Good morning Campers! FlowersSmile

So we are on to the home straight with only two weeks to go before the end of this Bootcamp. Still time to shed a pesky pound or two, especially if you're super strict. Perhaps for these last two weeks you might consider doing full-on Bootcamp, rather than Bootcamp Light?

We might into the final fortnight but we'll still be around afterwards for support or to continue following the Rules If you've only just started, we’re still be here to advise. Smile

It’s 6 weeks tomorrow before I’m off on holiday - so that will help focus me Wink

Still not feeling a 100% Sad so I suspect it will be day vegging in front of the TV.

@BIWI that does sound yummy, will investigate the muffin recipe - I'm not normally a baker but could be persuaded I think!!!!
Yesterday was a bit of a faff so had a late lunch of mushrooms and peppers fried in butter and Cajun spice with some leftover roast pork, and inevitably then didn't feel hungry later on.........better with water though and slightly down this morning, edging closer to the next stone which is my new goal for this BC 🤞

I just had a go at the muffins - put vanilla extract and a couple of tablespoons of truvia in the mix. Thought they were lovely.
Will have a go at the cheese ones next time, I think.

You really don't need to be a baker to make those muffins! It's really straightforward. Mix ground almonds with cold butter, in a processor, then add eggs, herbs/spices, baking powder, and then the cheese. Then dollop into muffin cases.

Sorry to be a pain but I can’t find the muffin recipe, the recipe threads are harder to search in since MN took away the option to toggle to show all posts, could someone possibly link?

I did well yesterday, half a tub of cottage cheese for breakfast, salad, mayo and some cold beef patties for lunch, Wagamama in the evening (they have a new dish which is only protein plus salad, no noodles or rice, just a bit of dressing).

Here you go @EvenlyDetermined:

Cheese muffins (only on Bootcamp Light)

Makes approximately 9 standard sized muffins; I made 24 mini ones (with enough left over to make 1 large one!)

Ingredients
100g ground almonds
30g very cold butter this is important - it’s the shock of cold ingredients going into the hot oven that makes the muffins rise well.
3 medium eggs, chilled
1 generous tsp baking powder (or 1 sachet, if this is how you buy them)
90g grated cheese
Oregano or chives, either fresh or dried
Black pepper
Smoked paprika

Method

  1. Preheat oven to 200C. N.B. it’s the shock of cold ingredients going into the hot oven that makes the muffins rise well.
  2. Grease a silicone muffin tray and/or use paper muffin cases in a metal tin.
  3. Mix the almond flour and butter.
  4. Add the eggs, baking powder, herbs, pepper and paprika then mix.
  5. Mix in the cheese.
  6. Spoon into the muffin tray/cases.
  7. Bake for 14-16 minutes (12-14 minutes for smaller ones) - just keep checking that they're cooked but not burning.
  8. Wait until cooled to remove from paper cases or they’ll come out of a silicone muffin tray straight away.

Looks apprehensively at @BIWI 's big stick. I've just taken a box of falafel mix (total 95g carb) mixed with a beaten egg and some cheese and fried in olive oil. It made 28 mini falafels at 3.4g carb each. I would of course only have one or two in my salad or as a snack (and the rest would be gobbled up by the rest of the family gannets in minutes).

Thanks @BIWI I've got a spare pack of butter in the fridge, will
put some eggs in to chill too and try those, I bought some ground almonds just now.

Food today went well (complicated set of adult and children guests). We had almond muffins (made with olive oil) topped with smoked salmon and capers; prawn cocktail in lettuce cups; smoked mussels (just on their own); thai pork meatballs with herb and coconut yogurt dip; and some sausage rolls for dgc - although they ate everything else too.

And for once it was warm enough to eat in the garden.

Dinner will be cold chicken with fennel, cabbage and radish slaw

Food today was good

B- FFGY strawberries
L- pouched egg x2 bacon x2 avo and halloumi
D burger ina bowl, salad, gherkins, homemade burger sauce, it was delish!!

I'll have a snack later too

I am 700g away from being under 12st for the first time in at least 9 years 🤞.......... motivation to make sure I have all the water today (despite feeling horrendous after 2 glasses of 🍷last night) and stay on track for the rest of the weekend.
FFGY for breakfast, not sure about lunch as I've got errands to run for dad today and lots of other running around, then fish pie for tea. I make it with chorizo and spinach, the sauce with soft cheese and the topping from mashed cauliflower and broccoli - really looking forward to it 😍.

Hi all, I just had to share something with you that might make you smile. I started this woe later than most of you and I have just experienced something I have never experienced before. L was blue cheese omelette with raspberries (yeh, I know, but I like it) and I didn’t finish my plateful - I felt full - I have leftovers to put in the fridge! Ha!

I'm still not eating much although we are sharing a bottle of wine per night at the moment Blush

I had my first proper "sit down at the table" meal tonight for over a week: a "frothing butter" thick fillet steak from my dad's freezer and thyme with buttery mange-tout plus a bottle of red wine Blush

I did have 2 litres of water at the rugby club this afternoon, where ds was playing his first game of senior rugby for a year (he was only on the bench today because he hadn't felt up to doing training this week, despite having come back to Glasgow especially for training Sad). He got on for the 2nd half, even though he hasn't been at training so that's good (he is their best scrum half but accepted that he hasn't been at training).

His coach came up and introduced himself to me, saying his own grandfather had died recently so he understood how upsetting it was.... It's good that ds has such a supportive coach, especially as rugby is so important to him Wink

My dad would've been there to watch him play after a year out Sad

Well, first tray of the cheesy muffins @BIWI kindly posted the recipe for a few days ago are out of the oven and have received a thumbs up from DH (the DCs are both out might not be any left when they get home. They rose nicely.

Was at a friend's wedding yesterday. Only a couplle of miles away so walked there and walked home, plus lots of wild ceilidh dancing. However, the wedding breakfast was vegetarian indian - I had very small portions but everything was lentil or other pulses, potato, pakora... plus rice, naan etc. And the evening food was vegetarian sausage rolls and samosas (gave that a miss). There were multiple flavours of wedding cake - of which I had none.

Better day today since I'm in control.
Brunch: bacon and eggs, coffee with cream
D - salmon with lots of veg

Despite the carbs, sounds like a lovely wedding @venusandmars - and in the great scheme of things, if you didn't have the pastry/cake elements, probably not too bad. Especially with the walking and the dancing.

I've just realised that tomorrow sees the final Monday of this Bootcamp.
