Right chaps, while BIWI is drinking prosecco in sunny Italy away being busy and important, I'm your supply teacher for the next couple of days. BIWI has given me temporary responsibility for the Big Stick, so no messing about at the back there!

Well done on getting to week five, it's not easy and despite the fab support on here you've done this yourself, so remember how far you've come.

Please record your weight on the spreadsheet and marvel at your progress!

Temptations will come along, especially over bank holidays and half term treats, but remember that you're doing this for yourself, so be kind to yourself by not giving in to the temptation from things that do you harm and risk derailing you, as every time you look after yourself in this way it get easier. If you have a wobble, post on here - we'll remind you of all the tasty things you can have instead and why.

crabby leave off the nuts I'd say you don't need them. Low carb cheese sauce is delish as it is and needs no topping...

Willie-I did put my weights in but they've obviously disappeared- starting weight was 251.5 Blush and week one was 246.5. Thanks!

What's the recipe for low carb cheese sauce, please?

I'm feeling stuffed after a big dinner of smoked salmon, mashed swede, cauliflower cheese and carrots.

I just make it with double cream and masses of grated cheese melted into it, Lily. Alternatively you could use cream cheese (like Philadelphia), heat that and add grated cheese.

Lovely food today.

Had almond/cream cheese pancakes with cream and blueberries.

Dinner was salmon with feta and basil, celeriac mash and chard.

Need more water.

Lily I do dollop cream cheese, splash double cream, handful cheddar per person. Mix together and dollop on cauliflower, into hot oven or grill. It's quite stiff when raw, but as it cooks it turns into a proper cheese sauce consistency

Sorry MrsH Blush I was craving a bit of crunch. In the end I only used a very few flaked almonds - no more than one or two almonds in total.

Lily I'm really pleased with how my cheese sauce turned out tonight - I've found it a bit thin when I've made it without flour and milk before but I think I'm getting the hang of it now.
Tonight I finely chopped a couple of shallots and some garlic, then fried them gently in butter with a dash of olive oil (stops the butter burning). Added diced mushrooms, some chopped thyme and rosemary, cooked gently for a while. Then I poured in a load of double cream, a huge dollop of cream cheese (first time I've tried this brand - 'paysan breton' which is 3g carb per 100g - and it's bloody gorgeous, I could just eat it on it's own), some gruyere and a bit of smelly blue cheese left over from the weekend. The cream cheese thickened it really well and the gruyere gives it a lovely stretchy texture, like mozzarella does.

I topped the cauliflower in the sauce with some grated cheddar and browned it under the grill, then added some crispy fried bacon bits and the forbidden almonds.

Now here's an annoying mystery... I checked the carb content of the flaked almonds before I cooked and the packet said 3.9g carbs per 100g. I've looked it up on the website (couldn't be arsed to get up and go and check) in an effort to get myself out of the shadow of that twitching big stick Grin and it says 10.3g per 100g! I checked the packet, and then checked the sell-by date. Jan 2012 Blush oops. But how can the carb content of toasted flaked almonds have bloody well tripled in a year or two fgs. Also, the non-toasted almonds are 6.45g - that's a big difference for a bit of toasting!

DP has gone out so have treated myself to omelette with lardons, mushrooms and cheese. Yum. Same salad as yesterday for lunch, was starving this afternoon for some reason so had a babybel, mini pepperami and a few too many Brazil nuts.

I'm having my Implanon implant taken out tomorrow so hoping the hormone change is not going to pitch me into cake and badness!

They vary from brand to brand what the carb count is... I mean, how the hell can one brand of roasted, salted almonds be 4g/100 and another brand be 10/100.

It drives me nuts!!

I have definitely eaten too much today. I blame the homemade coleslaw (red cabbage/shallots/carrots/mayo). I have been adding it my my salad for lunch this week and my portions have been steadily increasing. Only way to get some though or else dh would have it scoffed.

Today:

B - scrambled eggs with beef and garlic brie
L - Mega salad with coleslaw, burger, brie and chicken
D - Pork casserole with cauli rice

I have a wedding to go to in July. What am I going to wear? It's in a (very famous) castle.

They're waitrose own brand here are the toasted ones and here are the lower carb untoasted variety.

But mine, which are waitrose and identically packaged to the toasted flaked ones above, have the following profile per 100g:

  • energy 645kcal
  • protein 27.2g
  • carb 3.9g
  • of which sugars 3.5g
  • fat 57.6g
  • of which saturates 4.8g
  • fibre 7.7g

Well, I fell so far from the wagon last week, it wasn't true. And was rewarded with stomach ache, bloating and vile wind Confused (sorry) I cannot bear to get on the scales but I am more or less LCing again.

I was premenstrual plus got really bad news on Thursday and the new WOE just seemed too much effort. At least it is half term so I can hopefully get back on track.

Crabby - yeah, it's odd isn't it. However, being a vegetarian that doesn't eat eggs - I just 'sigh' loudly and carry on eating them - it's either that or an Apple Yum Yum Grin
