Jet - poor Junior and poor you, you must be so worried.
Okay ladies, here is the curry recipe -
1 tsp of chilli pdr
1 1/2 tsp of garam masala
2 tbsp of total greek 0% fat yog
2 tbsp of mango chutney
3 tbsp of tom puree
1 large garlic clove
2 skinless chicken breasts - med/large. Diced into chunkey cubes.
Small tub of Emlea single cream - lower fat the better.
Mix together all ingredients except chicken and cream in a bowl - spices, garlic and yog etc - then cover with cling film and leave in fridge for an hour or more, doesn't matter if you prep in the am. Heat wok and add a little oil, enough to coat the wok, use oil of your choice - we use sunflower or groundnut - gently pour in sauce. Add diced chicken. Stir well. Then add a cup - like a tea cup - of tap water. Simmer for 20 mins until sauce reduces or take reduce heat if this happens earlier.
Sauce should be thick and then add a 'swirl' of cream to taste to reduce the heat of the curry.
If you have a healthy eating style naan bread you'll notch up 610 ish calories, or you could have a small cup of rice.....
Curry on it's own, as in 1 portion (half of what you cook) is 278 calories.
It's a hot and sweet/sour sauce but yummy.

Enjoy x
