Morning all!

I love this week. It's my favourite week of the whole Bootcamp, because it's when people are finally convinced that it works!

And already I see some great losses - yes @TightPants that really can be true. No your scales aren't wrong, and presumably you'll be changing your name very soon?!

Waitrose have frozen diced celeriac on special offer at the moment. Good news for me as I'm too cack-handed to be trusted with peeling and chopping a celeriac.

Now wondering how I can get myself over to Waitrose 🤔 I'm all about using as little energy as possible (to be fair atm staying upright is hard going so the easier the better as far as I'm concerned..plus..I'm lazy 😁)

I've never had celeriac, what does it taste like?

It smells a bit of celery when you're chopping it up - but I don't like celery and I do like celeriac Confused

It's quite a bland flavour (that's unfair on it) so roasting it enough so that it caramelises is good or adding/infusing other flavours works well Smile

Thank you @prettybird. I'll give it a bash. I'm glad after mentioning it smells like celery, you said you don't like celery. Neither do I. But I'll buy some and try it.

celariac is still pretty high carbs though isnt it? half as much as potato or so?

Im planning a celariac and parmesan rosti to go with a roast dinner on saturday. hopefully i can get hold of one tomorrow!

I don't like celery either, but I really look forward to celeriac. It takes the place of potato or sweet potato so well.
High in minerals too. And TMI, but if you're feeling constipated it works almost instantly Blush

Evening all, I'm loving all the recipes. Had another tempting day today, pizza for lunch for kids and friends kids, then ah brought muffins... I avoided though!
I weighed myself this morning and was astounded to see another 2lbs gone!
B coffee with coconut cream, this is a real treat now
L more cauli crust quiche, lettuce, cheese and salami
Snack, some salami and cheese when everyone else was eating muffins.
D. Pork belly greens and stuffed mushroom
Have not drunk enough water at all, trying to catch up now a bit. Just really struggling with it.
Has anyone got any links to the science behind this WOE? I find it all very interesting.

cerealkiller - if you look on the veg carb counter tab on the Spreadsheet of Fabulousness, celeriac is listed at 2.3g per 100 of carbs, whereas potatoes are 19.6. So fill your boots Grin

Well week 2 is going proper tits up. Breakfast Monday was OK, felt ropey so had a couple of babybel for lunch & tea. Tummy bug kicked in. Ate 3 digestive biscuits on Tuesday, nothing at all yesterday apart from rehydration sachets, tin of chicken soup today for lunch and plain boiled potatoes for tea. Think I'm over the worst, will see what happens from here, but might do another first week next week if that makes sense.

We haven't had many technical questions so far this Bootcamp. This way of eating works by dramatically lowering insulin levels. When insulin levels are high, fat cells hold on to their fat stores. When insulin levels are low, fat flows freely out of fat cells into the circulation. Insulin levels rise in response to carbohydrates in the diet so we keep insulin levels low by reducing our carb intake. Once we have used up they carbohydrate we have stored in the liver as glycogen the body adapts to primarily using fat as a fuel source instead of carbs. Since there is an ample supply of fat available our appetite naturally drops creating a calorie-deficit without hunger. If you follow the Bootcamp rules you can reasonably expect to lose 1-2lb per week on average. Your weight will not drop every week; it may even go up some weeks, and it is normal for it to stay the same for several weeks in a row. It is only when you look back on your weight loss over a period of months that the downward trend is really obvious.

Made celeriac oven chips this evening , first few were lovely , then the taste got a bit overpowering
Will try a a bubble and squeak type thing with some Brussel sprouts tomorrow
B bacon , mushroom and cheese omelette
L smoked salmon and half an avocado
D pork chop , aubergines, courgette and creamy tomato, with celeriac oven chips
Really want a glass of wine , but I’m going to try the pinch of salt and water trick again , as that worked well last night

Thanks all, I've been looking at the spreadsheet ob my phone so missed that tab! That's really interesting. So the strict first two weeks, of we were to introduce sugar/Carbs in that time, even just a bit, would that stop the process of using up the glycogen and mean we are starting from scratch as it were? It's really fascinating. Also, why all the water? Sorry I'll get the laptop out in a mo and look properly at that spreadsheet! Blush

It’s great to see everyone doing so well. The celeriac suggestions sound good I’ll need to add it to my shopping list.

Possibly a wee bit carby tonight as there was red onion and peppers in my chicken dish but I was already doing two different meals to suit the fussy ones and I couldn’t face doing another version. I did serve mine with cauliflower rice though.
B. Greek yogurt, coffee with cream
L. Pate salad with avocado and mayo
D. Curry in a hurry fried cauliflower rice
S. Coffee with cream.

DoIlooklikeatourist I don't like celeriac chips either, which is weird because I actually do like celery. But when it's boiled and mashed the flavour is milder and it's much more like mashed potato than you would expect.

Youcantscareme it's really important to keep carbs low during the first couple of weeks to allow the adaptation to fat-burning to happen. That's why the Bootcamp rules are more strict for the first two weeks then you have the option of relaxing them and introducing more carbs on Bootcamp Light. Drinking plenty of water is necessary for several reasons: it reduces water retention; it helps to prevent constipation; the kidneys release more water into the urine when insulin levels are low and this needs to be replaced; it flushes excess ketones from the body which increases weight loss. It's more important than you might think. If someone isn't losing weight on a low carb diet the usual reasons are either not drinking enough water or not eating enough fat.

Doilooklikeatourist - I quite often have mayo to dip my celeriac chips in - makes them a little less celeriac-y!

Greek yoghurt
boiled eggs mashed in mayo with a large green salad. And a small chunk of cheese
bacon & cabbage - fried in olive oil, and with a bit of creme fraiche stirred in
Lots of water!

thanks stuntmum I need to get guzzling that water then! I'm really struggling with that bit. It's great when you understand it all. I got really fascinated with the stuff about fasting and 5:2 when I did that - in the end it wasn't something I could keep up as I just felt awful on my fasting days, especially if it was a busy day teaching, all I thought about was food. This is going well and I don't feel I'm denying myself too much as I know I can live without the sugary snacks really.

Quite headachey tonight, think it's lack of enough water, did a fair bit of walking today too with my large 3.5 yr old in a carrier as he ws tired. I'm going to go running at the weekend for the first time in a week, be interesting to see how that feels, although I won't go far, prob just 5k, usually I'd do about 15 to 20k a week and I know there's a lot of really interesting stuff out there on low carb running and fueling for longer runs (just did a half and a 30k and basically ate jelly babies all the way round, guess I can't do that!)

I'm also worried about a night out on Saturday, a fancy dress party...in a bar. I'm not very confident and tend to need a couple of drinks to feel relaxed enough in situations where I don't know many people (or I'm dressed like a day of the dead lady.. :) but even trying to think of low carb drinks apart from water to have is a struggle...soda water and fresh lime?

Do you think it's this WOE that causing the nausea jaxhwc? What have you eaten today. I think it can sometimes take a while to get used to eating a lot of fat. Hope you start to feel better soon Flowers.

I've been having clear out of my wardrobe and drawers today and found o less than 6 pairs of lovely jeans that used to fit me a few years ago. I tried them all on and was way off fastening most of them. I'm going to use them as motivation - I've put them in order of how tight they are, with the smallest pair at the bottom of the pile. I've decided that I want to get to the stage where I can work my way through them and fit them all!! I have a long way to go...! Grin

B: couple of slices of ham with some cheese (wasn't feeling it this morning!), coffee with coconut cream (tried it for the first time and didn't like it, so going back to normal cream)
L: leftover chicken and veg curry wih coconut milk and cream
D: 3 egg omlette with mozarella and chorizo. Sald with salt and olive oil.
