April Leaving Lockdown Low Carb Bootcamp - week 1

BIWI · 11/04/2021 20:54

Welcome everyone!

Here, as ever, is the Spreadsheet of Fabulousness created and lovingly managed by the wonderful @AthelstaneTheUnready

Hopefully you should find that you're already on the spreadsheet - but if not, just add your name to the bottom of the list. Don't try to insert it in the right alphabetical place - Athelstane will do that for you. And don't touch the blue cells or try to enter any other data or comments!

For those that are new, each week I'll start a new chat thread, on Monday, and we'll start off with recording our weight.

However

You don't have to use your weight to measure your progress - and you don't have to be on the spreadsheet if you don't want to be. Instead, take your measurements each week (bust/upper arms/waist/hips/thighs), or find an item of clothing that's just too tight/small right now, and keep trying it on each week.

The rules of Bootcamp are on the tabs at the bottom of the spreadsheet - but here's a quick summary of the rules for the first two weeks:

  1. Eat three meals a day
  2. Avoid processed foods
  3. Eat lots of fat
  4. Make sure you're eating vegetables and salad with your food
  5. Be careful about dairy, apart from butter which is unlimited
  6. You must drink a minimum of 2 litres of water a day
  7. No alcohol
  8. No fruit
  9. No nuts/seeds
10. No sugar/artificial sweeteners

Make sure you have a really good read of the spreadsheet for the full detail of the rules. Also, check out the tabs at the bottom - there's a huge amount of information that will really help you, especially if you're new to low carbing/Bootcamp.

There's also a thread here of FAQs which should be helpful.

Some thread etiquette

The thread will move really quickly - especially at the beginning.

But please take the time to read everyone's posts, rather than just plopping on with your own comments/thoughts/questions. It's very frustrating when someone comes on to the thread to ask a question that's been posed and answered already!

Don't lurk!

I know that not everyone is confident about posting - and also that there are a lot of posters who are regular Bootcampers, and who know other Bootcampers. Please don't think this is a cliquey thread. It couldn't be further from the truth!

Everyone's views and experiences are welcome and valid, so jump in and post.

Any questions, please just post. Or PM me. There's always someone here who can help - and if I or they can't, then we can always find someone who can!

Above all, very good luck to everyone.

I very much hope that by the time we come to the end of these ten weeks, that we really are (as a country) completely ready to leave Lockdown well behind.

Wishing everyone all the luck Flowers

Morning everyone!

Dinner last night was delicious so sharing the recipe, tweaked from diet doctor.

Creamy fish casserole.
Fry up some onion/shallot and garlic.
In a casserole dish bung chunks of white fish (think this would work with any fish really, or even without it for a vege option) and some parboiled green veg such as sprouts/broc/cauli/green beans.
Into the onions stir couple of tbsp capers, tbsp of grainy mustard. Add a pot of double cream and a stock cube. Pour over the veg and fish and bake for 20 mins.

Plan for today is:
Swim (though annoyingly lost my goggles so will be a short one before my new ones arrive)
L roast turkey, celeriac hassleback, roast psb, coleslaw and salad
Long walk to burn it off
D probably green soup, or left overs.

Have a great day everyone Grin

Bestbees · 13/04/2021 07:11

@AWryGiraffe I sensed a lot of frustration in your post. Do you want to post your meals so that the experts can help? But also, is there a way of you feel good about yourself for the wedding that can be not about the number of the scales? Such as skin looking great because of the healthy food and all the water? I also wondered whether better meal planning could allow you 2/3 good meals a day rather than nibbling on cheese and creamy coffees. No veg! I do know that can be hard with small kids, but I know you wouldn't feed them like that, so why do we do it to ourselves! Ignore me if I am wrong an it is a one off, your post just struck me, and it is busy here and posts easily missed.

@Takingonthejellybelly welcome, you are not too late!

@OnceUponAMidnightBeery I am sure DH must have a very low carb count Grin

oscarandelliesdad · 13/04/2021 07:12

Morning all. I'm going to have a bash at that fish casserole tonight @Bestbees. Trying to eat through my freezer. Does any e have any way to make frozen broccoli nice? I found a pack lurking. Perhaps creating a pall of mild.. discomfort for the kids if not the real feat of that sinister, thumb slicing knifeGrin
B- boiled eggs, mashed with butter and wrapped in lettuce
L- tuna salad
D - Best Bee's fish casserole

Bestbees · 13/04/2021 07:18

Stick the frozen broc in the casserole @oscarandelliesdad sure it will be fine. I would defrost and drain first though. Otherwise use for soup?

nowlook · 13/04/2021 07:30

Ooh it's your turkey lunch today Bestbees Please report back on the hasselback celeriac.

I once inadvertently made frozen broccoli better by leaving the open packet out on the worktop in direct sunlight for most of the day @oscarandelliesdad. Experience suggests that my method works less well with prawns.

AthelstaneTheUnready · 13/04/2021 07:39

Another one nicking @Bestbees fish idea! Did you hydrate the stockcube, or just crumble it?

Also have a freezer containing elderly packets Blush

VeryLittleOwl · 13/04/2021 07:48

Thank you @oscarandelliesdad I hadn't come across that before.

Thanks everyone for the kind comments on the photos - hopefully in 10 weeks' time you'll all have a similar set :)

Bestbees · 13/04/2021 07:51

@AthelstaneTheUnready just crumbled. I did add a splash of water as well as it looked a touch dry so I guess you could hydrate but in a strong concentration!

Ineverdidmind · 13/04/2021 07:58

Hi, I have just requested access to the spreadsheet as I was unable to view it.

Random789 · 13/04/2021 08:17

Morning. I've realised that my multiple milky morning coffees are easy to avoid if I simply ... have breakfast. Something different and healthier to console myself with at the beginning of the day.

I had two eggs scrambled with fried mushrooms and rocket leaves and a gloop of mascarpone. I feel that I only have the vaguest idea of the foods that are best to eat, but I hope that I will gain some benefit by stumbling in roughly the right direction, and then gradually build up knowledge as I go.
Now I have to face the horror of drinking water first thing. I suppose I will eventually get used to that Envy.

No idea what I will eat later. I want to psyche myself toward meal planning but these days I find it hard even to walk from one room to another and remember why, so planning feels like a mountain to climb.

nowlook · 13/04/2021 08:25

Well, for saying you only have the "vaguest idea" what you're doing, that breakfast looks fine and dandy to me @Random789 Grin

What have you got in? Lots of people here very happy to help with meal planning. I'd have had nowt but omelettes if it weren't for the other posters Grin

debka · 13/04/2021 08:29

Good morning all.
@Random789 I find thinking about/planning meals an absolute chore. My solution has been to eat the same thing every day. Well, the same for breakfast and lunch, different dinners. Means the boring boring thinking is eliminated, apart from the evening meals, but DP and I do a weekly meal plan, so even that is minimised.
Breakfast: bacon and egg
Lunch: salad with homemade coleslaw and cheese
Dinner: pork loin chops with swede mash and FLGV

Bestbees · 13/04/2021 08:31

@Random789 great breakfast! In terms of not being sure what to eat I think it is pretty easy:
Meat
Fish
Eggs
Green veg
Other veg that's above ground I. E. Peppers but watch amounts
Dairy
Oils

Avoid anything processed. I try to follow a few ingredients as possible methods aka make sure my meals are based on whole foods so unprocessed meat, oil and veg.

If in doubt ask!

MrsKoala · 13/04/2021 08:33

@MrsOmelette it’s quite a fun old fashioned cook book. I’m a recipe book collector, I like reading them in bed, I have hundreds, before this lockdown I gave about 100 to the charity bookshop here, I expect when the shop is open again I will buy some of them back without realising Blush

WRT good recipe books for HFLC I’ve found the majority of LC/keto/paleo books aren’t great. What I think are best are traditional cookbooks which have lamb/beef/chicken/game/fish/egg sections. These usually have a focus on a rich protein heavy meal which just say at the end ‘serve with rice/mash/pasta’. Then you can just ignore that bit and do veg instead. I particularly like (older chefs who cook this way) Rick Stein’s Venice to Istanbul and Delia work well and also slow cooker recipe books are very ‘meat as main attraction’ heavy.

One of my favourite recipes when not low carbing is Delia’s chicken basque style but it has brown rice in it. I’m going to try to try my own version with all the same flavours as a tray bake and add cauliflower rice to cook through at the end.

Bestbees · 13/04/2021 08:33

Also, in terms of meal planning I find sitting down with a piece of paper and the recipe threads and diet doctor website is great. Write down all the meals that look good to you, then you have a list to pick from. In terms of dinners I try to say have:
1 fish
1 vegetarian
1 vegan
4 meat
A week. Lunches: left overs? Batch cook soups?

prettybird · 13/04/2021 08:38

We had a lovely cheeseburger pie last night - recipe in the pinned beef etc recipe thread. I've adapted the recipe slightly: I blitz shallots with carrots and leek as well as mushrooms in the food processor (even though I dislike mushrooms but blitzed I can't tell they're in there and they just add to the richness) before frying off the resultant mush with the mince. That way I'm adding to the veg count of the dish Smile. I add a generous quantity of Worcestershire sauce (a bit more than the recipe suggests).

Made a double quantity so we had a large portion each hot last night and I'll probably heat it up again tonight before freezing the rest in individual portions to be eaten hot or cold. That is, if dh doesn't nibble at the cold dish before I get a chance to put it away Grin

almahart · 13/04/2021 08:42

So happy to be back in the boot camp fold!

I lost almost a stone and a half last BC, still have half a stone it so to go.

Delicious meal last night of venison steak, celeriac mash and cabbage. Drinking all the water today.

ChangingFi · 13/04/2021 08:42

Thanks BIWI 😊
Joining for the first time and have just turned 60 and can't wear my jeans comfortably. I have put on over a stone in the last year and was overweight before that. Need to do this! Thanks for the fasting advice I missed breakfast yesterday due to meetings at work and managed and thought it would be a good strategy but will take your advice BIWI.
Good luck everyone

BIWI · 13/04/2021 08:57

Sorry for absence yesterday. The whole suspension/reinstatement thing quite discombobulated me, and frankly, rather put me off posting.

Anyway, I'm over that, so here we go. Again, a mega post to reply to lots of people!

@Xiaohei/小黑 I've been learning Mandarin for a while now, so I realised it must be something Chinese! But why did you choose that as a name? What's the story?

@Mistywillow17 welcome! I'm pretty sure that you're not the only one who had a dreadful lockdown (or two)! Thank goodness my DC are adults now and we didn't have to endure home schooling. This Bootcamp has been timed to end precisely at the time (hopefully) that we see all restrictions end in June, so stick with it and you should be able to lose a good chunk of that weight

@gillyweed it's really hard to eat too much fat! And certainly you shouldn't be thinking of trying to cut it down on this WOE. Remember - it's the carbs that make us fat, not the fat. Make sure you're really following Bootcamp rules - really scrutinise the foods that you're buying/eating and consider how much carbohydrate you're eating. If you're concerned, or weight loss remains slow, post your meals over a 3-4 day period and let's see if we can identify anything

@Timetobuckup

Any tips for a newbie with 4 stone to lose?

Yes! Follow Bootcamp rules. To the letter! You won't lose 4 stones in the next ten weeks (I'd be a millionaire if I could help you do that!), but you can expect to see a good proportion of that go. If you follow the rules/don't cheat, I'd be confident that you could lose at least a stone.

@Oneborneverydecade Grin you and @debka can keep each other going then - great to have a bit of competition! Seriously though, you did so well last time I'm sure you'll hit your target this time around too.

I'm ignoring, this time, the apple crumble but will be keeping my beady eyes out for further indiscretions

@oscarandelliesdad how do you feel about your future life in Dubai though? I can quite understand you want your family to be together, but will your life not be subject to a lot of restrictions? Not jealous of the sunshine at all

@Hotgotthetrots welcome! I'm a fan of the Fast800. But remember, it's an approach that's more about calories than carbs - and we don't count calories on Bootcamp. Looking at your menu it does look as if you're not eating very much/you're still thinking about calories.

Also, although they talk about being low carb, the plan is really lower rather than low carb - so things that are allowed there aren't allowed on Bootcamp, e.g. pulses in particular. That said, there are some lovely recipes in their two cookbooks which can work well on Bootcamp, especially if you add a bit more fat. Both of your main protein choices are pretty low in fat, so bear this in mind.

I have already posted about tomatoes, so go back up the thread and have a read about that. Generally they're fine.

(Grin at natural wee!)

@Random789

To answer your specific questions:

How to cope without vats of milky coffee

I'm afraid from a carb point of view, these really aren't allowed. So your alternatives are:

  • black coffee, if you can stand it - you may find you get used to it after a while
  • try using double cream instead - you don't need very much to make the coffee super creamy
  • try almond milk or another plant-based milk (not oat milk though, as that's way too carby) and see if that works (it doesn't do it for me, but it's always worth a try!)
  • limit yourself to one milky coffee a day - probably the first one you have, as that's always the best coffee of the day!

Not understanding dairy. I don't have a grasp of whether/when/which dairy is ok

This one is more difficult to be prescriptive about. You may find that you're fine with dairy - it doesn't affect everyone, so it's a bit trial and error.

There are two issues with dairy - the first is that it can add quite a lot of carbs, especially milk and yoghurt. Second, although it's very good for us from a fat point of view, you can easily get a lot/too many calories from it. And having said that we don't count calories on Bootcamp, we still need to be mindful that this doesn't mean we can gorge ourselves! This is the reason, I think, that Atkins restricts cheese to no more than 4oz per day.

That said, just see what happens. Often, when people complain that they're not losing, or their rate of loss has slowed right down, it seems to be because they're eating dairy at every meal - so be aware that this can be a problem for some

How perfectionist to be about the little things. Eg I sneaked a spoonful of factory-made bearnaise sauce into my salad to liven it up, but it probably has sugar and other nasties in it. Is it best to be full-on puritan or to make little compromises that offer consolation and ease the path?

To start with, and especially in these first two weeks, I'd be super vigilant. Check the labels on anything manufactured that you're buying. You're looking in particular for sugar, but also processed/unnecessary ingredients. Remember that this WOE is about fresh, natural foods as much as is practically possible.

A lot of this is also about opening our eyes to what's actually in our food. You'll be amazed at how many foods have sugar in them, where it would seem totally unnecessary. (And of course, for us, it is worse than unnecessary, as it will be adding carbs into our day that we simply don't want!). I was horrified to discover that my jar of Chinese Five Spice had sugar in it, for example! Not all brands are the same, so that's why you need to be hyper-vigilant.

@JimmyJabs yes, if you're hungry mid-afternoon, that would suggest that a) you're not eating enough and/or b) you haven't had enough fat. That said, in these first two weeks while we're adjusting to a new WOE there will be times when you may find yourself hungry, in which case cheese is a perfect low carb snack (as long as it's not the whole pack, obviously Wink)

The headache also sounds like it could be carb flu - look out for a post from me later about that.

@Chunkymonkey123 you make a great point about eating out of habit. Because of our 'recommended' high carb diets, we're used to being hungry at certain points of the day - typically around 11am and 3pm - and so snacking has become something we expect to do, and plan for. But when you move to low carbing, you'll find that your appetite is naturally reduced - this is because your blood sugar levels will be much more balanced. So snacking isn't necessary. But because it's become a habit, we still want to do it!

@blackbettybramblejam I'm sorry, but I'm not so sure you've had a great first day! Sorry to get The Big Stick out so early, but a couple of things:

  • where is your breakfast? First two weeks of Bootcamp you need to have something other than coffee
  • that onion soup really wasn't a good idea; half of it would have been OK, but not all of it

I hear what you say about 'intuitive eating' - for me, that means all manner of things which I know aren't doing me any good and which will only lead to weight gain!

@AWryGiraffe

Sounds like carb creep is definitely a problem - 'a few creamy coffees' could easily be adding too many carbs to your day. Go back to basics - really read Bootcamp rules and plan some strict days to get you back on track.

Right. That's dealt with yesterday's posts, now to move on to this morning's!

Welcome ChangingFi Thanks I turned 60 last week Smile

I was in the middle of writing a long post describing my successful low carb journey, with its ups and downs, when my phone decided to shut the app down Angry but suffice to say that from a high point of 14st 13lb 4 years ago, I got to 11st 1.75lb for my birthday Smile will draw a veil over the fact that yesterday, less than a week later I was 11st 11lb again Hmm I lost 2 stone in the May 17 Boot Camp Shock

Today I'm 11st 10lb. Smile For context, I'm 5'5.5" tall (that half inch makes all the difference when calculating BMI Wink)

Objective this Boot Camp is to get to a normal BMI. About a stone away.

StuntNun · 13/04/2021 09:06

@Random789 if you're just starting out with low carb then don't worry too much about dairy, just make sure it's full fat. The most common issue with dairy is where people have multiple creamy coffees throughout the day or start swigging cream straight from the pot. Dairy is a high fat food but it isn't all that low carb and it's extremely calorific so it doesn't take much to erase your weight loss. The protein in dairy is hyperinsulinogenic which means some people produce too much insulin in response to dairy. This then has a knock on effect on your blood glucose levels causing hunger and/or cravings. Since it's the protein that causes these issues, the more broken down the protein in the food is, the better. So milk is most likely to cause problems, hard cheese is least likely to be an issue. Cream, yogurt and soft creamy cheeses/cottage cheese come somewhere in the middle. If you feel that dairy might be an issue for you, for example your weight loss starts well but then stalls for several weeks, then I recommend limiting dairy to at most once or twice a day. It's also better if you eat dairy products as part of a meal. So if you really love your creamy coffee then have it for "dessert" rather than for breakfast.

Jellycatspyjamas · 13/04/2021 09:19

One of my favourite recipes when not low carbing is Delia’s chicken basque style but it has brown rice in it. I’m going to try to try my own version with all the same flavours as a tray bake and add cauliflower rice to cook through at the end.

I love this recipe too, what’s worked well for me on low carb is to make it as it stands but to reduce the liquid by half (to account for the stock that would be absorbed by the rice) and then serve it with tender stem broccoli. I also use chicken thighs instead of chicken breast.

I also made a masaman curry last night, the recipe called for potatoes to be cooked in the sauce, instead I made the sauce and added some broccoli and cauliflower 10 mins before the end to cook through. Really nice - the kids even ate it, so that’s a winner.

BIWI · 13/04/2021 09:22

@50FootWave

I see others have picked up on this - but you need a new dinner! For a start, raspberries aren't allowed in the first two weeks of Bootcamp, but also that doesn't sound like much of a meal. Remember, this WOE isn't about deprivation.

You also need more water - check out rule 6 - for your weight, you should be drinking 3 litres per day

@Takingonthejellybelly how could you miss the thread if you're here, posting on it?! Grin Welcome.

@oscarandelliesdad I've found that frozen broccoli works well if you fry it. I'd sauté 2-3 sliced shallots in some olive oil and butter first, to soften them, (possibly with some garlic and chilli if you/the kids like that) then add the broccoli (frozen - no need to cook it first) and continue to sauté till it's cooked/softened/browned enough for your taste. Season well with sea salt and freshly ground black pepper. You could also serve with a handful of grated cheese over the top.

@Random789 for help with inspiration/meal planning, go and check out the recipe threads which are all stickied at the top of the Low Carb Bootcamp topic. Planning ahead is really important on this WOE and will help you to keep focused/stick to it.

We had chicken Alfredo last night , I’d forgotten how delicious it is ( and I couldn’t eat the last bit of chicken as I was full )
I’ve attached the link .
We had chicken breast ( as DD doesn’t like chicken thighs ) and I don’t parcook the cauli and spinach , just chuck it all in like a tray bake
