2020 Pre-Christmas Low Carb Bootcamp. The first week!

Welcome all.

Well what a strange year this has been! If you're anything like me, food, meals and eating have been all over the place. And that's before we think about the booze.

I found lockdown an odd mix of feeling like I was on holiday but it was also the end of the world. So what was the point of worrying about my diet?

I am lucky, relatively, in that we don't have small children to worry about educating. We also have a nice house and garden, and as me and DH have recently retired, don't have to worry about work. So we were very much advantaged over many people.

But still, the diet/drinking was all to pot. And with the inevitable result.

So we're now in the run up to Christmas - traditionally a time when diets go out of the window, and we start to indulge ourselves. Who knows what's going to happen this year though?!

So with that in mind, it's a good time to try and be focused and aim to have a bit of discipline! This Bootcamp, as with most others, will last for 10 weeks, which will take us right up to Christmas week.

(I truly hope that we'll all be able to spend Christmas with our loved ones, but who knows?)

You should find that you're on the spreadsheet. A couple of things:

  • if you don't want to record your weight every week, that's absolutely fine. Just don't do it!
  • if you're not on it, just add your name to the bottom - don't try and re-alphabatize it - we'll sort it out later

The spreadsheet isn't just a place to record your weight though - have a good look at it, and the tabs - there's loads of information on there, including a veg carb counter and lots of stuff about low carbing in general. You'll also find Bootcamp rules there.

Has anyone had their cholesterol tested? Does this WOE improve it?
Not myself personally, but my sister’s reduced quite dramatically, and I know a few people on this thread and others have seen either an improvement or it stayed in the normal, heathy range.

Anotherducker cholesterol often increases a little when you go low carb however the theory is that it's due to the particle size increasing so you're moving from the (dangerous) small dense LDL to the (healthy) large buoyant LDL particles. Regardless, triglycerides (that's the amount of free fat in the blood) usually drop dramatically so your overall blood lipid levels become much better. My total and LDL cholesterol both increased a small amount but my triglycerides went through the floor. If you're worried then ask you GP for a lipid profile and make sure you get all the results. Sometimes they fob you off with just the total cholesterol level but that's worse than useless as it can be high because you have a high HDL level - which is the 'good' cholesterol. To remember which is which, HDL is "happy" and LDL is "lousy." If anyone really wants to know I can dig out my last few blood tests to get the exact numbers.

@StuntNun thanks for that. I’ve just read about it from a diet doctor link on here too. And it said similar. Although a small percentage of people can have an increase usually it’s beneficial.

I just had mine checked. I have FH (genetically high cholesterol) and my results showed all readings were in the normal range. And I'm terrible for remembering my statins!! I've been doing low carb for a few weeks and did a fat fast too so had super high fat food for 3 days. I was pleasantly surprised as I thought it wouldve shot back up Smile

I'm trying to have a dairy free day today, dinner will be chicken breasts (I know! I forgot to buy skin on!). What can I do to get the fat content up? I have veg I could butter and mayo and mustard (wholegrain and dijon) in the fridge.
Pepper sauce with cream is the only sauce (apart from gravy) I know how to make but will try anything.

I was going to suggest a suitable cheese (eg Boursin, cream cheese, mozzarella or feta) to stuff the breast with but then I noticed you were trying to have a dairy free day.

How about butter (doesn't count as dairy Wink) with loads of garlic? A sort of "naked" chicken Kiev?

Pretty dull food day for me:
B: two boiled eggs mid morning
L: Tuna Mayo salad; yogurt
D: some hm pate on celery followed by courgetti bolognese made with beef and pork mince. Sprinkle of Parmesan.

Must get some sparkling water or similar to liven up my Saturday night! Must keep the water up all weekend generally. At least with a newly potty trained DS I need a loo nearby at all times anyway Grin

Trying BIWI's recommended beef rendang in the slow cooker tomorrow and out on the hunt for cauli rice as I love the convenience of the frozen stuff. I split the bag open and sauté from frozen in a pan of butter or coconut oil BTW; microwaving is definitely not optimal for taste!

Not one that is low in carbs. Have you tried making your own? @BIWI (I think!) put a great recipe up thread. If you whizz in a clove of garlic and some lemon juice it is divine.

To roast brussel sprouts, do I just put in a baking dish, blob of butter and season with salt and pepper? Roughly how long do they take to cook? (Frozen) I really like the sound of roasted sprouts.

No! Honestly, please don't go down that track. It's all full fat on Bootcamp.

What is it you don't like about full fat mayo? Perhaps we can help with an alternative?

22 years is very good going stuntnun. I've only been married 5 years (but we've been together 14 years).

My dinner was a chicken stir fry with tons of veg. Lovely. And feeling quite happily full now. We're having a film night tonight and would normally have crisps and/or popcorn and/or sweets, but I'm just drinking my water. Dd and dh have all the snacks.

Wow, happy anniversary in advance, stuntnun! Adding my voice to the votes of thanks to you, BIWI and Athelstane.

My day got turned upside down, so lunch ended up being rollitos in Tesco's car park (and I am SO glad that my local one has started selling them in the last fortnight!) and then lovely leftover chicken kebab for supper, this time with added mayonnaise. I was still hungry after demolishing the other half of the field shelter this afternoon, so when DH didn't finish his curry I nicked all the remaining chicken out of it. Rice went in the bin though.

We do, though, have a Bar & Block

Only problem is that they make the most fabulous chips, triple cooked and fried in beef dripping. So very hard to resist!
