by tearing the turkey into small chunks, adding some gravy and puts them into a casserole dish then tops them with flaky American biscuits and cooks it in the oven. It's really tasty.

Cold turkey on boxing day, turkey risotto the day after and then boil the bones to make stock to freeze. Nothing gets wasted.

I make savory rissoles but instead of using beef I use Turkey:) they are very tasty and the kids love them www.cookitsimply.com/recipe-0010-0192p.html
