Flying to Ghana via Paris on Thursday and Air France have offered an upgrade to business for £400 return each. Would you?

For a long (say 8+ hrs) overnight flight - yes, I likely would. For a shorter or a day flight, no probably not.

Do you have to change planes in Paris? If you do I’d perhaps not bother. Ghana isn’t a very long flight, so by the time they’ve served the meals you wouldn’t get much sleep. On the other hand they’re often very busy flights, so the room would be nice. If you’re staying on the same plane a business class seat would mean that you could stretch out while other passengers disembarked/boarded in Paris.

Personally, no, because I would always rather have the £800 (assuming two of you are going) to spend during the holiday. I think Business is a rip off unless you are 6 ft 5, or unless you have to do something important on the day you arrive.

If you can afford it, then yes. It's a good price.

How long is your stopover in Paris? If it is a long one and this give you access to a lounge it may be worth it just for that!

I wouldn't, I have never flown anything other than economy which has always been fine so imo why waste the money? Economy has a less worse carbon footprint too.

No..it’s a good price but that’s £800 you could spend on something far more interesting than 8 hours in a better seat.

I'd agree with this. It's an excellent price but I rather spend the money on hiring a boat or something.
