I love the Yorkshire Dales/ Yorkshire moors - ruined Abbeys, beautiful villages, incredible walks. And there are some gorgeous inns / hotels with fantastic food. Eg The Pheasant Hotel at Harome. Great as a base, super luxurious, small indoor pool

I went last year. I thought it was a very ordinary, bog-standard hotel - nothing special about it at all. They charge a high price just because of the lovely location (it is a very lovely location, though).

I'd like to go to Skibo Castle; it looks wonderful.

I’d avoid the likes of the Watergate and Bedruthen unless you want to be surrounded by toddlers and their parents who’ve decamped from the SW postcodes (IYKYK)

I've stayed at The Torridon, it's great. We did clay pigeon shooting, a hike up a mountain and archery with our teens. It is miles from anywhere though, we only stayed a few nights and I'm not sure whether we'd have run out of things to do after that. Spectacular scenery though and it does have The Torridon Inn next door with a pool table which is good for teens. So maybe it would be ok for 5 nights? Or you could do 3 nights there and somewhere in Edinburgh on the way, probably The Balmoral although I haven't stayed there.

I've also stayed at Saunton Sands, meh, not that great tbh although it does have amazing views of a very pretty beach. The rooms are really variable. And there's not that much to do nearby.

What about Le Manoir? Incredible food and service and not far from Oxford with its dreaming spires. Expensive but if money is no object I might go for this I think. You'd have to drive to go anywhere in the evening though.

I agree about avoiding Bedruthan as there will be kids everywhere. I wasn't that impressed by The Scarlet in Cornwall either although I haven't stayed, just eaten there.

If you wanted to jump on Eurostar The Pulitzer in Amsterdam is exceptional. Service is amazing, beautiful location and they can do a private tour on their vintage canal boat. Loads of museums etc in Amsterdam. And weed for the teens 😂Pulitzer Amsterdam | 5 Star Hotel in Amsterdam City Centre

My sister, who is sophisticated and polished, wasn't impressed with Lime Wood so I don't think I'd go there.
