@JazzyBBG there are some good bread substitutes out there. The Seriously Low Carb bread is very similar to "real bread" except the slices are smaller. I bought one of their mixes to try in the breadmaker but I haven't done it yet. The Seriously Low Carb rolls are excellent and big enough to make any kind of sandwich or roll or use as a burger bun. I buy a few packs and freeze them then defrost one roll in the fridge (all their bread has to be kept in the fridge) as needed. Asda sell Schneider Brot Protein Bread which has 4g carbs per 50g slice. I love it toasted and buttered with scrambled eggs or mushrooms fried in butter on top. It keeps for absolutely ages - the shelf life is months long - so I buy a few packs at once and keep them in the cupboard for when bread cravings hit.
The almond-cheese muffins are a good accompaniment to soup although they aren't allowed on the first two weeks of Bootcamp due to containing nuts. You mix 100g ground almonds with 30g cold butter. Then mix in three eggs that have been in the fridge (the batter has to be cold to make it rise when it hits the hot oven), 1 heaped teaspoon baking powder, oregano or chives (fresh if possible), salt and black pepper to taste, and a sprinkle of paprika or smoked paprika. Finally mix in 90g grated cheddar and spoon into 8 or 9 muffin cases and bake at 180C for 14 minutes. They won't come out of the muffin cases until they're cooled but if you want them straight from the oven you can use a silicone muffin tray or silicone cases and they'll come out while still warm. I keep the muffins in the fridge and half, toast and butter them as a snack or to go with soup. They're very calorific, about 250 calories each so they're great for filling you up.
For pizza, the best recipe I've found is Fathead pizza although, again it contains almonds so it isn't suitable for the first two weeks of Bootcamp. It's delicious and amazingly filling. Marks & Spencer used to sell a "meatzza" with a minced pork and beef crust that I've always meant to try to recreate but never got round to it. Portobello mushrooms are another popular low carb pizza base. I've never tried the cauliflower pizza crusts but they are popular with some Bootcampers.
For breakfast you're probably going to need to move away from bread! How about full-fat Greek yogurt? Or scrambled eggs? Or bacon and eggs?
I know you said you don't like lettuce but do you eat salad? You can minimise or leave out the lettuce. I like to put lots of different things in my salads: a few tomatoes, cucumbers, radish, spring onions, black olives, pepper etc. then dress with homemade vinaigrette (three quarters extra virgin olive oil to one quarter wine, cider or sherry vinegar plus salt, pepper, garlic pepper or powder, dried herbs and a little Dijon mustard to help it emulsify.)
