Low Carb Bootcamp - Week 8 - the last three weeks!

BIWI · 08/03/2021 07:45

Morning all.

The Spreadsheet of Fabulousness

Hope it's been a good week - lots of challenges going on! I challenged myself to cook something different with cauliflower yesterday as I was getting bored of the same old same old, and so found a recipe for Bang Bang cauliflower, which I adapted slightly to make it more low carb friendly. I shall post that later.

In the meantime, I hope that the scales or the measuring tape have been kind to you!

Here's to a good next week. Remember we only have three left, so if things are slacking a bit, time to get stricter again.

@cheeseisthebest that's probably healthier than my pork belly addiction!

DH made bolognese for dinner and did me courgette fried in butter with it. He is doing quite well at my LC dinners! We're out of aubergine though so no aubergine lasagne tomorrow, unless I go to the nearest town and hunt some down. I doubt the village shop sells them and I'll be home too late from work to get them.
I had leftover moussaka again for lunch today though so thats three days in a row. I don't really need a very similar meal again tomorrow. Except DH makes the best LC cheese sauce (he puts goats cheese in it!).

cheeseisthebest · 12/03/2021 21:33

Oh I love goats cheese!

A weird couple of days food wise, with commitments from 12 -4, so brunch and dinner. I find that a challenge - I can manage 16:8 fasting and go without breakfast fine, then lunch to dinner is not too long. But brunch and dinner has me feeling hungry and munchy at 4.30 / 5pm which is NOT good, given that dh has a fully stocked snack cupboard. I'm trying to drink water instead, or go for a walk, but it doesn't always work and I snaffled at least 6 of dh's crisps today... Though avoided dipping them in his hummus.

Today I had:
Brunch - coffee with cream, boiled eggs mashed with butter
6 crisps
Dinner - peri peri chicken, broccoli, butter

That's almost no veg compared to my usual. I know that overall a balanced diet is balanced over days not moments, but still...

Tomorrow is a complicated day with a visit to frail PILs. Fortunately I take the food so it's somewhat within my control. However, dh and I are in the midst of an online challenge competition so we have an early start [what on earth am I doing still up at this time???]

Dh's packed breakfast is pancakes and bananas, my packed breakfast is slices of buttered cheese, ham, cucumber, lettuce.

Lunch is a lovely fish stew (cod, salmon, mussels, prawns in a homemade langoustine bisque full of butter and cream), accompanied by cauliflower cheese and cabbage.

Then there's a chocolate mousse (70% chocolate, eggs, a wee bit of Cointreau), some cream and a few raspberries.

Dinner will be green veg soup.

That's a much better day. Plus the challenge will probably result in 20,000 - 30,000 steps.

BustleInYourHedgerow · 13/03/2021 02:01

B: scrambled eggs and an avocado
L: 1 slice soda bread with cup of tea with cream
D: garlic and parmesan chicken wings with green salad
Yoghurt and berries.

MrsOmelette · 13/03/2021 06:28

Shopping today, good as I ended up having cheese & mustard for dinner last night as nothing suitable in.
L - chicken tikka salad
D - beef goulash

ditavonteesed · 13/03/2021 06:56

Trying to catch up quickly, will defiantly avoid artichokes. Weird I have never eaten them just don't seem appealing.
I did go off plan for dds birthday in a very calculated way had sushi.

Put me back for a couple of days but weight is now going down again.

I have fallen out with earrings. So yesterday around 5am I was getting ready for work, in putting my glasses on I knocked an earring out. However on trying to catch it I knocked the back down my ear canal. Couldn't feel it. I rushed into work as I had no idea what to do. Colleagues said no choice but to go to a&e. Luckily they were able to fast track me through a&e and I was back at work only 15 minutes late and very embarrassed. So at 6 am I was getting an earring back fished out of my ear canal by a very lovely dr. The a&e staff were lovely and I was so embarrassed, they said it was the least embarrassing thing they had seen that morning and were very kind.

ditavonteesed · 13/03/2021 07:00

Then matron came to see me to check I'd got back ok and commented on how much weight I've lost and said I look fabulous and I'll have to get new uniforms. So that was nice.

Jollyholibobs · 13/03/2021 07:38

@venusandmars your fish stew sounds amazing.

Doilooklikeatourist · 13/03/2021 08:35

How are you this morning ( after the jab ) @Justcallmecaptainobvious?
I have a slightly achy arm , otherwise as right as rain
I’ve been cheated !

Justcallmecaptainobvious · 13/03/2021 09:05

@ditavonteesed what a start to the day! Nice comments though.

@Doilooklikeatourist same here, arm is achy and I definitely feel it every time my 3 year crashes in to it, but no more than that.

prettybird · 13/03/2021 09:14

Dh (61) is getting his jag this afternoon. I've still not had my letter in its distinctive blue envelope Sad

EarlGreyHot · 13/03/2021 09:55

venusandmars I'm drooling over your fish in langoustine bisque! We had fish stew from the recipe threads a few days ago but customised slightly to add in cream as well as creme fraiche and used leftover celeriac mash which had lots of cream and cheese in it. It was so so good. Of course the DC turned up their noses but it meant there was enough leftover for lunch yesterday.

Has anyone tried the seriously low carb hot cross buns? I'm adding them to my next subscription but it's not coming til week after next...

EarlGreyHot · 13/03/2021 09:57

Slightly envious of all you blessed of boob posters. It's always the first place I lose weight and there's such a lack of fullness at the top so will need some serious engineering to get cleavage back again Sad

ditavonteesed · 13/03/2021 09:58

Someone just posted on Facebook prosciutto egg cups, they look delicious so I'm going to try them later, will report back

cheeseisthebest · 13/03/2021 10:05

Morning everyone. Just tried on a dress
I bought a few weeks ago and love it! My waist is so much more defined than it was in jan.

Jellycatspyjamas · 13/03/2021 10:35

@EarlGreyHot I’ve had some delivered this morning so will have one at some point over the weekend and report back. I’m enjoying a bacon roll this morning - the rolls are fantastic, I’d use brown bread usually and they just taste and feel like a “normal” roll. I don’t miss potatoes, rice, pasta, biscuits, sweets etc on this way of eating but I do really miss bread - a slice of toast for breakfast or a bacon roll. This will make things so much easier for me.

NotwatchingSpooks · 13/03/2021 10:41

@ditavonteesed what a start to the day so glad they got you sorted, fab comments and a great nsv to get new uniforms.

@prettybird if you go on the website you should be able to book online now

Hurrah I am 1 lb down again and have been for 2 days, I'm really hoping that my ping pong pounds are going to stay off this time.

We are having a bit of a sort out at home and what started with a new carpet in our bedroom has turned into a redecorate of a third of the house and a rethink of how we use some rooms. Its not something that I find easy so am having to think quite hard about it all. Currently trying to decide on a sofa bed for the spare room, so if anyone has a sofa bed they would happily sleep on please let me know.

The irony of this is that said sofa bed will be slept on by my inlaws, but they have the most uncomfortable guest beds and sofa bed that I have ever slept on, father in law proudly announced they had got the beds for £100 each once, no shit I thought and then spent about £200 on physio and vowed to not sleep there again !, just to say the bed that they have for themselves was V spring, so its not about finances. So my search is for a sofa bed that I would be happy to sleep on, which is all online as none of the shops are open.

Today
B greek yogurt
L Soup
D Fajita bowls, with leftover steak and chicken, hoping will be quick easy and tasty

prettybird · 13/03/2021 10:58

Spooks - I'm in Scotland, so we don't have that route of getting a jag. Technically, I'm not yet in the priority category to get it, but it should be coming soon. Smile

Dh only got his letter at the start of the week for today's appointment. Ironically, if I don't get it in the next 3 weeks, I'll be over due as I'll then have gone into the "Over 60s" group. Shock

But I'm hopeful I'll get it before then.

Here's today's earring picture: a present from my lovely SIL. Thanks

EarlGreyHot · 13/03/2021 11:41

@Jellycatspyjamas looking forward to your review on the buns! I agree on the bread and rolls - they're a game changer here and make this woe seem infinitely doable. I've also had a bacon butty this morning with loads of butter!

ZiggZagg · 13/03/2021 11:53

I've just had eggs and lots of butter on a SLCR, couldn't face any avocado today (I always but it but it ends up getting binned!) I want to like it but I just don't!

@RagzReturnsRebooted dirty fries for Dinner tonight 🤤

cheeseisthebest · 13/03/2021 11:56

Beautiful earrings!
I have a monthly delivery of the low carb bread, can I add to my order for hot cross buns?

Ninkanink · 13/03/2021 11:56

There’s been one review on the hot cross buns already (might’ve been @StuntNun?) which was a thumbs up.

Pleaseandthankyou · 13/03/2021 12:42

I’ve had the hot cross buns. I think they are fantastic but I love hot cross buns. Someone on the other thread didn’t like them. Someone else suggested eating them with cheese so I have been filling them with Brie and having them for breakfast.

prettybird · 13/03/2021 12:47

@ShagMeRiggins - I have belatedly sent you a PM Blush
