I’ve just done the weekly shop, £45 so not bad at all considering that’s all my meals plus a few extra bits I picked up for DH and DS.

Ive got a few nice bits on the menu next week, I’ve also picked up loads of thin sliced cured meats to dehydrate into crisps later today.

@BIWIshYouAMerryChristmas were staying at the Savannah Beach Hotel , we’re hoping to do some sightseeing ( we have been before , for our honeymoon , and another couple of times ) I want to swim and feed the turtles again , hopefully the rum factory and we’re quite happy to catch the buses and walk along the beach

Really pleased that I've already got back under 12 stone Smile: was 11st 13lb this morning, a loss of 3lb already Shock

Just goes to show the value of drinking all the water and stopping drinking the alcohol - as well as cutting out the carbs Grin

I'm going to adapt a "turkey and ham leftovers" crumble for dinner tonight: I'll use less liquid in the cream and stock sauce so that I don't need to thicken it, and I'll use crushed pork crunch instead of breadcrumbs in the Stilton crumble. Will let you know how it goes Smile

I am actually sleeping (despite needing to get up for the toilet in the middle of the night - all that water!) and can go back to sleep after waking up.

I weighed today as I won't have time on a Monday. Keeping in mind I didn't start until Wednesday as was away for new year, I've lost 3lb and I'm absolutely doing cartwheels, because that's only 4 days. I'll put that on the spreadsheet tomorrow. I'm also beginning to lose a few inches, including from this monstrous belly. VERY happy about that.

Not missing alcohol too badly, although most evenings I do think hmmm... I really fancy a drink, but I'm not and it's ok. I'm craving sugar (we've got delicious chocolate in the house from Christmas) so much that I'm feeling as guilty as if I'd eaten it, when I actually haven't touched it. 😅

Exercise going really well, I'm back in that zone, which feels great... a good combo of cardio and strength throughout the week.

If I can keep this up, it feels like success might follow 🤞🏻🤞🏻🤞🏻🤞🏻🤞🏻🤞🏻🤞🏻🤞🏻

Anyone else waiting to see what @Metabolicallycomplicated is eating so can copy that????

Can I ask about intermittent fasting? Because I had a big driving day yesterday, I ended up not eating anything all day (had plenty of water) and eating a big meal around 7 and it was quite doable.
I was googling IF, and it seemed to be saying actually the important thing is to not eat in the evenings....
To stop at around 5 or 6 pm
Does that sound right to those of you who do it?
And do you do that every day?
I have about 3 or 4 days a week where this pattern might potentially work for me, but 2 of those days are Saturday/Sunday. Does doing 2 together make it less effective?

Can I ask the hive mind for pork leg ideas please? All the recipes I can find are for pulled pork which I'm not a fan of and the sauce always has sugar/honey/molasses in. Had it in my head to cube it up and do a sort of stroganoff in the slow cooker but no cream or creme fraiche only ffgy (& no desire to leave the house🤣)

I often use Greek yog in stroganoff type meals, I sometimes do a Delia one with white wine, three mustards, mushrooms and I use whatever sour cream/yog option I have.

You’ll be disappointed, today I was at a soft play for lunch and nothing on the menu was remotely WOE friendly Sad. Luckily I’d packed some double cream to take with me so I had a black americano and added the cream which meant I made it through without nicking DS’s chips.

For dinner I’m currently slow roasting (so it’s more like they’re drying rather than cooking if that makes sense) some aubergine slices with loads of garlic, olive oil and salt and then I’ll layer those up in a tin with the ragu from last night and make a cheese sauce for the top and bake it - kind of a moussaka type situation. I’m going to have that with left over chop salad because I’ve still got loads left that needs eating.

I think I just had a stroke at the thought of ‘crushed pork crunch’ - is that what I’m imagining and basically crushed up pork scratchings???

I am unexpectedly staying somewhere remote without suitable food (long story - I should have been eating a healthy meal instead). The only low carb thing here was a pack of pork scratchings, which I’ve just eaten. The only other food is crisps, bread, cake, butter, chocolate and a pot of tuna and sweetcorn sandwich filling. I can’t leave the house (child asleep) and can’t order in (too remote). I’m hoping not to succumb to the temptation and just get through on water tonight, then have the tuna and sweetcorn for breakfast (not perfectly low carb but better than the other options). determined not to deviate ahead of Monday’s weigh in.

Did you survive??

Also I’ve just spotted your username, is it a reference to ‘chaaaaelie had a pigeon a pigeon a pigeon’, or a reference to ‘the king of Rome’??

@Metabolicallycomplicated - it's crushed up puffed pork scratchings (which in texture are more like Quavers Wink). I only have one pack (30g) and the recipe called for 100g breadcrumbs but a) I'm doing a smaller quantity and b) I'll just add extra crumbled Stilton.

There's a great recipe on the meat recipe thread for pork vindaloo that uses pork leg:

Pork Vindaloo (serves 4)

Adapted from a recipe in: "Curry" (various authors) published by Dorling Kindersley). Although it is called vindaloo, you can see from the quantity of chilli that it won't be that hot - and you can increase/decrease the amount of chilli to suit your taste anyway.

Ingredients

900g/2lb boned pork, cut into 5cm/2inch cubes
4 tbsp vegetable oil
5 garlic cloves, finely chopped
200g/8oz shallots (about 4 echalion/banana shallots)
1 teaspoon ground turmeric
1/2 teaspoon chilli powder
1/2 teaspoon tomato puree
350g/14oz tomatoes, chopped (about 3 average-size tomatoes)
3 tablespoons cider vinegar
salt
pinch of crushed black peppercorns
1 tablespoon chopped coriander leaves

Spice Paste

1 teaspoon cumin seeds
4 cardamom pods
4 cloves
2.5cm/1inch cinnamon stick
5 black peppercorns
1 green chilli, chopped
2.5cm/1inch piece fresh root ginger, peeled and chopped
4 garlic cloves, peeled
3 tablespoons lemon juice

Method

Make the spice paste - grind the cumin, cardamom, cloves, cinnamon and peppercorns in a clean coffee grinder or spice mill into a fine powder. Blend the spice powder with the green chilli, ginger, garlic and lemon juice in a food processor to make a fine paste. I do this all together in my mini food processor - I have never managed getting it into a fine powder, but it's easier and tastes just as yummy

Mix the pork with the spice paste in a large bowl. Cover with cling film and leave to marinate in a cool place for 1.5 hours I sometimes do this the day before I'm going to cook it, and leave it in the fridge

Heat the oil in a frying pan, add the garlic and saute for 1 minute. Add the shallots and cook until they are golden, stirring occasionally. Add the turmeric, chilli powder, tomato puree, chopped tomatoes and vinegar and stir well

Add the marinated pork and salt to taste. Cook for 10 minutes, stirring occasionally. Pour in 275ml/9fl oz water and bring to the boil, then reduce the heat and simmer for 30 minutes or until the meat is cooked through and the sauce is thick this works well in the slow cooker as well

Add the black pepper, then serve hot, garnished with the chopped coriander

I tried to work out how many carbs, but can't find out how many carbs would be in the tomato puree (although as it's a small quantity I'm guessing it would be negligible).

My best calculation is that this probably has around 25-30g carbs for the whole thing, so would only be around 6-8g carbs per person.

I'm not really sure about the specific ins and outs of IF, although I know that it can and does work well with low carbing, as this WOE acts as a natural appetite suppressant, so making it easier to go for longer without eating.

@StuntNun is the expert here, and she started a thread about how to combine intermittent fasting with low carbing which might answer some of your questions

I struggle as I have a 4, 2 & 13 month old. I work full time. I barely have time to keep up with everything. We don’t have any help from grandparents or other family, it’s all my DH and I doing everything. Which is fine it’s just hard to find time for things. I’m also trying to get promoted at work and I’ve started doing the No Spend 2024 Thread.

My diet and exercise is just so hard to focus on along with everything else. It’s the one thing I know will help me feel better about myself but I literally have no time. Unless you’re able to physically come and help me in my home I’m not sure what else you could do! Just the offer itself is so thoughtful! It really means a lot! Xx

Well @Mamma1982, one thing I can reassure you about - you really don't need to worry about exercise if you want to lose the weight! Exercise is very good for your overall health, but unless you're doing a lot of it every day, it really doesn't contribute that much to weight loss. You'll see a lot of people saying that weight loss is 80% diet and 20% exercise - Dr Jason Fung, who wrote The Obesity Code, goes even further and says it's 95% diet and only 5% exercise!

I understand that you must be very busy - been there, got the t-shirt! - but it's really important to remember that you matter as much as everyone else in the family.

Why not start with making small changes? Think about the meals you're eating which are really heavy on the carbs and see what changes you can make there? e.g. instead of having toast and/or cereal for breakfast, why not switch to full fat Greek yoghurt? Probably even quicker than the carbier options! Or a couple of boiled eggs, which will only take you 4 minutes!

@LowCarbingIn2024 it isn't important when you stop eating, it's the length of the fasting window between dinner and breakfast. That could be 6 p.m. to 10 a.m. or it could be 8 p.m. until noon. You start to get health benefits from fasting for 14 hours three nights a week. 16 hours is better, 18 hours is better still. Once you've done a couple of shorter fasts you could even try a 24-hour fast, i.e. from dinner one day to dinner the next. It doesn't matter if the fasts are back to back, do whatever works for you. Sometimes people refer to "the fasting muscle" because the more you fast, the easier it gets. Honestly, do one or two 16-hour fasts and 18 hours will be a breeze.
