What would you do with a glut of cherry tomatoes?

They are delicious, but I have far more than I could ever eat in salads.

I would make them into sauce and freeze them

Roast them and freeze or can them.

I have got a tray full in a very low oven as we speak, drizzled with oil, oregano, salt and pepper. When they are dried enough they are going in a sterilised jar with oil to be used in salads

@EquallyDivided are they essentially "sun dried" tomatoes.

We live in NI so no hope of naturally sunblushing them. If I leave them outside they will get lukewarm and then very wet.

Simmer them down with onions and garlic and freeze in little pots to add to winter casseroles and pasta dishes.

I made sauce and froze it in tubs as a stir-in sauce. Wish I’d thought of roasting and preserving in oil like @EquallyDivided though. 😀

Similar here and I don't like tomatoes at all - only grew them because my son persuaded me to buy the plants. I think we are not too bad at present - he has another 6 more to eat and is doing sterling work in working through them....

Chutney. I've made a really nice green tomato chutney when I had a glut of tomatoes with no chance of ripening before the frosts, but it also works well with ripe tomatoes.

You can just wash and freeze them, and use them from frozen (in cooking) when you want a taste of summer. They'll lose their structure but be delicious.

I'm harvesting about 5kg of tomatoes a day.

Currently I'm slicing a big bowlfull and letting them sit overnight to get rid of some liquid. Then putting through my juicer. Then adding olive oil and salt, and cooking down to make a thick passata. When it gets to soup consistency we have a bowl each and cooking the rest down to the right consistency for adding to pizzas as a base, then freezing it in ice cube trays. I'm inundated. I gave away a days worth today and am clear for one evening but this time tomorrow I'll be back up to 5kg again.

I'll miss it when it has ended. But it's full on at the moment.

I bottle then in Kilner type jars, in water, a little salt and a basil leaf or three. It's a bit of a faff but if you've got the jars the finished product tastes wonderful.
