Helloooo! StuntNun here filling in for the lovely and dedicated BIWI who is off on her hols. So how are you all getting on? I'm sure lots of us are seeing the scales go in the right direction fingers tightly crossed for a pound off myself this week but please don't worry if the scales aren't budging, it's pretty common for there to be a weight loss 'pause' as your body adapts to a low carb diet. Please post your progress and say whether you're continuing on Bootcamp or Bootcamp Light. And if anyone has any questions please ask as it's great to get into the science behind low carbing so we have some ammunition against accusations of being on a fad diet.

By way of inspiration I've put together some info on how we got into this mess in the first place...

Why do we gain weight?

Before I started low carbing I wondered about squirrels. Yep, squirrels. I've never seen a fat squirrel, have you? But squirrels, as I'm sure you know, hoard up huge quantities of nuts and seeds and store them in little caches all over the place. So why don't they eat them all? I assume squirrels like nuts and seeds and yet they manage to resist the urge to stuff their admittedly cute little faces until their food is all gone. Humans on the other hand... humans are rubbish. We eat too much, we know we eat too much, we feel bad because we eat too much, and yet we keep doing it. So why are we so rubbish compared to squirrels? The paleo/primal nutters like me community will tell you that it's because we're eating a diet that is too different from the diet we evolved to eat and that the biggest problem of all is too much carbohydrate.

When you eat a carbohydrate-rich meal, your body releases the hormone insulin to signal the muscles and liver to store carbohydrate. On a conventional diet, however, our muscles and liver are constantly kept at full capacity. Since these glycogen stores are permanently full, any glucose that can't immediately be used by the body is stored as fat. Another action of insulin is to shut down the release of fat from our fat cells so our own fat stores become inaccessible. Then when we get hungry again we eat yet more carbohydrate and the process starts again, more and more glucose is stored as fat and the weight piles on. Worse still, the constant bombardment of our muscles and liver with insulin when their glycogen stores are already full causes them to become less sensitive to the effect of insulin, or insulin resistant. The pancreas responds by releasing more and more insulin and our blood sugar levels start to drop too low as the body frantically clears glucose into its fat stores. Eventually we find we are hungry all the time, starving only two hours after we last ate. And because our blood sugar levels are low, what do we crave? Yet more carbs. So we end up trapped in a viscous cycle of carb addiction, hunger and weight gain while our ever more ample fat stores are unusable.

Hopefully this has described the process by which the weight creeps on. In next week's thread I'll put together some info on how a low carb diet reverses this process, allowing us to use up our fat stores and achieve the weight we want to be at the same time as improving our health and our energy levels and reducing our risk of diseases such as diabetes and heart disease.

Hiya all, just checking in. Had more bum related drama with one of the dcs. Too boring to go into, we're all home and fine now - just tired and recovering. Next week I feel sure I will be an entirely normal person, with actual helpful and coherent contributions.

I'm a bit confused re coconut flour. I know it looks really Carby but think it has so much fibre the net carbs are really low. But I have given it up for now as not sure if that's true or not. Shame, as my very favourite pancake recipe is just two eggs and a tablespoon of coconut flour and they taste just like real ones. I am very wary of almond flour because I heard that one cup of it is 90 almonds, and you just wouldn't sit down and eat that many almonds whole. But in small quantities it's fine - nom nom paleo has this recipe with smashed chicken, coated in almond flour, fried and then served with salsa and it is heaven.

Sooo cross with myself today. Had a rare coffee out. Said to myself, 'don't buy food, don't buy food, don't buy food.' What did I do? I bought some mozzarella balls with pesto. Turns out they had rice in them. I'm hoping it was less than a tablespoon total, but rarr. I have had three such great days and I wanted to keep going. Really have to hope it doesn't do too much damage.

Mark's daily apple says two tablespoons coconut flour has 10g carbs, but 9g fibre, so effectively 1g carb. here
Anyone know if that is true?

I suspect it's better to stick to real food. These flours don't grow on trees and our ancestors would not have eaten them.

sarahbeeny - amazingly, yes I did! thanks for asking. I think whatever the gastric virus was, it must be related to rotavirus, which I have had before and would hopefully be immune to now (that was fecking awful, never felt so bloody ill in my life!) Otherwise I can't imagine how I avoided it when everyone else in the house got it! DS2 is still a bit of a mess - still got a bit of the D, and his appetite isn't back yet, which is a bit of a worry. :(

Scous - ouch to the ankle break, that's not good! but not that uncommon to not realise you'd broken it, I know a few people who've done that. Don't really blame you for not wanting to go to the Portuguese hospital with it either - I know I'm horribly biased but I had a client who broke her elbow in Portugal, and they pinned it really badly, the pin came loose to the effect that she couldn't straighten her arm properly - it caused her no end of problems!

Not doing great this week - lots of omelettes but too much chocolate and alcohol, so no ketosis for me - net result = +2lb, so I need to sort myself out and lose it again.

I'm another one who really can't stomach meat fat unless it's properly rendered - just the feel of it in my mouth makes me gag. Butter, cream and cheese are the best options for me.

I also have coconut flour in my cupboard
it says that it has 8 g of carbs per 2 tbsp

in some 5 g is fiber so it isn't too bad

Lowcarbforthewin is the coconut flour from the US? If so then you deduct the fibre from the carbs. If it's UK then that's already accounted for. Coconut flour is around 20g carbs per 100g so should only be used in small amounts. I use ground almonds which are 6.5g per 100g.

Best I bought almond butter from the supermarket, it was with the peanut butter.

Antimatter on UK labels carbs is the net carbs, on US labels carbs is carbs+fibre for no obvious reason since fibre isn't carbs so in the US you have to calculate the net carbs in each food.

I buy my nut butters in my local health food store. I love brazil nut butter too. You can make your own in a processor if you can't find any near you, or buy it online

Best there are loads. I really want to try sunflower seed butter and hemp/linseed butter but they are Carby. Cashew nut butter likewise. Enjoy!

Thanks all for the good wishes. Good to speak with you all again and catch up with everything.

Oddly the broken ankle did not hurt nearly as much as when I sprained it badly a few years back which is why I thought it was ok. The hardest thing at the moment is remembering to use the crutches as I am supposed to avoid walking on it as much as possible but keep forgetting as it doesn't hurt!

littlemiss Somebody said to me that healthcare folk are far more likely to ignore issues in ourselves and our families as we know that 99% of all complaints are likely to be nothing so over-apply that principle to ourselves and battle on. Not sure if that is true for all of us though! Good luck in the run up to your new job.

best Sounds awful! I was told they tend to be overcautious and cast sprains so was thinking that would spoil my holiday but to just bandage breaks sounds awful and would definitely ruin it!

Am allowing myself this weekend to get my head together then back to bootcamp on Monday

Okay, I know you are all on tenterhooks waiting to see how my cream tea turned out Grin

Well....I caved. I'm such a people pleaser Sad I turned up late in the hope that everyone would be eating and I could get away with a coffee but they waited for me, grr. So, I had a pot of tea with milk and a giant scone with jam and clotted cream. It was VILE! Not to a regular person but OMG, the sweetness. It was horrible. At least the bright side of this is that I know cakes are no longer worth craving.

Really annoying too as yesterday i reached a weight I haven't been for over 5 years. Hope the scone hasn't caused too much damage.

Ive just survived a few days at the seaside with my family and now have a deep respect and admiration for all who have suffered the pain of scrounging together a half decent LC meal whilst away from home.

Runnings getting better have more strength.

I think I've ground to a halt weight wise but hey ho no biggie just keep on keeping on

Terrible day today - this traveling while LCing is not easy! I had got so comfortable at home. I have so little control of access to the right stuff when staying in other people's houses.

I went to a baby shower for a second cousin's wife and I made the fatal mistake of not taking any snacks. I hardly knew anybody there, so it was not easy refusing all the carb fest food. The hostess had made such an amazing effort, but by 2pm I has not eaten since breakfast and I was sooooo hungry. I broke badly and I am just going to have to start a fresh tomorrow. At least it was fun, which sort of makes up for it.

The good news is that I drank tons of water, and no alcohol. The bad news is that I had all sorts of very wrong things, as there were so few "good" choices.

How do I get back on track and avoid cravings? Just like day one, I assume? Aggghhhhh!

Re nut butters - I bought hazelnut and cacao butter the last time I was actually doing bootcamp - it was horrible! So bitter, so disappointing. I tried to make some kind of yummy treat with it, cream and extra cacao but the backtaste of the hazel skins (I think) just made me gag and I ended up having to bin it - very expensive error! :(
Almond butter is much nicer but the one I have tends to glue itself to the roof of my mouth, which isn't much fun!

Almond butter is so going on my shopping list.

A good day yesterday.

B eggs, tomatoes and mozzarella
L peperami, babybel and cucumber
D steak with blue cheese, mushrooms and kale all cooked in butter
Lots of water and shared a bottle of wine with DH, though feel blurgh this morning after 2 small glasses.

Today I will be going to a park with dd and some friends. We are having lunch out but taking snacks to be on the safe side.

The plan is

B bacon, eggs, mushrooms, tomato and kale all cooked in butter
L omlette
D lamb steak with broccoli, baby corn and kale all cooked in butter

Lots of water and start shredding.
