Barcelona is really nice. You don0t need to do all the classic tour, which might be stressing. I would stick to the beach with the kids having a great time while having a nice and cool beer in a chiringuito. Or play it green , and discover all the fab parks Montjuic, Labyrinth and l'Oreneta.
Many tube stations have a lift or escalator, otherwise, you can use buses. The Miro Museum is great for kids, or the MNAC wihch is great for everyone.

Barcelona is lovely. You can do a lot within walking distance and there is an open top bus tour. I have stayed at the http://www.hostalgrau.com/php/tour.php?secc=apa Hosteria Grau twice. It is just of the Ramblas so very central. Basic but clean and the reception staff were extremely helpful. They have apartments as well as rooms.

Nice is good also. There is a fab park on the hill above the old town. Weather should be nice enough for the beach in May and you can easily get the train or bus to Cannes, Antibes, Monte Carlo etc. The beach at Juan Les Pins is fantastic for little ones.

Can I make a suggestion? As you are not sure which city to choose, ask for advice and information about a few on Trip Advisor forums - they will have a forum for all different cities, with Destination Experts who know each one extremely well, and can advise on hotels, things for kids to do etc.
As Barcelona has been mentioned, this is the link for the TA Barcelona forum.

And the Paris forum
www.tripadvisor.com/ShowForum-g187147-i14-Paris_Ile_de_France.html

And the Rome forum
www.tripadvisor.com/ShowForum-g187791-i22-Rome_Lazio.html

Just type (name of city)forum into the search box, and it will take you to the correct forum.
