Week 5 - Leaving Lockdown Low Carb Bootcamp

Welcome to Week 5!

Here's the spreadsheet

Hopefully we can now put the horrible weeks 3 & 4 behind us, and get on with the serious job of shedding the pounds of fat Smile

By now, hopefully, low carbing eating should feel like it's the 'new normal', and you should be getting used to it. However, there's also the opposite danger, that you're seeing carbs creeping back into your menus.

This is a good time to take stock. Have a think about the things you've been eating over the last week and ask yourself if they are really 'in the spirit' of Bootcamp. Are you really keeping your carbs low, and focused mainly on vegetables and salad? Are you really eating enough fat? And, perhaps most importantly, are you drinking all the water?

From now on, you should see the scales move again - albeit that the weekly loss should be in the range of 1-2lbs a week (possibly more if you have a lot to lose).

I really hope that you are finding that you're settling into this WOE, and that you're enjoying the food, not feeling deprived, and are seeing the scales/tape measure reflect your commitment.

At the end of this week we will be half way through Bootcamp!

Afternoon all!!

I'm after some ideas for The Largest Red Cabbage in Aldi and it's friend, a slightly more normal proportioned white cabbage.......

I do coleslaw and put the white cabbage in the occasional stir fry but it will take me months to get through this behemoth. If I have cabbage with dinner I usually use sweetheart and just sweat it off with some garlic and occasionally bacon - would that work with the red and white option??

Any suggestions gratefully received!

ouchmyfeet · 12/05/2021 13:43

I use cabbage in a bake that @venusandmars suggested on the last bootcamp. I've made it with red, white and green cabbage and it's always tasty. I only have a screenshot:

Week 5 - Leaving Lockdown Low Carb Bootcamp
MotherBuckets · 12/05/2021 14:30

@Bestbees and @Timetobuckup thank you for your support to kids who are struggling, it's good to hear. I have mentioned before about my DD whose pre-covid social anxiety has morphed from something that made her a bit uncomfortable into an almighty cloud of horror. She developed a bad tic last October when it all kicked off, but thankfully it was short-lived. Although saying that she has only been in to school for 3 lessons in total this year so who knows if it will come back...

Her school are pretty laid back and have left her alone without hassling us, although we are trying a new plan of going in to the 'reintegration zone' for half an hour tomorrow afternoon so we'll see how that pans out. She is Y10 so who knows what will happen in her GCSEs but we'll worry about that another day.

Foodwise I am sticking to the plan and finding it so much easier than previous times thanks to you lot Smile
Going out to a friend's for tea on Friday so I offered to take a chicken breast pizza but she is making Hunter's chicken for me. The BBQ sauce might be a bit carby but it's still loads better than the wheat pizza I was expecting! And other friends coming to ours on Saturday so will a chicken and a lamb curry but have no rice or naan. Just more meaty curry for me Grin

Bestbees · 12/05/2021 15:00

That sounds really difficult @MotherBuckets. I am glad the school is supporting your dd.

@FusionChefGeoff firstly I find cabbage lasts basically forever in the fridge. I would maybe make a batch of spiced braised red cabbage and freeze in portions to have with roasts or sausages. White cabbage finely shredded and fried with cumin is a decent side for curry. You can also make a thoran: cabbage curry. Or fry up in a keto friendly version of okonomiyaki.

venusandmars · 12/05/2021 16:15

Oh, I feel so very puffed up with pride to have a recipe suggestion 'quoted' hears my mother's voice 'pride comes before a fall' Grin

@FusionChefGeoff I sometimes use cabbage to make a sort of kedgeree (cabbedgeree?) It happened first just before lockdown last year when everyone was panic buying and you couldn't get a cauliflower for love nor money. I make cabbage 'rice' in the food processor. Slice and fry an onion, add all the curry spices you like (curry powder, garam masala, fennel, fenugreek, cumin, coriander... ) then add the cabbage rice. Top with smoked haddock and chopped hard/soft boiled egg, add a handful of chopped parsley / coriander leaf.

I once made red cabbage soup. NOT recommended.

But I have roasted quarters of red cabbage succesfully. Just coat them in oil an

@FusionChefGeoff I am just sitting down to some pork belly with the last of my homemade pickled red cabbage. Make in a large jar and it keeps for ages.

Angliski · 12/05/2021 18:12

Ok I’m back in the game. Embryo now transferred so technically pupo- pregnant until proven otherwise!

I’ve struggled the last week I must admit. With bread and other non boot camp stuff.

B- sprouts butter eggs tomato tiny bit of soft cheese
L- fried aubergine and peppers, fish with mushrooms
D- thinking a steak and salad if I can get One.

nowlook · 12/05/2021 18:23

I've been thinking of you @Angliski, but didn't like to pry! I'll be keeping fingers and toes crossed.
MrsBertBibby · 12/05/2021 18:31

Oh fingers crossed Angliiski!

cheeseisthebest · 12/05/2021 18:33

Everything crossed for you

StuntNun · 12/05/2021 19:01

Just checking in with my food for the day.
B: (eaten at noon since I do 16:8) boiled eggs mashed with butter, almond cheese muffin
L: burgers with salad and coleslaw, one of DH's birthday chocolates
D: white fish in cream and butter sauce, celeriac and leek mash, green beans, large piece of cheddar for "dessert", glass of kefir

I've had a mild stomach ache since DH's low carb birthday cake on Saturday which confirms that artificial sweeteners are a really bad idea for me. I'm going to try and sort out my gut with kefir and bone broth for the next few days.

BestIsWest · 12/05/2021 19:04

Fingers crossed Angliski

Timetobuckup · 12/05/2021 19:04

@motherbuckets I am so sorry to hear how much your dd is struggling. However I am so pleased that the school is not piling the pressure on her. Her experience sadly is all too familiar. Fingers crossed things settle more once things open up more.

@Random789 I will stick to making pesto Grin

@Angliski that must be such an exciting/weird / terrifying feeling. All fingers and toes crossed here.

All ok here, work is still tough but lots of support around and I may be having a tiny wee gin.....

Moonswimmer · 12/05/2021 19:27

Fingers crossed @Angliski! Will be thinking of you. How are you feeling now?

B: leftover thai red curry
L: leftover roast turkey and salad
D: pumpkin soup with Thai flavours and bits of turkey in.

Can you tell I’ve been using up leftovers?

Angliski · 12/05/2021 19:48

@Moonswimmer pumpkin soup sounds lush. Recipe pleeease!

I feel ok. Bit lightheaded and a bit sick. There was a bit of a difficult choice to make unexpectedly that slightly knocked me but I feel quietly hopeful and in need of an early night. Steak is on and I’ve spinach red cabbage mushrooms and a fresh tomato to go with it! Yum.

Will catch up on thread in bed - look forward to hearing how you all got on this week!

Bestbees · 12/05/2021 19:50

@Angliski everything crossed for you.

I need the big stick. I ate a couple of pieces of some sushi and some kirimochi. My kids wanted to try them after seeing a video and I wanted to encourage them to try new things (they like them all!) I feel almost immediately bloated, which I am sure is psychological.

ListenLinda · 12/05/2021 20:16

Everything crossed for you @Angliski Flowers

Steak and tenderstem broccoli & asparagus for me tonight, steak was cooked perfectly too it was melt in the mouth good.

Just roasted two chicken thighs for lunch tomorrow to have with a salad.

Also realised that I had been buying 70% dark choc when doing my shop at aldi, picked up the 85% today and I hope I like it.

BIWI · 12/05/2021 20:34

Fingers and toes crossed for you @Angliski Flowers

Lovely dinner tonight - roast loin of pork, red cabbage braised in butter with cider vinegar, roasted broccoli with olive oil and ponzu dressing.

... except I got a shock when I discovered how carby the lemon ponzu dressing is!

Ordinary Kikkoman soy sauce is 3.2g carbs per 100g. So I assumed this one would also be low. Oh no. 23g bloody grams of carbs per 100g! Shock

It was lovely though!

Everything crossed for you @Angliski.

Food all good here except for feeling quite snacky again - it’s pure boredom so I’m resisting, so far

Thinnerlikeachickendinner · 12/05/2021 21:06

Very exciting and everything crossed for you @Angliski

Andi2020 · 12/05/2021 21:10

@Angliski hope all goes well Flowers

@MotherBuckets that is good that school not putting pressure on your dd.
Do they send her online learning to help for next year.

NigellaAwesome · 12/05/2021 21:23

On the Magimix talk - I have the compact 3100, which I keep in a low drawer. I find it is not as heavy as some of the others in terms of lifting it in and out. I've also worked out that it must be well over 20 years old and still going well. They are expensive but do last the course.

I use it for coleslaw, mayo, egg mayo and The Whole30 coriander and lime dressing. I tend to do a batch cook so that it minimises the amount of washing up / in and out of drawer faffing around.

The teen MH issue appears to be an epidemic. I have posted before about my DD's issues. Her arms are an absolute horror show because she has sliced them to bits - both of them, from wrist to uxter. It really distresses me seeing them as it seems such senseless destruction.

I'm still struggling to stick to things, but hoping that if I keep on the thread it will hopefully fall into place for me, and I'll be inspired by others' efforts. I hope that is ok?

NigellaAwesome · 12/05/2021 21:24

Oh, and good luck Angliski.
