Bianca My parcel arrived this morning, I'm chuffed to bits, THANKYOU I have just popped you a quick email
shannar Welsh Cake recipe....
8 oz S.R Flour
4oz Welsh Salted Butter (obviously any salted butter will do)
1 Egg
Handful of Sultanas
Milk if needed
3 oz Caster Sugar
Butter for greasing
Rub fat into seived flour to make breadcrumbs.
Add sugar, sultanas and egg
Knead until a soft dough.
Roll out to about 1/4 inch thick, cut circles with cutter, 3-4 inches(or you can do it by hand)
You need a bake stone or heavy griddle (I use a heavy base Frying Pan...works just as well) Rub with butter and wipe off excess
Cook 2-3 mins on each side, until caramel brown
Dust with caster sugar whilst still warm
Serve with butter, jam...anything yummy like that!
I have made loads this last week, what with St Davids Day and Cawl a Chan this evening...they are really nice...I think I'd be quite happy if I didn't see another one for a while though!
