Helloooo! StuntNun here filling in for the lovely and dedicated BIWI who is off on her hols. So how are you all getting on? I'm sure lots of us are seeing the scales go in the right direction fingers tightly crossed for a pound off myself this week but please don't worry if the scales aren't budging, it's pretty common for there to be a weight loss 'pause' as your body adapts to a low carb diet. Please post your progress and say whether you're continuing on Bootcamp or Bootcamp Light. And if anyone has any questions please ask as it's great to get into the science behind low carbing so we have some ammunition against accusations of being on a fad diet.

By way of inspiration I've put together some info on how we got into this mess in the first place...

Why do we gain weight?

Before I started low carbing I wondered about squirrels. Yep, squirrels. I've never seen a fat squirrel, have you? But squirrels, as I'm sure you know, hoard up huge quantities of nuts and seeds and store them in little caches all over the place. So why don't they eat them all? I assume squirrels like nuts and seeds and yet they manage to resist the urge to stuff their admittedly cute little faces until their food is all gone. Humans on the other hand... humans are rubbish. We eat too much, we know we eat too much, we feel bad because we eat too much, and yet we keep doing it. So why are we so rubbish compared to squirrels? The paleo/primal nutters like me community will tell you that it's because we're eating a diet that is too different from the diet we evolved to eat and that the biggest problem of all is too much carbohydrate.

When you eat a carbohydrate-rich meal, your body releases the hormone insulin to signal the muscles and liver to store carbohydrate. On a conventional diet, however, our muscles and liver are constantly kept at full capacity. Since these glycogen stores are permanently full, any glucose that can't immediately be used by the body is stored as fat. Another action of insulin is to shut down the release of fat from our fat cells so our own fat stores become inaccessible. Then when we get hungry again we eat yet more carbohydrate and the process starts again, more and more glucose is stored as fat and the weight piles on. Worse still, the constant bombardment of our muscles and liver with insulin when their glycogen stores are already full causes them to become less sensitive to the effect of insulin, or insulin resistant. The pancreas responds by releasing more and more insulin and our blood sugar levels start to drop too low as the body frantically clears glucose into its fat stores. Eventually we find we are hungry all the time, starving only two hours after we last ate. And because our blood sugar levels are low, what do we crave? Yet more carbs. So we end up trapped in a viscous cycle of carb addiction, hunger and weight gain while our ever more ample fat stores are unusable.

Hopefully this has described the process by which the weight creeps on. In next week's thread I'll put together some info on how a low carb diet reverses this process, allowing us to use up our fat stores and achieve the weight we want to be at the same time as improving our health and our energy levels and reducing our risk of diseases such as diabetes and heart disease.

Thanks for the blood test advice Little Miss D & StuntNun. They all came back normal but I was rejected as a bone marrow donor because of palpitations. Very frustrating. Hope the recipient finds another match.

Peony & Trashcan it's great to hear your success stories, very inspiring :)

Pingu I think the coconut oil contains some long chain molecules or summat that particularly reacts with the caffeine, giving it an extra kick, hence the BPC name.

Sugar cravings - is it normal for them to rise considerably just before & at the start of your period? eyes chocolate and nurofen

Lines my first couple of cycles of low carbing I got cravings before my periods and had to be soundly scolded by BIWI for eating a bag of crisps (good thing I didn't tell her it was actually two bags of crisps) Blush It calmed down after a while and I don't get cravings any more but I do still get hungrier in the run up to my period and I can't skip a meal without getting hangry.

lines I definitely get sugar cravings and hunger before my period. I usually have some cream, dark chocolate, grated ( 1/2 a square, about 6 carbs) and a couple of raspberries. Sometimes j have pork scratchings too. If I do this I am less likely to go off the rails. One month I had salt and vinegar peanuts but could not stop at a handful, so I don't get them anymore.

Just escaped from a work pizza night out. Thankfully there were some good alternatives on the menu. Had halloumi wrapped in Parma ham (delicious) followed by a spicy mussel and prawn salad. Hope the dressing wasn't too carby. Two g&slimline t's.
Mozzarella and tomato salad with olive oil and Greek yog for lunch and celery and cheese for breakfast.
Now busy glugging water to wash it all down.

Incidentally does anyone else have sore eyes? I often get dry eyes but they are worse than usual this week. I don't usually get hay fever so I don't think it's that.

Ok - not a great day today. But I will do better tomorrow. It is so hard when you are not in your own home.

B: nothing, woke up too late from jet lag and had to rush - I am not good without breakfast
L: salad with feta and pulled pork, with mayonnaise. Not sure about the coleslaw, hope the dressing on it was not too bad
S: small bag of pork scratchings
D: steak and chicken, with grilled veg and salad and mayonnaise, but balsamic dressing (at my cousin's house)
Late night baking - for a baby shower we are going to: half a macaroon (2 times - ok, I can add and I know that makes a whole Smile) and whipped butter with vanilla essence - now that was like a dessert, I like that.

I have struggled to do my water today - only about 2.75 ltrs. I am not used to the taste of English tap water any more. Will do better tomorrow.

Thanks StuntNun - will let you know when I get my results. My Dr. Has decided against statins for now, and wants to look at it again later. I will certainly do my research and come and ask for your thoughts too.

LittleMiss - I am going to the Said School of business studies - it is supposed to be excellent. We shall see, but I am very excited!

Morning all - Yet another weirdly timed post from me! I've not been on the thread in so long it's fallen of threads I'm on Blush

We've got DDs 2nd birthday today and I've been running around like a blue-arsed fly all week. Our house is generally filthy as we're always having work done so any time visitors come it's a week long cleaning program to get the dust out; for some reason I decided I really must make bunting this week and to top it all off I made her birthday cake yesterday -why oh why did I not just buy the cake?

(on a more positive note I didn't eat any of the toxic sugar laden cake whilst making it, a first ever for me!)

We have a low-carb ish buffet for lunch with extras like hummous and bread for those that want it and my lovely Mother has already wrinkled her nose up at the sound of it. I am awaiting buffet-gate when she sees it, especially as there are no crisps Grin.

hissy so glad you're home, hope things are continuing to improve for you.

monkey glad you had a lovely holiday, only 3lb up is great!

peony whoop whoop! I do hope you're going shopping for some lovely new clothes! [whispers] when I was a student I used to use philly and marmite as a pasta sauce. Fat bombs sound great!

I made the most delicious fat bombs this week - almond butter, butter and coconut milk, heated together and cooled in the fridge and rolled in desiccated coconut. Sadly, with all those nuts in I had no confidence that they would actually add much proteinless fat and they tasted bloody gorgeous - so gorgeous that they were like crack in the fridge and I made DH eat them all up.

The other recipe epiphany the week has been NomNomPaleo's korean ribs in the slow cooker- plenty of flavour for anyone missing dairy.

Trash hope your antibiotics have kicked in by now!

Thumb did you swerve your bout of D and V?

lines I had awful carb cravings before my period at first and now they've died down to nothing.

Just lost 1.5 lb! Reducing protein and upping fat has worked. I am not going to get MFP obsessed, as I think I can follow bootcamp now, with an idea of proportions. I might do it once a week to check I am still on track. And I poohed this morning Blush which is very rare but may be because I've upped the fat.

parsnip... yes macadamias are a bit like crack for addictiveness....

F1 9lb is amazing..... tiredness is a killer. Try lots and lots ofhot drinks and never be without one, it helps me. And - call in anyone you can think of to have the baby for as many powernaps as you can ! Also - allowing yourself to have whatever you want as long as you can eat it semi-naked infront of a mirror Grin.. I only did this once...never again...

Morning,

DH made breakfast this morning, scrambled eggs with a splash of cream, mozzarella and tomatoes. Yum.

Prepping lots of nice meals we can just throw in the oven for this week. Any tips on adding fat? We cook everything in butter, going to start using coconut oil more. I'm not keen on dressings on salads but have some flavoured oils to try. I hate mayo so that's out.

Glen you could add cheese if you can take dairy, e.g. steak with some blue cheese melted on top, bunless burger with cheddar on and a side salad, pork chops or chicken breasts go well with cheese too.

Macadamia nuts are good too Glen and very expensive which puts me off eating too many. Blush Have you tried almond butter? Also I remember sitting watching TV with DH one day and eating celery sticks dipped in Philadelphia and thinking I never imagined I could enjoy celery so much. It tastes much sweeter when your taste buds aren't blunted by sugar.

Having a great time flicking through the NomNomPaleo recipes, and dietketo.com also. Plenty of ways to get myself to cook some different things, have been a bit predictable - although this week I made the "lasagne" from my favourite cookbook, 'Low Carb Gourmet'. Two layers of pre-baked egg/cream cheese/cream/grated mozzarella replace the pasta and then I used a bit of ricotta and a bolognaiseque sauce - it was delicious and DH hoovered up the leftovers last night whilst I had a very early night (and subsequent 16 hour fast, win win) which translates to, this tastes like real food! I'll make it again. Going to make these today but substitute almond flour for coconut flour as coconut flour is just too carby really. Will see how they go. But thank you lowcarbforthewin and Sarah for the suggestions.

At the start of bootcamp, I tried to grind macadamia nuts in our coffee grinder (can't remember exactly why). Coffee grinder is not the same since! I'd forgotten that I bought almond butter, I think I may also make some fat bombs today.

Scousa crikey that sounds painful. I made my BIL walk around on broken toes years, ago, you'd think the rainbow bruising would have told me there was more to it Blush but he insisted it was manageable pain-wise. Hope it heals properly and in place despite its less that great start.

Sarah hope your DD has a great day, and you too, and your DM keeps her negativity to herself, I bet you've made a delicious buffet, and she can eat crisps at home whenever she likes, can't she!

Yay - 1lb off today - I've been stuck for the past week and a half so upped my fat intake, ans I'm delighted to see a loss this morning.

I've had a BPC first thing, followed by body pump, followed by bacon, egg and mushrooms.

And now off to buy more coconut oil and some almond butter to make some fat bombs - never tried these before, but as I was a bit of a Reese's Peanut Butter Cups addict pre low carbing a salty, nutty fat bomb has me salivating already...
